And it’s the unofficial end of summer with labor day coming up next week over here! I have a bunch of my summertime favorites to make for the weekend that you can enjoy. These are all so delicious, I don’t know how to choose?!
On Labor Day weekend I always end up decorating for fall so I can get the most out of my favorite time of year. But I still make sure to prepare the best of the best summer meals. All things on the grill. Super delicious snacks and apps. Dips, desserts, and of course – summer cocktails.
I know there are technically a few weeks of summer left, but this weekend we are going to live it up. We will be enjoying all the summer things! Here’s a peek at some of my favorite Labor Day weekend recipes. What are you making?!

Crispy Chicken Caesar Sandwiches.
The best meal ever! These crispy chicken caesar sandwiches are such a crowd pleaser. Super thin and crisp chicken cutlets are topped with caesar salad and served on brioche. Delish!
Here’s how to make the best weeknight meal you’ll ever have!
Super thin crispy chicken cutlets are piled high with refreshing caesar salad and served on a buttery brioche bun. It is SUCH a delicious meal.
Caesar salad tops the list of my favorite foods. My crispy chicken cutlets are up there too! The cutlets are something that my kids have fallen in love with. The paper-thin chicken breasts that are fried until crunchy crispy are just divine.
And I most often serve them ON salad, so it’s fine to serve salad on top of them!
Chicken caesar salad is a gateway salad for my kids. It’s one they all really like. And I get it! Something about it is so classic, nostalgic and familiar tasting.
My greek yogurt dressing has been a staple in this house for well over a decade. I have it in my fridge often. Even if it’s at the end of a batch, I will use it as a marinade to grill chicken or make it more of a vinaigrette with some olive oil. There are so many uses for it, especially if you love caesar everything like we do.
These are probably what all my kids would request if you ask them their favorite meal. Or their favorite thing that I make. They call it my “crispy chicken” and can’t get enough.
The chicken cutlets cook so quickly because they are very thin. But in the case that you want to prepare them ahead of time, you can assemble these sandwiches in just 10 or 15 minutes. Heat the chicken in the oven or air fryer, toss some romaine with caesar dressing and shaved parmesan and throw both on the brioche bun.

Tuesday Things.
1. Yesterday I dropped a can of diet coke and it popped open and sprayed EVERYWHERE. We are talking up to the ceiling, across the room, inside of cabinets. I have a feeling I may find droplets for months.
2. I want to make this everyday no knead bread this week!
3. We’ve had the return of the spotted lantern flies and it is just my worst nightmare. When I say one flew in my mouth yesterday while walking… I cannot.
4. Now all I can think of is strawberry salt.
5. TV things!! I can’t express how horrible I though the And Just Like That finale was. Not that I expected better?? Watching the biggest loser doc now!
6. Be kind, even when others aren’t!
7. We might be in the midst of false fall this week. It will be 90 degrees soon enough.
8. Made my own pumpkin coffee this weekend and it was amazing. I’m ready!

Grilled Cacio e Pepe Pizza.
Cacio e pepe pizza is such a fun twist on the original cheese and pepper flavor. Grilled sourdough pizza is brushed with peppery brown butter and topped with pecorino romano. Throw a caesar salad on top and you’re good to go!
Say hello to my new favorite way to eat pizza.
This grilled cacio e pepe pizza is made on my sourdough crust and topped with a crisp caesar salad. It’s so satisfying and simple! And also a very versatile meal when it comes to serving friends and family.
There are so many ways to eat pizza and salad but this is truly one of my favorites. It’s different and unique and feels really special – while at the same time having that classic flavor and familiarity.
Can I just say it tastes SO GOOD?!
Let me tell you just how delicious it is.
First, I make my grilled sourdough pizza, just I do with my italian chopped version. You can actually use any pizza dough recipe that you love. I really adore the sourdough pizza on the grill, so it’s our go-to.
Next, because this is an incredibly simple flavor profile, I brown some butter with fresh ground pepper. The butter toasts the pepper and it’s so incredibly fragrant. And I am not a pepper lover at all! The fact that I love this combo is huge. The pepper has such a great bite and the butter has a wonderful depth of flavor.
As soon as the pizza dough is done on the grill, I remove it from the grates and brush it all over with the peppery brown butter. I coat the entire crust!
Then, I sprinkle on some freshly grated pecorino romano. It is incredibly rich, savory, salty and nutty. I sprinkle it all over the dough. Some of it will melt and some will just lightly blanket the top.
Finally – serve it! It basically looks like nothing, but it tastes like everything. A very simple pleaser that is absolutely delicious.
Of course, I don’t need to end it there. Topping it with caesar? Yes please. (more…)

A Week In The Life, Vol 33.
This was our last week of summer before school starts!
And we made it a good one!
First, a trip to see Eddie at work.
They loved this.
Then we took the kids to PF Changs and it was probably the first time I’ve been there in 15 years? Maybe 20?!
The kids loved it so much! Jordan ate his entire meal with chopsticks.
Then times for new hockey skates!
Just along for the ride.
I made my grilled romaine salad again for my dad! It was so good. Recipe in my substack.
Peach cobbler forever.
Early morning.

Back to school night!
With our baby BFFs.
Official start to hockey season was this weekend!
Cross country weekend.

Then we went to the steeler game with friends!

Tonight I even cut Emilia’s hair in preparation for school. I don’t want them to go back yet!
