Pizza Tot Casserole
Ingredients
1 pound ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1, 10 ¾ ounce can condensed tomato soup, undiluted
1, 4 ½ ounce jar sliced mushrooms, drained
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese
1, 32 ounce package frozen Tater Tots
Directions
In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink, drain. Add the soup, mushrooms and Italian seasoning. Transfer to a greased 13 inch by 9 inch baking dish. Top with cheese and potatoes. Bake, uncovered, at 400 F° for 30 to 35 minutes or until golden brown.
Serves 6 to 8.

New book coming soon, others in the pipeline...and another freebie soon
I hope your summer is starting off well.
Mine has been all right, with the advent of a new 100 Recipe book, Pizza 100 Recipes about to be published. Breakfast pizzas are covered, as are Starters. I break from the ususal format and when I got to Mains, I broke those down in to the following categories: Beef, Chicken, Seafood, and Pork. After that the cook book moves on to Vegetarian and my favorite, Off the Beaten Path (there's a pizza soup I want to try) and then to Desserts. No beverages this time around.
Up coming cook books include Vegetarian, Chili, Casseroles, and Copy Cat. I'm even thinking of sneaking in a Cupcake book...cupcakes are still hot.
Looking at putting Sriracha up for free later this summer. Maybe the end of July or August.

New Cook Book, New Promotion
I've done the freebie thing on Amazon with Nutella and Ramen with great results.
Now I'm doing it with a brand new book in the series: Summer 100 Recipes will be free for the Kindle beginning Monday June 23rd through Friday June 27th.
Head over to Amazon and get a copy - I had a lot of fun putting this cook book together, and I think you'll enjoy it. Using fruits and vegetables of the summer, as well as a few recipes with quinoa, and some other yummy concoctions, I think this will make a nice edition to your cook book collection.

I'm a Bad Girl
It wasn't til I looked that I realized I had not blogged in April.
I think an author should at least try to stay in touch once a month.
At any rate, here I am, and I'm going to post another recipe out of the Sriracha cook book and again discuss what's coming next.
Strawberries, Red Wine, & Sriracha
Ingredients
1 cup red wine
¼ cup sugar
½ teaspoons Sriracha
Fresh ginger (about 20 tiny scrapes on a grater)
1 large sprig of Thai basil, plus more for garnish
16 to 20 strawberries, cored
1 pint Coconut Frozen Yogurt
Directions
In a small pan, combine the wine, sugar, Sriracha and Thai basil and warm for five minutes over medium low heat, stirring occasionally to dissolve the sugar. Add in the strawberries, warm for five minutes more. Remove the sprig of basil, divide the berries and wine between four small bowls, top with a scoop of coconut frozen yogurt and a sprig of fresh Thai basil.

Next up, I'm trying to decide on my next adventure - the tastes of summer, chili, vegetarian, or casseroles. Or I may surprise myself and everyone else and do something else.

How The Paleo Diet Book Came To Be
I won't lie, I did some research to find out what subjects were trending in the food and diet world. Paleo dieting came up number one on the list.
I set my sights on developing a cook book and let me tell you, it was truly a labor of love.
First of all I had to determine precisely what the Paleo diet is and isn't.
Easy answer is, if your paleolithic ancestors couldn't/didn't eat it, it's not on the diet.
Then you have to ask yourself what our P.A.'s actually had available to them. I'm assuming depending on the area of the world they were located in, the choices of vegetation and animals for meat would vary. Meat, poultry, fish, eggs, and vegetables are all legal. Fruit in moderation, some nuts are allowed. NO processed foods, no white sugar, no flour, no starch, no dairy.
Some sources were saying sweet potatoes were all right, but others cited those were tubers and a starch and as such didn't qualify.
I came across other sources allowing the use of almond flour as a substitute for all-purpose wheat flour. It's assumed the almond was available, and since it is a nut, a flour made from crushing them would be allowed.
However, in making almond flower, apparently there is some processing involved and in a Paleo diet, that's a no-no.
So, after having trying and researching several different recipes, in the interest of authenticity, I had to end up pitching out 33 recipes as they contained either sweet potatoes or almonds/almond flour.
If you decide to try the Paleo diet, rest assured my book, Paleo Diet 100 Recipes, has 100 recipes that are OK for the diet. No flours, no starches. There are a few that call for a little honey or fruit, but those things are allowed in moderation.
It's my hope that my conscientiousness in research makes Paleo Diet 100 Recipes one of the most accurate cook books for this diet out there.

Free Recipe for Valentine's Day
Fix these luscious cupcakes for the one you love and win their heart.
Red Velvet Cupcakes with Marshmallow Butter Cream Frosting
Ingredients
Cupcakes
2 1/4 cups all-purpose flour
1/4 cup unsweetened baking cocoa
1 teaspoon salt
1/2 cup butter or margarine, softened
1 1/2 cups granulated sugar
2 eggs
1, 1 ounce bottle red food coloring
1 1/2 teaspoons vanilla
1 cup buttermilk
1 teaspoon baking soda
1 Tablespoon white vinegar
Marshmallow Butter cream Frosting
1, 7 to 7 1/2 ounce jar marshmallow creme
1 cup butter or margarine, softened
2 cups powdered sugar
Directions
Heat oven to 350°F. Line 24 regular-size muffin cups with paper baking cups. In small bowl, mix flour, cocoa and salt and set aside. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until mixed. Add eggs, beating 1 to 2 minutes or until light and fluffy. Stir in food color and vanilla. Beat in flour mixture alternately with buttermilk on low speed just until blended. Beat in baking soda and vinegar until well blended. Fill muffin cups 2/3 full. Bake 20 to 22 minutes or until toothpick inserted in center of cupcake comes out clean. Remove from pan to wire racks. Cool completely, about 30 minutes. Remove lid and foil seal from jar of marshmallow creme. Microwave on High 15 to 20 seconds to soften. In large bowl, beat marshmallow creme and 1 cup butter with electric mixer on medium speed until smooth. Beat in powdered sugar until smooth. Spoon 1 heaping Tablespoon frosting onto each cupcake, swirling frosting with back of spoon.
Yield: 24 cupcakes
