EASY Midnight Snack – Tuna and Crackers | Edible Love
Hi guys! It’s Radeyah!
Today I will be showing you how to create the most satisfying midnight snack ever. Seriously, if you’re a big believer in tuna, you would love this one! I know I do!
You will need:
Canned Tuna
Mayonnaise
Onions
Pimento
Seasoning
Crackers
DICE IT
The first thing you want to do is dice up all the solid ingredients. So for me those were the onions and pimentos.
Tip: You can add absolutely anything else you may have on hand at the time, including hard tomatoes (and I say hard because you don’t want that squishy mess in your tuna, trust me), garlic (which I wish I had at the time), or even some fresh green seasoning.
DRAIN IT
Pop open the can of tuna and drain out all the liquid. Once you are sure all the liquid is gone, empty the can into a small bowl.
Tip: I used a container with a cover, so I was able to put the remainder in the fridge for breakfast the next morning, since it was midnight!
MIX IT
Add all the diced solid ingredients from before, to the bowl of tuna. Then add seasoning: a dash of salt, a sprinkle of black pepper, pepper flakes and anything else you want to. Next, drop a dollop or two of mayonnaise to the bowl and mix everything together.
CRACKER IT
Set out four crackers (yes four, it’s midnight after all, and you’re not about to splurge!) of your choice (you know, like the vital supply, crix) and scoop a spoonful of your mixed tuna onto each cracker and voilà!

Yummy Salmon Burger | Edible Love


Hi guys! It’s Radeyah!
Welcome back to my food blog, Edible Love By Radeyah, all about making fast, easy and mostly healthy dishes to satisfy your hunger, and to, you know, give you sustenance for life. On Edible Love, I try to break down the easiest of meals in a simple way so that ANYONE can follow along and create their own meals. As I said in my introductory post, I am not any kind of food expert. I am just a regular person who is annoyed by people who bash other people (of either sex) for not being able to cook. Hence Edible Love is a way for me to spread love to all those people who find the kitchen a scary place and to make it just a little bit more approachable.
So do you ever feel like you want something really really tasty to eat, but you do not want to spend a lot of time preparing it? Well any type of burger can fill this need really, but here I will talk about a Salmon Burger that I made for dinner, and the specifics of how I made it. This burger is absolutely easy to make, and even someone who does not know how to turn on a stove can do it!
You will need:
Salmon Burger Patties
Coconut Bake
Lettuce
Purple Onions
Mayonnaise
Garlic Sauce
Pepper
Ketchup
(totally easy right?)
The Salmon Patty
If you have a griddle, you can use it to cook your salmon patty. Otherwise, you can use a regular pot on the stove.
Tip: I use a griddle to cook burgers, eggs, toast, pancakes…basically everything (seriously, if you don’t have one, you need to get one because it makes everything so much easier).
Spray some PAM, or sprinkle some olive oil and let your patty cook.
Tip: My mom taught me that if I put a piece of foil over the salmon patty, it cooks faster and for me I love anything that speeds up the cooking process, so I did that.
You will know when your patty is done when there is a light brown, for lack of a better word, tan on the salmon patty.
The Washing and Cutting
Wash and cut your onions to your liking. Purple onions are delicious, but regular ones work fine too.
Wash your lettuce and dry them. You really do not want wet lettuce to make your burger soggy. TRUST ME.
You can add any veggies you want including tomatoes, pickles etc.
Tip: Wash and cut your veggies prior to fixing up your coconut bake so that the toasty-ness would be preserved!
Coconut Bake
Cut your bake in half. You can toast your bake in a toaster or on the griddle. I prefer using the griddle, but for this particular time, I used the toaster.
Lightly butter the bake, if you’re into that sort of thing.
Putting everything together
Just like in my last post about my one-dish pasta and basil chicken, my favourite part was putting everything together. It’s just nice to see the fruit of your labour, you know?
Place your lightly buttered bake halves on a plate, and place your lettuce, onions and whatever else you decided to include in your veggies on one side of the bake.
Then, add your ketchup, mayo, garlic sauce and pepper to the bake.
Tip: I added my sauces to the side with my veggies just so I could keep the messiness at a minimum when eating it!
Place your cooked salmon patty on top the empty side of the bake and top it off with the side with your sauces and voilà! Your yummy salmon burger is ready to eat!

One-dish pasta and basil chicken | Edible Love






Hi guys! It’s Radeyah!
Welcome to my first foodie post in my new Edible Love series. This post is dedicated to a one-dish pasta and basil chicken that I made. This dish is really simple, and as the name of it suggests, it’s just one dish! You can however, and really should, add a side salad to this dish to make it a fuller, healthier experience… or you could just leave it as is. It’s really totally up to you and what you’re feeling for in the moment!
I made this dish for four persons, but there was A LOT remaining after we all ate, so I definitely need to work on my average a bit more, but at least we had enough for a whole other meal, and that’s always a win-win situation.
So let’s jump straight into how I prepared it:
(remember nothing is ever set in stone with cooking so always make it your own and don’t be afraid to experiment)
You will need:
2 types of pasta
1 Onion
3 bell peppers
2 pimento
Handful of baby carrots
Diced meat of choice
Seasoning of choice
Basil leaves
Shredded cheese
PASTA
To prepare the pasta, pre-heat a deep pot with water and wait until it is boiling. Add a pinch of salt (this is to ensure that the pasta does not stick together). Then, add the pasta into the boiling water. Put on the timer on your cell phone (yes, phones do that these days). Note the cooking time on the packaging for the pasta, but remember that what you’re looking for is for the pasta to be soft, since that is how you will know when it is done.


I did this with two types of whole grain pasta, so I repeated these steps for both. Whole grain pasta is a much more healthy option that the usual white pasta and it really does not taste that much different. I don’t even notice the difference or miss the regular pasta anymore.
When you have your pasta all ready to go, set it aside and work on the veggies.
VEGGIES
Set your pot on the stove and turn on the heat about halfway. Add oil of your choice. For a healthier option try olive oil like I did. Let the oil heat up for a few minutes.
Cut up onion, bell peppers and pimento. Add all to the pot.
Tip: If you get that sizzling sound as you emptied the cut veggies into the pot, then congrats! You’re doing something right! I really do love that sound it makes me feel like a totally competent chef!



Next, wash those baby carrots and pop them into the pot of veggies as well. The goal here is to simmer (see, I know cooking terminology! #BoutIncapable) the pot so that all the veggies will soften to just the right amount without becoming sappy, because you still want the veggies to remain slightly crunchy.
Tip: To simmer the pot, add water to the pot and bring it to a boil. Reduce the heat and leave the veggies like that until they become softer, but not too soft (I’m really good at this aren’t I?). When I was satisfied with the softness of the veggies, I turned the heat back up and let any excess water evaporate. Turn off the heat when all the water evaporates.
I also added some extra seasoning like black pepper, a tiny pinch of salt (since the pasta is already salted), garlic powder (since I didn’t have raw garlic on hand) and pepper flakes.
DICED CHICKEN
After seasoning the diced chicken, set up another pot with some oil and add the chicken. At this point you can add basil leaves into the pot to get the basil flavour in your chicken. Let the seasoned pieces of chicken cook until all pieces have a light brown colour and all liquid has evapourated.


Tip: when you have your least hectic day, you should wash and season meat and then freeze it so that when you are ready to put a meal together really quickly after a long day, it will be easier on you! Another good idea is if you have more than one person in your household, you can designate certain tasks to each person. This will lighten the load from one person and everyone can carry their own weight, especially since we are all human beings and require food to live.
PUTTING EVERYTHING TOGETHER
This is the most fun part (at least for me). It’s time to mix your pasta, veggies and chicken together!
Since the pot with my veggies was the biggest, (logistics people!), I emptied my pot of basil chicken into my veggies pot. Then, I gradually mixed the pasta in the same pot. Truthfully, this gave me some problems since there was so much pasta (note to self: next time less pasta!), but eventually, all the pasta got mixed in and voilà!



Tip: If you’re one of those people who NEED “wet” food (I’m not one of those people), then you should consider popping open a bottle of Ragu sauce or Alfredo sauce and mixing it in before you add the pasta, just to add a saucy component to the dish.
When plating your dish for consumption, top off with your choice of shredded cheese. I used two Sargento cheeses, one was the 4 Cheese Mexican and the other was Mozzarella.
That’s it! The only thing left for you to do after that is to enjoy your meal, so bon appétit!

Edible Love By Radeyah!
Hi guys! It’s Radeyah!
Today I am beginning this series on my blog called “Edible Love” which will be dedicated to all the edible things that I create. Before you go on thinking that I know a whole lot about cooking and food, or that I want to pretend that I know a whole lot about cooking and food, let me set you straight from the beginning – I do not! I am just an ordinary book nerd who decided that I wanted to create this food series because food is love and love is all we need. Okay, okay, just kidding. I am actually starting this series because I am quite annoyed by everyone (and when I say ‘everyone’, I don’t actually mean everyone), who has been “on my case” lately about how I cannot cook, how I really need to learn how to cook and asking me what kind of girl / wife / mother will I be if I cannot cook!
Do not even get me started about the gender bias that exists where women are seen to be the ones who’s duty it is to put food on the table, because I will rant for about 1,000 words more, and that’s not why you’re here, and no, this is not me giving in to that traditional mindset, but quite frankly, I just got tired of people assuming that just because I do not necessarily have a whole lot of time to cook, that I cannot!
Don’t guys eat too? But honestly, don’t guys know that they become 100% more attractive to girls if THEY can cook and they don’t depend on their mothers, sisters and wives to do it for them? I thought they were independent humans… I feel the need to rant about this some more setting in, but I will leave that for another time: time and place Radeyah, time and place!
So, now I shall post all the lovely things I make in this new “Edible Love” series on my blog. Haters, come at me (p.s. I still love you)! :)
In this “Edible Love” series, you will find SIMPLE easy to do recipes that ANYONE can do, no matter how busy you are. My aim here is to show everyone how simple and easy preparing a delicious (and healthy) meal can be, with the occasional splurge on desserts, because come on, life is way too short not to have desserts! I will also include some random tips about food prepping and the time it saves you especially when you’re stressed and have a lot on your plate. HAHA! Look at me being all punny and whatnot! ;)

My Review: Reflections of a Man by Amari Soul
FIVE OUT OF FIVE STARS!
Reflections of a Man truly explores themes within relationships with a blunt honesty that is both refreshing and inspiring. There is a lot of useful and thought provoking information presented in this book for both sides in any relationship. The themes really address core issues that are common in relationships and urges the reader to recognize these issues and to fix them before it is too late.
Quite honestly, this book should be read by every single human being on earth. Maybe then there would be less hurt on this planet, and more love!
