U.S. Obesity Guidelines for Americans

screen-shot-2017-01-04-at-9-33-20-am

Look around you: Americans are among the fattest people on earth, fatter than any group of people before us. People judged overweight or obese in 1960 would now be viewed as thin. Obesity has achieved such a level of severity that we need a new category of “super-obese” with body mass indexes (BMIs) of 45 or higher (compared to the longstanding BMI of 22 in preceding populations, 20-21 in hunter gatherer populations). Agencies in the business of providing dietary advice, such as the U.S. Department of Health and Human Services (HHS), the U.S. Department of Agriculture (USDA), the Academy of Nutrition and Dietetics, and the American Diabetes Association, attribute this trend to laziness and inactivity, overeating, calories in exceeding calories out. The U.S. Dietary Guidelines for Americans leave no doubt about the severity of this societal problem and their stand on the solution: “About half of all American adults have one or more preventable, diet-related chronic diseases, including cardiovascular disease, type 2 diabetes, and overweight and obesity. . . More than two-thirds of adults and nearly one-third of children and youth are overweight or obese.”

Eat a hamburger and the Guidelines will persuade you that the problem is the cholesterol, saturated fat, and sodium in the hamburger. Have some pepperoni pizza and the Guidelines tell you that it’s the fatty cheese and pepperoni that is the source of health problems. They say cut back on the meat and fat and eat more of the bun, breads, and rolls. And Americans have, over time, followed their advice, increasing their adherence:

screen-shot-2017-01-01-at-9-29-44-am

Have the Guidelines, widely discussed nationwide, been a success? No, of course not. But why? The HHS, USDA, and other agencies all agree: you eat too much and move too little because people fail to follow their Guidelines—yet their own data suggest that Americans are increasingly adhering to the Guidelines. They argue that, if everyone would just follow the Guidelines even more closely and cut back on fat, eat more grains, and be more physically active the entire problem would disappear.

Then why were people slender and far less likely to develop type 2 diabetes in 1950, 1960, or 1970 before the Guidelines were developed?

Just so you understand that the Guidelines are not just a piece of meaningless bureaucratic nonsense with no practical consequences, know that schools are required to adhere to them via the School Lunch Program. This is why you hear about children being sent home because they failed to have a grain-based food in their lunch bags. Agencies like the USDA and the Academy of Nutrition and Dietetics conduct educational programs to professionals and the public to broadcast this awful message. This is why most doctors still think that cutting fat and weighing the diet in favor of grains with sugar “in moderation” are still healthy practices, why dietitians advise that you can simply walk off the can or two of Coca Cola you drink.

Imagine I set you and your family down in a remote setting: no food, no cell phone, no car, etc.–just basic tools for survival. How would you go about eating? We would all eventually tap into instinctive behaviors, especially as thirst and hunger set in: find running water, craft crude weapons like traps and spears, then hunt squirrels, rabbits, or other small game, look for eggs, pick berries, spear fish, etc. Following such a back-to-the-wild plan, type 2 diabetics would no longer be diabetic within a few weeks, obese people would be slender within a few months, most autoimmune diseases would reverse over time, many other chronic conditions would lessen or disappear. Yes, much modern health problems and overweight are caused by modern diet, now made much worse by the absurd pronouncements of the Dietary Guidelines, aided and abetted by the predatory practices of Big Food.

The good news: Recognize these basic facts and you are empowered to not be victimized by the Dietary Guidelines. In fact, do the opposite: Eat more fat, eat no “healthy whole grains,” never count calories, and don’t “ask your doctor” about healthy eating.

Fermented veggies

I’ve been discussing the role of fermented foods in preventing or treating dysbiosis and the more difficult condition small intestinal bacterial overgrowth, SIBO. While a high-potency probiotic supplement and prebiotic fibers continue to play important roles, I’d like to expand the conversation about the role of fermented foods.

First of all, there is no need to purchase fermented foods, as you can make them easily, with no special equipment, and at virtually no cost beyond, say, the beets, onions, or cucumbers you plan to ferment. (You will find the basics on how to ferment vegetables in the Wheat Belly Total Health and Undoctored book appendixes; there are many excellent and more detailed websites and books, as well, including Sandor Katz’s excellent and exhaustive book, the Art of Fermentation.) But many people find that even this small effort is too much to manage in a busy life and some store-bought fermented foods would be an advantage. So I’d like to review some of these products in coming weeks and months.

Let’s focus today in a fairly new product available at Whole Foods Market: Farmhouse Culture Fermented Organic Vegetables (company website here). I tried the Taqueria Mix that was somewhat spicy, but there are others to choose from, including Ginger Beets and Orange Ginger Carrots, Kimchi, and Sauerkraut. I paid $5.99 for a 12-ounce bag.

The Taqueria Mix contains fermented carrots, daikon, jicama, onion, and jalapeno. The inclusion of daikon, jicama, and onion means that you obtain prebiotic fibers in addition to probiotic microorganisms. Helpfully, the package lists the CFU count of 110 billion (entire package), which is a very respectful value. (Recall that our probiotic target is at least 50 billion CFUs per day.) They also have analysed the species included that include Lactobacillus pentosus/plantarum (two close-related species that have wide health benefits), L. koreensis (often found in Korean kimchi), L. brevis (found in Japanese fermented veggies), and L. hammesii (an organism in sourdough).

Beyond the familiar “tang” of lactic acid, the mix of peppers, flavors, and seasonings that includes caraway was tasty.

As with prebiotic fibers, there is advantage in variety—a variety of fermented foods that thereby provide a variety of different Lactobacillus, Bifidobacteria, Leuconostoc, Stretococcus, Saccharoymyces and other species. But this product is definitely worth a try for a modest price.

Fermented foods to beat back SIBO and dysbiosis

If you’ve been following the Wheat Belly discussions, you already know that efforts to cultivate healthy bowel flora in the wake of wheat/grain elimination is a key factor in regaining health. While I’ve emphasized the importance of a high-potency (e.g., 50 billion or more CFUs per day), multi-species probiotic supplement and prebiotic fibers, I’ve not focused on the importance of fermented foods. This issue comes to light in particular with our experience in battling small intestinal bacterial overgrowth, or SIBO.

Dysbiosis, or disrupted composition of bowel flora in the colon, is exceptionally common, essentially the rule in modern people and plays a role in numerous health conditions. SIBO is a more extreme form of dysbiosis in which bowel flora have ascended up from the colon and infect the small intestine, duodenum, and stomach. The unhealthy species that proliferate in this condition are responsible for causing or worsening an impressive number of health conditions, a list that includes fibromyalgia, irritable bowel syndrome (IBS), type 2 diabetes, colorectal cancer, autoimmune diseases, psoriasis, restless leg syndrome and many others. We’ve discussed the “tell-tale signs” of SIBO including what I call the Prebiotic Fiber Test. We’ve also discussed how more and more people participating in our discussions in the Undoctored Inner Circle are managing and treating their own SIBO with success using various herbal antibiotic regimens coupled with low-dose prebiotic fibers (presumably to prevent sporulation and/or prevent mucous lining sequestration that makes microorganisms impervious).

But, whether you engage in conventional diagnosis and treatment of SIBO (tough, as the majority of doctors have never heard of this condition, let alone how to diagnose and treat it) or the Undoctored path, there is not 100% success (often 50% or lower response with conventional antibiotics) and substantial likelihood of recurrence over time. After treatment, for instance, that results in complete relief from the pain of fibromyalgia, or the itching and redness of eczema, or the intermittent abdominal discomfort and diarrhea of IBS, previous symptoms can recur weeks or months later, necessitating another round of treatment. Three, four, or five rounds of treatment are not uncommon.

Imagine that SIBO is like a forest fire. Trees, bushes, and grasses ablaze, animals dead, everything in sight scorched, down to the roots, now smouldering after firefighters put out the flame. Is the forest now back to normal? Of course not–the phases of recovery are set in motion, years of recovery now necessary.

Perhaps it’s that way with SIBO: The offending microbes may be eliminated or reduced by antibiotics, but the “fiery” inflammation of SIBO that inflamed the intestinal lining, altered the mucous lining, caused abnormal intestinal permeability, all need to recover, a process that may require days to months.

Here’s my question: Because many strains of desirable microbes, such as Lactobacillus reuteri and Bacillus coagulans, can help heal the intestinal lining, suppress abnormal inflammation, and suppress regrowth of undesirable bacteria (e.g., via production of bacteriocins such as reuterin that kill or weaken other species), should we flood the intestinal tract with probiotic microorganisms in the wake of antiobiotic therapy? Should we fill our day with kombucha, kefir, kimchi, takuan, yogurt, fermented veggies, etc. several times per day, every day, in order to recover from SIBO—or prevent it?

Does consuming a virtual onslaught of microbes from food fermentation make sense? I believe it does, but we are unaccustomed to this idea. Think of it: During the late 19th century, cold storage of food was cumbersome and short-lived, reliant on access to imported or commercially manufactured ice. Inexpensive consumer electric refrigerators appeared in the 1930s, leading to the ubiquitous modern home refrigerators we now have. But these are recent innovations.

How did humans store food—vegetables and fruits that were gathered or harvested, organs and meats from animals, birds, or fish caught days or weeks prior, the milk yield from ruminant mammary glands, etc.—when no ice or refrigeration were available? They dried and air-cured, salted and pickled, canned, and fermented.

Fermentation therefore played a central role in food preservation, especially once human civilizations abandoned the nomadic hunter-gatherer lifestyle.

Fermentation was also a practice that enhanced both the flavors and nutritional value of food, while also providing a source for a variety of probiotic microorganisms. It would not be uncommon to consume several forms of fermented foods every day: yogurt, kefir, sauerkraut, beers, root vegetables, many other fermented vegetables and fruits. (Such fermented foods are consumed enthusiastically even today in Korea, parts of China, and Japan.) A vigorous flow of probiotic microorganisms was therefore common and widespread.

What were the sources of probiotic microorganisms in nomadic hunter-gatherers who did not remain in one location long enough to continually ferment foods? This is not entirely understood, as different populations in different parts of the world varied in their habits. But several practices are clear: Humans were not as meticulous about “cleanliness” as we are: no antibacterial soaps, shampoos, laundry detergents, bleach, disinfectants, etc. Many populations ate their organs and meats raw, often contaminated by microbes, especially if the intestines were eaten (raw or cooked; cooking may kill most microorganisms, but many beneficial factors from microbes still provide benefit in the absence of live cells). Delivery was vaginal, the first two to four years of infant/toddler nutrition breast milk. Roots and tubers were often consumed without washing off the dirt, just a brush or two by hand. Food was likely largely eaten by hand, no forks or knives within reach. Drop some of your hard-fought wild boar’s pancreas or heart on the ground? Pick it up and eat it.

I am therefore proposing that our management of SIBO (or prevention of SIBO/dysbiosis and numerous other health conditions) not end at antibiotics, but include a flood of probiotic organisms from fermented foods, especially at the conclusion of an antibiotic course for SIBO, providing trillions of microorganisms that participate in the healing process, along with the billions from a high-potency, multi-species probiotic supplement. Even consider consuming fermented foods, such as some kefir or kombucha, say, a couple of hours following every dose of antibiotic so that the microorganisms can begin to exert their healing properties before the next dose. I have suggested this strategy to a couple of people recovering from SIBO and, so far, have been encouraged by the response—or, of course, you could eat raw intestines and stop showering.

In coming posts, I shall be discussing now to expand your menu of helpful probiotic fermented foods. Even if you do not (yet) have SIBO, an appreciation for the power of fermented foods can be part of your return and maintenance of health.

Let’s talk about chocolate….

Five great reasons to consume cocoa and chocolate

The fatty acids in cocoa consists mainly of stearic acid and oleic acid. Unlike most saturated fatty acids, stearic acid does not raise blood cholesterol levels (not that we care about blood cholesterol levels, but maybe it will help keep your doctor from needlessly freaking out on you). Oleic acid is a monounsaturated fat that also does not raise cholesterol and may even reduce it.
Contains flavonoids (procyanidins and epicatechins). These are part of a group of powerful antioxidants known as polyphenols. They are found in a variety of foods including dark chocolate, tea, red wine, and various fruits and vegetables.
There are a variety of factors that can improve mood and a sense of pleasure by boosting serotonin and endorphin levels in the brain. Cocoa beans also contain dopamine, phenylethylamine and serotonin, compounds that are known to enhance mood and promote feelings of well-being.
Regular consumption may be associated with better cognitive performance in the elderly.
Contains numerous minerals including calcium, magnesium, and potassium.

Some Wheat Belly tips for consuming chocolate

Chocolate can be a wonderfully enjoyable ingredient in your Wheat Belly lifestyle. But why not extract maximum health benefit while not running into health booby-traps in order to preserve all the benefits of your Wheat Belly lifestyle?

Be aware of some basic issues surrounding chocolate:

Milk chocolate is much higher in sugar content, so stick with the darkest chocolates.

Milk binds to antioxidants in chocolate, making them unavailable; thus, milk chocolate is not a good antioxidant source.

Choose chocolate that is no less then 70 to 85% cocoa (even 90%–don’t worry: Us wheat- and grain-free people have heightened sensitivity to sweetness and even the 90% is sweet to us) and eat no more than 40 grams (approximately 2 inches square) per day to limit sugar.

100% chocolate– cocoa with cocoa butter but no sugar–great to add a rich chocolate taste to any dish.

Ghirardelli, Scharffen Berger and Hershey are all widely available brands.

People with dairy sensitivities can also use 100% chocolate to avoid exposure to dairy components.

An oldie, but goodie:
Chocolate For Adults Only

I call this Chocolate For Adults Only because it is certain to leave young, sugar-craving palates unsatisfied. But rest assured, it is appropriate for the most serious chocolate craving!

This is a way to obtain the rich flavors and textures of cocoa, the health benefits (for example, blood pressure reduction and anti-oxidation) of cocoa flavonoids, while obtaining none of the sugars/carbohydrates . . . and certainly no wheat or grains!

It is easy to make, requiring just a few ingredients, a few steps, and a few minutes. Set aside and save some for an indulgence, e.g., dip into natural peanut or almond butter.

Variations are easy, too: a few drops of orange extract and orange zest, a few drops of peppermint extract, some unsweetened dried berries, and a few drops of berry extract, among others.

Regardless of which variation you choose to make, be sure to taste your mixture before allowing to solidify. Desired sweetness can vary widely; you may wish to add more or less sweetener to suit individual taste.

Makes approximately 24 2-inch pieces.

8 ounces 100% unsweetened chocolate
5 tablespoons coconut oil, melted
1/2 cup dry roasted pistachios or other chopped nuts
1/4 cup whole flaxseeds or chia seeds
Sweetener equivalent to 1/2 cup sugar (e.g., 2 tbsp. Virtue Sweetener)

Using double-boiler method, melt cocoa. Alternatively, melt cocoa in microwave in 15-20 second increments. Stir in coconut oil, nuts, and flaxseed or chia seeds. Stir in sweetener gradually, mixing thoroughly; adjust sweetener to taste.

Lay a sheet of parchment paper out on a large baking pan. Pour chocolate mixture slowly onto paper to create one large continuous chocolate, tilting the pan carefully to spread evenly until a thickness similar to thick cardboard obtained. Alternatively, pour out to make 2-inch rounds. Place pan in refrigerator for 20 minutes.

Remove chocolate and break by hand into pieces of desired size.

Amazon reviews for Undoctored

Here’s a sample of the recent Amazon reviews for my book, Undoctored: Why Health Care Has Failed You and How You Can Become Smarter Than Your Doctor.

I am encouraged by the overwhelmingly positive feedback, as we are in a virtual war with Big Pharma, the medical device industry, and the hospital industry, all working around-the-clock to take more money out of your pocket while denying you real health. The powerful and pervasive campaign of misinformation conducted by many people in healthcare is impossible to ignore. Getting the Undoctored message out to the public is more important than ever before.

The real tragedy? Real, powerful solutions for health already exist—but the doctor’s office and the healthcare system are the LAST places you will hear about them, as they are too busy pushing revenue-yielding products and procedures on you. Getting this message out was a big part of my motivation for writing Undoctored and I believe that readers are coming to understand and embrace this new way of viewing and practicing genuine health.

CeeLee:

I was just entertaining myself with the small percentage of 1-star Amazon reviews of the original Wheat Belly book, which quite literally changed my life. Much of it is the same kind of criticism I run into in real life: “This will never work so I won’t bother trying it.” Oh really? My size 6 jeans (from 26/28+) beg to differ! I’m guessing most of the critics remain fat and unhealthy.

The first step to curing yourself of a weight problem or any other health issue is to believe it can be achieved. Then you have to actually do something about it. Dr. Davis lays out the steps for you – more completely in Undoctored than ever before. All you have to do is follow them. If nothing else has ever worked, what have you got to lose by trying something completely different?

I promise, it won’t hurt a bit, but you do have to be willing to give health a chance.

Loretta:

I’m not all of the way through this book yet, but I’m thrilled, more than thrilled that this information is finally available for the average person to read and to learn. I watch too many people with chronic diseases – some are actually dying and nothing is being done for them except to increase and stuff them full of drugs. I live in deep south Texas which has the highest rate of diabetes in the world. The diet recommendations are to eat more and more carbs, cut out fat (which does not raise blood sugar) and take drugs, drugs and more drugs. It’s insane and unethical and happening everywhere.

Years ago my husband and I embarked on a pretty much undoctored lifestyle. We are 66 and 60, respectively and we do not go to the doctor unless something (like a bone) is broken. We have health issues, but understand they are unlikely to be improved by drugs and that’s all modern medicine offers. We changed our diet to a Paleo style diet and our blood sugar, cholesterol and inflammation dropped. We added magnesium and our blood pressure dropped. Wow, there’s a world of health out there that most people don’t know anything about. Dr. Davis is simply trying to tell us all the truth. The American public is being hoodwinked and bamboozled.

Maybe he should take some words from the Movie, Terminator – “Come with me if you want to live.” Austrian accent inserted. Read this book and do what Dr. Davis is trying to tell us all to do – Think for ourselves and break the stranglehold that the current medical system has on most of us. Most chronic diseases, including autoimmune and cardiovascular disease can be cured or greatly improved without drugs. I know, my husband and I have done it. We are looking forward to using Dr. Davis’ systems to improve over what we’ve been doing on our own.

DH22:

Being an MD, I can tell you that the medical profession has unfortunately become an industry. Of course if you get hit by a bus or shot, you need the medical services but regarding treating chronic disease the medical profession falls way short. It is crucial to take responsibility for one’s own health. In general it is all about the diet. The diet is under your complete control I have been on a ketogenic diet for several years and after all my research, it is the way to go. Limit carbs to no more than 50 gms per day and preferably less than 25. As Dr. Davis states to ditch all the grains and carbs except for high fibrous vegetables. Dr. Davis brings to light the fact that the medical industry is about profit. Big pharma is not to be trusted as they very misleadingly claim spectacular results by using relative risk vs. absolute risk. This is clearly seen in the advertising of the statin studies. In my opinion, this is the biggest hoax. Cholesterol is not the culprit. It is sugar/carbs as Dr. Davis states. Big pharma does not spell out all the side effects of which there are many. Forget about the USDA which has given us the food pyramid. It is the exact opposite of what we should be eating. I met a PhD biochemist for the USDA. This man was morbidly obese. Right, we should take advice from him. These guidelines have caused significant damage, deaths, and disabilities. Just look around and you will see it is rare to find a thin person. We have been eating extremely excessive amount of carbs and frankenfoods for decades now and we have never been fatter. Please take Dr. Davis advice and you will be on the road to health.

SylverDragyn:

I am a believer and while not so dogmatic in my approach to my new lifestyle, I have seen tremendous and exciting results.PLEASE-If you have suffered from a heart attack, high blood pressure, acid reflux, you need to at least read this book.

I have suffered from acid reflux for years. Taking this and that prescription offered by my doctors-nothing worked very well or for very long. When I came off of the meds, I was told to expect an acid rebound. Well, on that note they were not wrong. I read this book and started some of the program before even finishing it

SINCERELY- within about 4 days, my acid reflux is GONE, no more meds. My annual cardiology appointment came up a couple of weeks ago-and he was forced to remove me from my blood pressure medicine. NO JOKE.

MerzDiesler:

This book has truly saved my life. I have tried almost every diet known. You name it, I tried it. But, I didn’t know what I was doing or why. I had no idea how bad grains are for you. I thought it would be enough to be gluten free, but it isn’t. I read the book and have been on his plan for about one week. In just one week, my digestion problems (that I have had for almost a decade and could not fix with prescription medication) are gone! I am only 35. I am overweight and have severe palpitations. I have had my vitamin D tested – I was severely deficient. I had my magnesium levels tested – I was severely deficient. The worst part is, my doctors do not care. They look at me, see that I am overweight and then try to get rid of me. If I ask them for prescriptions, they write them no questions asked (regardless what I ask for). But when I ask them to make me healthy, they give you the old food pyramid jazz. Trust me, read the book. The healthcare system in this country is designed to make and keep you sick!

Greg:

This book is absolutely exceptional. The first part of the book is extremely enlightening with its explanation of the food, government and pharmaceutical industries. The second part of the book is equally enlightening with diet and supplementation. Friends of mine have said “there is so much information out there” and, while true, we use information in all aspects of our lives – not just as regards food – to make informed decisions. You take in a lot of information, and then decide which information is best, whether it’s regarding food, or anything else. I encourage everyone to read this book. It can be life-changing. It is empowering, will increase your knowledge level and can have you living much healthier.

NancW:

I read this book from cover to cover in just a few days. Now I am going back to some of the important information. I have to admit at first I was puzzled as to how different Dr. Davis’ recommendations were to what I have been taught all my life. I know that what I have been doing so far has not been to kind to my weight and health. We have been incorporating his ideas into our life because (honestly) we are not doctor goers. The information he portrays is so absolutely right it is unbelievable. I would recommend this book to anyone wishing to understand what is going on in healthcare and wants to take responsibility for their own health.

Join the Undoctored Revolution

Let’s take back control over personal health. Share this to expose healthcare for the corrupt enterprise it is.

Imagine that you receive a letter in the mail stating “In order to retain your right to freedom of speech, you will be billed $10,000 per year every year for the rest of your life.”

You would be—-understandably-—outraged. Freedom of speech in America is precious, something Americans have waged wars to defend, something we now view as a basic right, no financial price required to maintain it. It should be free and available to everyone regardless of religion, color, political leanings, or income.

I believe that same principle applies to health.

Being healthy means living free of common chronic health conditions such as high blood pressure, high cholesterol, heartburn, irritable bowel syndrome, migraine headaches, skin rashes, joint pain and hundreds of other health conditions. While such common conditions are typically not catastrophic or immediately life-threatening, they consume the majority of health struggles for most people, while also costing the majority of healthcare dollars. Most money spent in healthcare is not for transplanting livers or treating leukemia; it’s spent on much more common, though less dramatic, “diseases of lifestyle.” Think of the $7 billion spent every year on statin cholesterol drugs, or the $20 billion for stomach acid-blocking drugs, or the $11 billion for injectable inflammatory drugs. This trillion dollar, $10,000 per American per year burden, growing every year, is unsustainable, now consuming an unprecedented 18% of U.S. Gross Domestic Product (GDP).

But there is a dirty little secret here. As crippling as expanding healthcare costs have grown, industry insiders privately work to grow their share of the GDP pie to 19%, 20%, or more. Healthcare is a growth industry, growing at your expense.

Healthcare is an industry that is not primarily focused on providing inexpensive, accessible solutions for individuals to achieve health; if that were true, doctor visits would consist of a detailed assessment of your eating habits, lifestyle, chemical exposures, nutrient deficiencies, emotional status, and other real health issues. Just recall your last doctor visit that likely focused more on your apparent “need” for drugs, scheduling a procedure, or referring you to a specialist for more detailed assessment. Healthcare is a system created to maximize revenues to healthcare insiders. This includes doctors, hospital systems, Big Pharma, the medical device industry, and other big players, all hoping to grow their piece of the healthcare pie.

Even if a health condition has a known and proven solution that can be administered by an individual safely, inexpensively, in the comfort of her home or kitchen, doctors and other healthcare insiders virtually never pass this information on. They don’t even seek it out or try to understand it in order to pass such information onto patients. If a service does not generate substantial revenues to healthcare insiders, it is simply not sought nor passed onto the healthcare consumer.

The modern epidemic of Type 2 diabetes is a perfect example, a largely man-made phenomenon that cannot be blamed on genetic defects, new viruses, or bad luck. Despite an abundance of clinical studies demonstrating that dietary carbohydrate restriction dramatically improves blood sugars, even reverses established diabetes all the way to non-diabetes in many, if not most, people, this information is almost never shared with the 30 million people who have been prescribed various drugs to reduce blood sugar. Watch television and you will see why: diabetes drug treatment is booming. Drugs like Toujeo, Januvia, Invokana, Farxiga, and Jardiance dominate TV and print ads, dominate the sales pitches of a very clever and well-trained pharmaceutical sales force, and thereby dominate the prescribing behavior of physicians. And who provides generous contributions to the American Diabetes Association that advocates liberal intake of foods that raise blood sugar, i.e., carbohydrates? Diabetes drug manufacturers such as Novo Nordisk, Sanofi, and AstraZeneca.

Studies have demonstrated that type 2 diabetes is readily reversible in many people. I have helped reverse this condition back to normal in thousands of people. I was a type 2 diabetic myself 25 years ago but do not have diabetes any longer and enjoy perfect blood sugar (and hemoglobin A1c) values. But what value do former type 2 diabetics provide to the healthcare system? None.

Sickness is not the enemy of the healthcare system—healthy people are. If everyone was healthy, we would have no need for much of the gargantuan for-profit healthcare system. Billion dollar hospital systems would deflate, seven-figure physician incomes would shrink, the bottom line of Big Pharma and medical device industries would plummet—but their loss is your gain. We would, of course, require healthcare for dealing with injuries and accidents, infectious diseases, and inherited conditions, truly essential functions of the healthcare system. But we would be freed of the common and chronic health conditions that dominate most healthcare interactions. The resultant cost savings, not to mention freedom from the hassles and unintended adverse effects, would be huge. Not millions of dollars, but hundreds of billions of dollars.

Is such a level of health achievable and can it be achieved without drugs or the supervision of the doctor? Yes, absolutely. I know because I’ve witnessed it countless times: people being freed of lists of prescription drugs, relieved of common health conditions such as acid reflux and migraine headaches, losing weight that was gained by following conventional nutritional advice, achieving health on a scale that they formerly thought unachievable, feeling and looking better than they have in years. And it was all achieved in spite of doctors, in spite of the misaligned motivations of a profit-driven healthcare system.

Healthcare has taken the for-profit paradigm too far, sacrificing health. This is why it is crucial that we take back individual control, taking advantage of the enormous bounty of science that has already shown us that health is a readily, cheaply, safely achievable goal, and apply the power of the coming wave of crowd wisdom facilitated by the tools of the Information Age. I call this movement Undoctored because it puts control over health back in the hands of you, not in the predatory, profiteering hands of the healthcare system.

Dr. William Davis is author of Undoctored: Why the Health Care Has Failed You and How You Can Become Smarter Than Your Doctor. He is also author of the mega bestseller Wheat Belly series of books that rocked the nutritional world with his groundbreaking insights. Dr. Davis is a champion of health in a world that dispenses plenty of information, though much of it carefully concealed to serve an agenda of big business, not of health. He previously practiced cardiology but has abandoned it in favor of work to disseminate truth in health.

A new program for wellness and to halt cognitive decline/dementia

We are planning to launch a bold and exciting new program at the Villas at Manalapan in central New Jersey. The Villas is a retirement community that incorporates cutting-edge wellness practices through its Revite Wellness program that includes efforts targeted to prevent, even reverse, cognitive decline. I will be bringing many of the Undoctored and Wheat Belly concepts to the Villas and I will be present to provide education and lectures from time-to-time.

The setting will be an apartment-home community mirroring the ambience and accommodations of a world-class resort with lush gardens, crystal chandeliers, a theater, elegant dining room, gym, bar, coupled with the (voluntary) Revite Wellness program.

On-site healthcare staff include a functional medicine physician to coordinate the cutting-edge health strategies, all aimed at improving cognitive function, physical health and appearance, minimizing or reducing reliance on prescription medication. You won’t even notice many of the hidden advantages built into the center, such as:

Lighting is managed, reducing blue wavelength lighting in common areas at night, enhancing LED lighting during the day, all to improve circadian rhythms, enhance daytime energy, and improve sleep.
Water will be filtered, then re-mineralized to improve mineral intake through drinking water.
Air is filtered to remove particulate matter, a known risk factor for cognitive decline.
Residents can choose to wear a biometric device, such as an Apple watch, that monitors heart rate, sleep cycles, etc. that will be tracked by healthcare staff.
When residents eat in the dining room, staff record diet composition that is transmitted to healthcare staff.

Residents will have the option to follow a grain-free, low-carb lifestyle to maximize health. They will also have the option of engaging in a comprehensive health assessment that includes laboratory examination of metabolic and hormonal status, selected genetic markers, imaging assessment of bone density and coronary artery health. The aim is to address every facet of health that provides advantage in improving health, functioning, flexibility, brain health, weight management, and longevity. Staff will also work to reduce reliance on prescription medications, help with exercise (gym, dance classes, supervised and independent exercise, etc.) with a gym staffed by an exercise physiologist, provide counseling on diet when desired.

Enrollment in the Revite Wellness program is voluntary and—remarkably—without additional cost (except for testing not covered by Medicare/healthcare insurance). You will be impressed with the many innovations that the Villas introduces, such as the morning “cocktail” (non-alcoholic) designed by on-site dietitian, Michelle Bruno, that provides MCT and coconut oils for improved brain health, EPA + DHA, vitamin D, probiotics and prebiotics, methylated B vitamins (for mood and cognitive health), and others.

In addition to the focus on health and wellness, the day-to-day lifestyle is designed for elegance and luxury. Meals are prepared in a display kitchen. A bistro will make gourmet coffee available. There is a movie theater with luxury recliner stadium seating. You will find a lounge and cocktail bar to enjoy wine, cocktails, tapas and live entertainment. A great room will host concerts and lectures, while the glass conservatory contains a greenhouse and sun room. A salon and spa are available, as are hydro massage lounge units. A full list of amenities can be found here. Details on the choice of residences can be found here. We know of no other facility like the Villas that offers such an array of health-promoting services, all in a luxurious setting.

Several levels of more advanced conventional care will also be available on site. One floor of the center will also house a Memory Center for residents with Alzheimer’s dementia where every effort will be made to stop progression or reverse any causes that can be identified.

If you would like more information about the Villas or the Revite Wellness program for you or a loved one, call 732-847-3920 or request more information here. Anyone following a Wheat Belly or Undoctored lifestyle can seamlessly continue their empowering practices at the Villas.

Now for a quick tour. Here is the dining room:
