Sesame Crusted Tuna Steak on Arugula drizzled with a balsamic soy-ginger vinaigrette – yum!
Sesame Crusted Tuna
Seared or raw tuna is one of my favorite fish to eat whether I’m having sushi, ceviche, poke bowls or salads like this. Some other tuna recipes I love made with sushi grade tuna are Ahi Tuna Watermelon Salad and Seared Tuna Salad with Wasabi Butter Sauce.

Shrimp Scampi with Broccoli Orzo
Shrimp scampi is usually swimming in butter, this lightened version is just as delicious, using only a touch of butter and lots of fresh lemon. My kids love Pasta and Broccoli, sometimes I make it as a main dish, but also makes a great side dish using any small pasta shape like orzo or ditalini which worked great in this dish. If you want an easy way to bake your shrimp instead, you can try this Easy Baked Shrimp recipe.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.

Slow Cooker Split Pea Soup
Making Split Pea Soup in the Slow Cooker is so easy and perfect for busy weeknight meals. It’s also freezer friendly, so you can make a batch and freeze the leftovers for another night.

Crockpot Split Pea Soup
I love using smoked ham hocks in pea soup, it gives the soup a wonderful smoky flavor, but if you don’t have ham hocks you can also use a leftover ham bone, ham steak or even smoked turkey leg instead. You can see my stove top Pea Soup Recipe, and I also have an Instant Pot Pea Soup version which is great if you want to speed this up!

Broccoli and Cheese Stuffed Chicken
Broccoli and Cheese Stuffed Chicken are filled with cheddar and broccoli, then rolled up, breaded and baked in the oven or air fryer!
This easy recipe is perfect any day of the week. I make it with fresh broccoli, but leftover or frozen broccoli can also be used. I make stuffed chicken so many different ways, this broccoli and cheese version is a favorite, but we also love Chicken Cordon Bleu, Zucchini and Mozzarella Stuffed Chicken and Chicken Rollatini Parmesan, to name a few.

Instant Pot Corned Beef and Cabbage
This easy Instant Pot Corned Beef and Cabbage recipe, made with beef brisket, cabbage and carrots comes out so tender and delicious! Perfect for St Patrick’s Day!
It may be the most famous dish to eat on St. Patrick’s Day, but this Irish-American corned beef recipe is a favorite in my house any time of the year. It would typically simmer all day on the stove but thanks to the pressure cooker it only takes 90 minutes for the meat to come out super tender. Of course, if you wish you could also make this in the slow cooker, see my Crock Pot Corned Beef and Cabbage recipe.

Cream of Broccoli Soup
Cream of Broccoli Soup is a favorite of mine, this slimmed down version is so good, and it’s quick and easy to prepare.

Cream of Broccoli Soup
I love making creamed soups, a few favorites are Broccoli Cheese and Potato Soup, Cream of Asparagus Soup and Cream of Zucchini Soup. It’s perfect for lunch with some bread on the side, or serve it for dinner with a sandwich.
