Barking from the Bayou

It’s official and I could not be more excited…my blog has gone to the dogs! That’s not something most people would brag or be excited about but in this case it is a very positive move. For several months, I have wandered rather aimlessly through the blogosphere. I touched on a variety of subjects and learned how to build the site, install gadgets, widget, and whatchamacallits. It has been a learning experience. I knew the day would come when I would have that “aha” moment and find my niche. Luckily, for me that day came last week. As I mentioned in a previous blog, I discovered a group of fabulous pet bloggers. It is the BlogPaws Community. They have been so friendly and helpful to me. I have already made friends and look forward to networking with many others.
I visited their website, read the mission statement, and looked at the groups, blogs, and activities. Needless to say, I joined on the spot! “Aha!” My aimless wandering was over! It was the same feeling I experienced when the idea for The Returns hit. Sometimes you just know when it’s right.
After discussing the change of direction to a permanent Pet/dog blog with my husband, we spent a couple of days deciding on a new name. I’ll still be using the www.mkclinton because it is my domain name. I wanted something catchy and original. That turned out to be easier said than done. We came up with some brilliant ideas. Unfortunately, someone else had thought of them too. Finally, he came up with Barking from the Bayou last night. I loved it immediately and nobody else was using it. WooHoo!! Winner! We went out today and he took some photos for my header. Once we got home, he went to work on designing and even added The Returns boating in the bayou! I’m a very lucky wife. I changed my entire template. I hope you like the new look and concept.

Make Your Pet A Star Contest


I thought long and hard about what would be a great kick-off contest.  I even took suggestions from my readers.  I finally decided to make someone’s pet a character in my next adventure of The Returns!  After all, most of the people that enjoy my books love their pets.  I thought it would be a good way to say “thanks” for their support.
The rules are easy and it will be fun for everyone.  *I’d actually like the first thing you do is read The Returns, but that’s just a given.
The first thing you have to do is “Like” our Facebook page.  http://on.fb.me/1bfaBvY  
Second:  Send me an email at thereturns7@gmail.com with a photo of your pet and a brief letter explaining who/what you believe they were before they were “returned” as your pet.  For example, Bentley was an FBI Agent and Tucker was a Navy SEAL.  When he was a human, Pierre was a world famous designer of haute couture fashion, and computer genius, while Bones once held the Featherweight Boxing title.  Use your imagination to come up with your furry friend’s previous human life. 
That is ALL you have to do to enter!!  The deadline for entries is December 22, 2013
On December 29, 2013: I will post the three most original entries on our Facebook page.  The pet that receives the most “likes” will become a character in my new book, The Returns #3.  How exciting will that be for some lucky dog or cat? 
Don’t delay, grab your camera, and snap a picture.  Feel free to discuss with your pet exactly what they did prior to being “returned” in their current animal body.  Most are more than happy to tell you all about their human exploits.  I look forward to hearing from you. 
 
**Recipe of the Day**
Big Batch Kris Kringle Cookies

1 cup butter, softened
1 cup granulated sugar
½ cup packed brown sugar                  
2 eggs
1 tsp.  vanilla
2-1/4 cups flour
1 tsp.  baking soda
½ tsp.  salt
3 pkg.  (4 oz. each)  BAKER'S White Chocolate, chopped
2 cups chopped PLANTERS Pecans, toasted
2 cups dried cranberries
Directions
HEAT oven to 375ºF.
BEAT butter and sugars in large bowl with mixer until light and fluffy.  Blend in eggs and vanilla.  Add flour, baking soda, and salt; mix well.  Stir in chocolate, nuts, and cranberries.
DROP rounded tablespoonful of dough, 1-1/2 inches apart, onto baking sheets.
BAKE 9 to 11 min. or until lightly browned.  Cool on baking sheets 3 min.; remove to wire racks.  Cool completely.
Kraft Kitchens Tips
Variation
Prepare as directed, replacing 6 oz. white chocolate with 6 oz. BAKER'S Semi-Sweet Baking Chocolate or substitute chopped PLANTERS Walnuts or PLANTERS Slivered Almonds for the pecans; or chopped dried apricots or mixed dried fruit bits for the dried cranberries.

Freezing Cookie Dough
Enjoy homemade cookies anytime by preparing and freezing cookie dough in advance.  For slice-and-bake cookies, shape dough into logs, double wrap in plastic wrap and freeze until ready to use.  Then, just thaw, slice and bake.  For drop cookies, shape dough into balls, and then freeze on a baking sheet.  Store in a freezer-weight resealable plastic bag until ready to use.  Place frozen dough balls on baking sheets, thaw, and bake.  For cut-out cookies, pat dough into a disk, double wrap in plastic wrap and freeze.  When ready to bake, just thaw the dough, roll out, cut into shapes, and bake as directed.

Polar Plunge or Freezin' for a Reason


Public Domain Image via www.rediff.comHere is a question for you to ponder as you warm your hands on your mug of coffee.  Why would anyone that lives in the extreme frigid temperatures of Alaska, willing jump into icy water on the 21st day of December?  It can only be one of a few reasons, a crazed polar bear is about to eat them, they are insane, or for a very worthy cause.  Fortunately, all of these warm-blooded folks are doing it for a great cause.  The Alaska Special Olympics is the beneficiary of the annual Polar Plunge.
I am sure most of you are aware of the Special Olympics and the amazing job they do fulfilling the dreams of turning the handicapped into the handi-capable.  Special Olympics Alaska Mission Statement is: “Special Olympics Alaska provides year-round sports training and athletic competition in a variety of Olympic-type sports for children and adults with intellectual disabilities, giving them continuing opportunities to develop physical fitness, to demonstrate courage, to experience joy and to participate in a sharing of gifts, skills, and friendship with their families, other Special Olympics athletes, and the community.”
When I worked as an aide with the Special Education class in the high school, I had the opportunity to attend the local games.  It was such a uplifting experience that it’s hard to put into words.  The students were so proud of their accomplishments and all of them were treated as first place winners.  You could see the pride and joy show on their faces.  If you ever have the chance to visit and cheer these athletes at your area games, I urge you to attend.  It will give you a new outlook on life.
By now, you are probably wondering why I am discussing the Polar Plunge when I am way down here in the south.  That’s a good question and I do have an answer for you!  My daughter, who up until a few weeks ago had never experienced “real” snowfall, is living in Alaska.  Her new hubby is stationed there in the military.  They are taking the Polar Plunge this year!  We have made our donation and are anxiously waiting to watch it via the internet.  If you would like to help raise funds by making a donation, it would warm their hearts as they freeze their booties.  They named their team the “Moosecicles” which is probably what they will be when they climb back out of the frigid water!  Here is the link to their donation page: http://www.firstgiving.com/fundraiser/JessicaMuschek/2013-special-olympics-alaska-polar-plunge/team.  You can also click on the “event” tab and watch the hilarious “You Tube” video of last year’s event. 
**Recipe of the Day**
Carrot Soufflé
Ingredients
1 16 oz. can of carrots                                                                   
1 stick margarine
1 cup sugar
3 eggs
1 tsp. baking powder
3 Tbsps. flour
1 tsp. vanilla
Directions
Drain carrots.  Melt margarine; add carrots and put in blender.  Add the rest of the ingredients and blend.  Pour into greased casserole dish.  Bake at 350˚ for 45 minutes.  Serves 4 – 6.
**Pet of the Day**
Are you looking for a sweet, quiet female to share your home?  A girl that will be happy to lie at your feet while you watch television or lay her head in your lap as you read a book.  Smiley could be just the love to fill your heart.  She is 6 years old and way over that shoe-chewing, gnawing, curious puppy stage.  This precious dog has been waiting for you to come claim her at Petsavers in Shreveport since 2009.  How is that for patience?  Smiley will probably be best suited for a home without children.  She is a bit shy and fearful but if she felt true love and security, those feelings would probably fade.  After all, it’s hard to be confident when you are passed over for a home repeatedly.  Smiley is a beautiful mixed breed with a lot of love to give to the right person.  If you want to be the one to change her life, contact the good people at Petsavers http://www.petsaversshreveport.org/index.php

Petsavers and C. J.


Happy Weekend!  I hope you are surviving the blast of cold winter weather that has decided to freeze so much of the U.S.  Our temperatures have gone from the upper 70’s on Wednesday to the upper 20’s today.  That’s normal weather for this time of year in the south.  We are a group that keeps our shorts next to our sweatpants in the closet because you never know which one the weather will call for from one day to the next.  If you are experiencing the extreme cold, try to stay warm and safe inside.
I wanted to talk with you about a group I discovered the other day through Twitter.  As many of my readers are aware, I am crazy about dogs.  I have recently begun following many pet enthusiasts and I saw a tweet from an account called “The PetBlog Lady.”  I went to her profile and followed her link to her blog, http://www.petbloglady.com/ .  She is wonderful and is part of a network of pet bloggers.  It is the Blogpaws Community.  They work together to enrich the lives of animals, promoting their health and welfare, and doing community service projects.  I was so excited and put in a request to join them.  I am proud to say that I am now a member of the group.  I can’t wait to learn, network, and make new friends that share a passion for making life better for animals.  I think so many people want to help but have no idea what they can do or where to start.  I have no visions of grandeur but hope I can make a difference in my own way.
The first thing I did was contact my local Petsavers office.  I thought if I could feature a dog or cat in need of a good home, it would be a great place to start.   Linda Shemwell, the founder and president of the Petsavers in Shreveport was very nice.  She gave me the name of a sweet fellow that has been looking for a loving family a long time.  He is my first feature so please read his story below.  Ms. Shemwell works tirelessly 365 days a year caring for animals that would otherwise be wandering the streets or put to death.  I am looking forward to visiting and having the honor of meeting this incredible woman.

Let me introduce you to C. J.  This sweet guy has been at Petsavers for way too long.  He was brought to the facility along with his brother when he was just a pup.  Much to his delight, a family came and adopted both of them.  He thought eve rything was going to be great.  Being curious by nature, he had a tendency to escape and go out to explore his new world.  Running around the neighborhood, he came home with a case of mange.  His new owners decided to keep his brother but returned poor C. J. to Petsavers.  Sigh... that certainly didn’t turn out as he had hoped.  The kind people at the center cleared up his mange and he was back to his handsome self in no time.  Still, nobody took him home with them.  He wondered if it was because he looked different from the other dogs.  After all, he does have one blue eye while the other is brown.  In his opinion, it makes him unique…even special!  A lot of families and single folks come in to pick out new best friends every day.  He has patiently waited for his forever person to show up but so many choose the cute little puppies.  C. J. understands that since he's six years old, but he knows that he could be the absolute perfect dog for the right person.  He is a bit of a celebrity now that he is featured on this year’s Christmas card.  Even being one of the dogs with the most seniority at the center, a greeting card “cover dog,” his distinguished looks, and great personality, he remains remarkably humble.
If C. J. tugs at your heartstrings and looks like a dog who could be your new best friend, please give him what every good boy deserves…a happy home with humans who will love him.  All he wants this Christmas is you.

Prep Time: 10 minutes Cook time: 35 minutes Yields: 9 bars      
Ingredients
·         4 large Eggs
·         1 cup Nutella
·         Powdered Sugar, optional 
Instructions
·         Preheat oven to 350.
·         Line an 8x8  brownie pan with parchment paper; set aside.
·         Place the eggs in your mixer's bowl and beat for 5 to 7 minutes, or until the eggs have tripled in size.  This may take up to 10 minutes with a handheld mixer on high.
·         Heat the Nutella in the microwave for 60 seconds.
·         Remove and stir.
·         Slowly pour a stream of the warm Nutella over the eggs, beating until mixture is thoroughly combined.
·         Pour batter into prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the middle comes out with very few crumbs.
·         Remove and let completely cool before cutting.
·         Dust with powdered sugar.
·         Cut into bars and serve.

Christmas Carols


‘Tis the season for Christmas carols.  I am a big fan of the annual tunes and like most people, know the words to all of the classics.  Although I don’t think many people actually go out caroling much anymore, at least not where I live.  It’s really a shame but I suppose it is a sign of the times. 
My husband and I made a game out of the Christmas music on the radio.  Our local station begins playing all Christmas music all the time starting on Thanksgiving Day.  We guess which song will be the next to play and keep score, one point for each correct guess.  Of course, we turn it off between songs so the deejay doesn’t introduce the upcoming titles before they play.  It’s surprising how many we get right!  You should try it the next time you are in the car heading out to do some Christmas shopping.   
I was thinking of the lyrics to some of our great Christmas tunes we all sing along with this time of year.  When you examine them, some are rather disturbing.  Let me show you what I’m talking about as we take a closer look.  Of course, I’m taking these words literally just for fun.
12 Days of Christmas :  This is a beautiful song about gifts from your true love.  Nothing could be sweeter, right?  For your first gift, you get a partridge in a pear tree, not too bad.  Then, this love of your life is going to come hauling in an additional two turtle doves, three French hens, four calling birds, six geese laying eggs, and seven swans in need of a place to swim.  After you have built an aviary to accommodate your new-feathered menagerie, the gifts get weirder.  He decides to surprise you with eight maids a-milking so that must mean he’s hauling in eight cows, too.  The room is getting crowded because there are also nine ladies that have come to dance for you.  Then, ten lords begin jumping around, eleven guys start playing pipes, to the accompaniment of twelve dudes on the drums!  Seriously, just play it safe and give her the five golden rings! 
Rudolph the Red-Nosed Reindeer : Good old Rudolph was unlucky enough to be born with a bright red glowing nose.  The poor guy had a hard time right from the get-go.  He was teased, called names, and then never asked to play with the other little reindeer in their games.  This is a blatant case of bullying if there ever was one.  No one was nice to him until Santa Claus needed his help.  When he saved Christmas, everyone loved him.  I think those reindeer are a bunch of users!
We Wish You A Merry Christmas : A classic song for carolers to serenade you during this festive season.  You open the door and greet the group with an appreciative smile.  Just when you think the song is over, the group turns hostile, threatening not to vacate the premises until they receive some Figgy pudding and a cup of good cheer.  They are staging a sit-in on your lawn for pudding and a stiff drink.  How many of you have Figgy pudding on hand?  I had to look it up to find out that it is a baked concoction of dates, figs, and dark chocolate with a brown sugar and cream sauce poured over the top and served warm.  This may explain why caroling has dwindled in popularity.
I Saw Mommy Kissing Santa Claus : Okay, let’s look at these lyrics two ways.  First, a child sneaks down to find his mother in a lip lock with a man that is not his Daddy!  Talk about some major emotional trauma on Christmas Eve.  Does he spill the beans about his mom’s unfaithfulness?  How can he face either parent after what he’s witnessed?  Second, his mother was stepping out on dad with Santa Claus!  The guy whose lap he sat on, who he trusted to bring him toys, and just how many other moms has this red-suited Casanova kissed as he scampered house-to-house?  Maybe Santa had better leave a voucher for some therapy sessions!
Please Daddy Don’t Get Drunk This Christmas : This is a country favorite and really speaks of the joys of the holiday!  The lyrics are the words of a child, almost eight years old, begging his Daddy not to get drunk, fall under the Christmas tree, and make his mamma cry.  Oh, the memories of Christmas time as a child, putting the “fun” in dysfunctional.
Last but not least, the classic, heart-warming winner is…
Grandma Got Run Over By A Reindeer : To summarize this Yuletide classic, a beloved grandmother gets drunk on eggnog, walks home to get her medication, only to become a victim of a hit and run sleigh driver.  Nobody bothers to go check on her until Christmas morning when she’s discovered dead with hoof marks on her forehead.  I’m guessing if Santa had not run over her, she most likely would have overdosed from mixing her meds with alcohol.  That wouldn’t have made such a spiffy sing-along though.  If this whole scene is not tragic enough, the family carries on with the Christmas festivities.  Although, out of respect they dress in black while they ponder whether to bust into Granny’s gifts or return them.  Her husband, who we can assume has been married to the deceased long enough to have grandchildren is spending the day he discovered her body, watching football, drinking beer, and playing cards.  Well, at least they didn’t let it put a damper on their holiday!   
I hope you enjoyed my take on some of my favorite carols.  If you see me in the car this holiday season, the chances are good, I will be singing along with one of them at the top of my voice.  Just close your windows because I can’t carry a tune in a bucket.  By the way, in our Christmas song contest I have guessed four songs to my husband’s two.  WooHoo!

Gingerbread Cheesecake    

(Martha Stewart)

Serves 10
·         All-purpose flour, for dusting
·         1/4 recipe of the dough for Molasses-Gingerbread Cookies 
·         4 tablespoons unsalted butter, melted
·         1 3/4 cups granulated sugar
·         2 pounds cream cheese, room temperature
·         1 teaspoon pure vanilla extract
·         4 large eggs, room temperature
·         1/4 cup unsulfured molasses
·         1/4 teaspoon salt
·         1 1/2 teaspoons ground ginger
·         1 teaspoon ground cinnamon
·         1 teaspoon freshly grated nutmeg
·         1/4 teaspoon ground cloves
·         1/2 teaspoon finely grated lemon zest
·         6 gingerbread men (see above)
Directions
1.       Preheat oven to 350 degrees.  Wrap exterior of a 9-inch springform pan in 2 layers of foil.
2.       On a generously floured piece of parchment, roll dough to a 13-by-10-inch rectangle, about 1/4 inch thick.  Brush off excess flour.  Slide dough and parchment onto a baking sheet.  Bake until firm and golden brown, about 14 minutes.  Let cool completely on sheet on a wire rack.  Break into large pieces, then pulse in a food processor until finely ground.
3.       Combine butter, 1/4 cup sugar, and 2 cups cookie crumbs in a bowl.  Press mixture firmly and evenly into bottom and one-third of the way up sides of prepared pan.  Bake until set, about 10 minutes.  Let cool on rack.
4.       Reduce oven temperature to 325 degrees.  Beat cream cheese with a mixer on medium speed until fluffy, about 3 minutes.  Beat in remaining 1 1/2 cups sugar and the vanilla, scraping down sides of bowl as needed.  Reduce speed to low.  Add eggs, 1 at a time, beating well after each addition and scraping sides of bowl as needed. Beat in molasses, salt, spices, and lemon zest.  Pour filling into cooled crust.
5.       Place cheesecake in a large, shallow roasting pan.  Transfer to oven, and carefully add enough hot water to roasting pan to come about halfway up sides of springform pan.  Bake until cheesecake is set but still slightly wobbly in center, 60 to 65 minutes.  Carefully remove springform pan from roasting pan, and let cool on a wire rack.  Refrigerate, uncovered, for at least 8 hours (preferably overnight).
6.       Before serving, run a hot knife around edges of cheesecake to loosen, and remove sides of pan.  Arrange gingerbread cookies in center of cake in a circle (with heads facing inward and arms touching, alternating light and dark.

Holly, Jolly and Oh-So-Safe!  Of course you want to include your furry companions in the festivities, pet parents, but as you celebrate this holiday season, try to keep your pet's eating and exercise habits as close to their normal routine as possible.  Be sure to steer them clear of the following unhealthy treats, toxic plants, and dangerous decorations:
O Christmas Tree Securely anchor your Christmas tree so it doesn't tip and fall, causing possible injury to your pet.  This will also prevent the tree water—which may contain fertilizers that can cause stomach upset—from spilling.  Stagnant tree water is a breeding ground for bacteria and your pet could end up with nausea or diarrhea should he imbibe.
Tinsel-less Town 
Kitties love this sparkly, light-catching "toy" that's easy to bat around and carry in their mouths.  But a nibble can lead to a swallow, which can lead to an obstructed digestive tract, severe vomiting, dehydration and possible surgery.  It's best to brighten your boughs with something other than tinsel.
No Feasting for the Furries 
By now you know not to feed your pets chocolate and anything sweetened with xylitol, but do you know the lengths to which an enterprising fur kid will go to chomp on something yummy? Make sure to keep your pets away from the table and unattended plates of food, and be sure to secure the lids on garbage cans.
Forget the Mistletoe & Holly 
Holly, when ingested, can cause pets to suffer nausea, vomiting and diarrhea.  Mistletoe can cause gastrointestinal upset and cardiovascular problems.  And many varieties of lilies, can cause kidney failure in cats if ingested. Opt for just-as-jolly artificial plants made from silk or plastic, or choose a pet-safe bouquet.
Leave the Leftovers 
Fatty, spicy and no-no human foods, as well as bones, should not be fed to your furry friends.  Pets can join the festivities in other fun ways that won't lead to costly medical bills.
That Holiday Glow 
Don't leave lighted candles unattended.  Pets may burn themselves or cause a fire if they knock candles over.  Be sure to use appropriate candleholders, placed on a stable surface.  And if you leave the room, put the candle out!
Wired Up 
Keep wires, batteries, and glass or plastic ornaments out of paws' reach.  A wire can deliver a potentially lethal electrical shock and a punctured battery can cause burns to the mouth and esophagus, while shards of breakable ornaments can damage your pet's mouth.

Let's Celebrate National Cookie Day


Photo courtesy of Sesame Street I know you just recovered from Thanksgiving, Black Friday, and Cyber Monday/Tuesday.  You’re probably thinking there’s no need to celebrate for at least a couple of weeks.  Don’t despair, today is a day for extreme jubilation, that’s right…it’s National Cookie Day!  Woo Hoo!  COOKIES!  A day set aside to honor the tasty bite size morsel that comes in every possible flavor you can imagine.  Personally, I have never met a cookie that I didn’t like.  Okay, I’m still a little on the fence about those pink sugar wafers that have the waffle squares on the cookie.  I’ve never been a fan; they hurt the roof of my mouth and taste a bit like sugary cardboard.  That’s just my personal opinion; I suppose many people love them because they have been selling them for as long as I can remember.  Let’s talk about undisputable delicious cookies!
All Girl Scout Cookies :  Only sold once a year, any flavor of Girl Scout cookies are a sure winner!  My favorites are the Samoa.  It is hard to go wrong with a cup of coffee and a box of those babies.  My yearly order is embarrassing.  I always say, “Oh, we are going to freeze most of them.”  To this day, not a single box of them has ever seen the inside of our freezer.  It just makes me sound like less of a glutton.  My only complaint about the entire line is each year the quantity of cookies per box diminishes.
Chocolate Chip :  There are no bad chocolate chip cookies.  It is not necessary to add nuts or any other ingredients.  Just Cookie + Chocolate Chips = Perfection
White Chocolate/Macadamia :  I’m not sure who came up with this combination but they are one of my culinary heroes.  These rank very high on my favorite cookie list.  If a recipe is available for this divine treat, please do not tell me.  I do not want to know that I am capable of making them, as it would be dangerous.
Oreo :  It’s the classic All-American sandwich cookie.  Please, no double stuffing just the good old-fashioned filling.  It’s a combination you can twist, lick, and crunch.  The Oreo is one of the only cookies I eat with milk instead of coffee.
Peanut Butter Cookie :  I add this to the list for my husband.  I’m not a fan of the peanut butter cookie but it is his absolute favorite.  The women at the school cafeteria used to make the best, big, and soft with the fork tines imprint baked in each one.   
M & M Cookies :  These are similar to the chocolate chip and a must for any favorite cookie list.  They are fun and easy to make.  Since M & Ms come in colors for every season, they make great treats all year long.  There is a fine line between the perfect baking time resulting in soft chewy cookies and a couple of minutes too long and having crispy cookies.  Remember practice makes perfect!
Oatmeal Raisin :  This might not make everyone favorite list and I understand.  Call me weird but I absolutely adore oatmeal raisin cookies!  I know people often mistake them for chocolate chips and get upset when they bite into them.  I have to believe this is what led to their unfavorable ranking on people’s cookie list.  Seriously, what is not to love…it’s oatmeal and raisins with a hint of wonderful sprinkled inside of each one!

My Very Favorite Cookie in the Entire World is THE FROSTED SUGAR COOKIE
If I ever had to choose a last meal, it would be a difficult choice.  I love many main courses from Mexican to steak and baked potatoes.  Should the choice of last cookie be put on the table, there would be no hesitation.  Give me a box of those pink frosted sugar cookies available in the bakery department of the grocery store. Yes, an entire clear plastic container full, after all it is my last meal!  It used to be they were only for sale during Valentine’s Day and Easter.  That wasn’t so bad; it was like Girl Scout cookies.  I was only tempted twice a year so I could buy them relatively guilt-free.  How does Satan or the bakers lead me straight into the depths of temptation?  They begin to bake them all year long and change the color of the frosting.  That’s right, now they come in frosting colors for Christmas, Mardi Gras, Valentine’s, Easter, St. Patrick’s, you get the idea.  They are the most delicious, melt-in-your-mouth cookie I have ever loved.  I may have to get a box to celebrate today.  After all, it’d be un-American not to celebrate a national holiday!
      Now that you know that today is an actual important day to celebrate, go grab a box or bag of your favorite cookie.  Pour a glass of ice-cold milk or a cup of hot steaming coffee and salute National Cookie Day!

Pecan Sandies

This recipe is slightly adapted from The Sweet Life.  Beware… it makes a TON of cookies, just under 5 dozen!
·                     1 cup butter
·                     1 cup vegetable oil
·                     1 1/2 cups granulated sugar, divided                 
·                     1 cup powdered sugar
·                     2 eggs
·                     1/4 tsp. ground nutmeg
·                     1 1/2 tsp. vanilla extract
·                     4 cups all-purpose flour
·                     1 tsp. baking soda
·                     1 tsp. cream of tartar
·                     1 tsp. salt
·                     2 cups chopped pecans
·                     whole pecans
Preheat oven to 375Cream butter, vegetable oil, 1 cup granulated sugar and powdered sugar until smooth.Beat in eggs one at a time; stir in nutmeg and vanilla.Fold in flour, baking soda, cream of tartar, and salt.Mix in chopped pecans.Roll dough into 1” balls and roll each ball in remaining granulated sugar.Place cookies 2 inches apart on ungreased cookie sheets.Press 1 pecan half into top of each dough ball.Bake 10 to 12 minutes, or until the edges are golden.Remove from cookie sheets to cool on wire racks.
Soft Peanut Butter Cookies

Serves: 24 cookies
Ingredients

·         ½ cup butter, softened                                                        
·         1 cup peanut butter
·         ½ cup sugar
·         ½ cup brown sugar                                                           
·         1 egg
·         1 tablespoon vanilla
·         1 teaspoon baking soda
·         1 teaspoon baking powder
·         1 teaspoon salt
·         1 and ½ cups flour
Instructions
1.       Preheat oven to 350 degrees.
2.       In a large mixing bowl, cream together butter and peanut butter.
3.       Add sugars and continue to beat for 2 minutes.
4.       Add egg, vanilla, baking soda, baking powder, and salt, continuing to mix.
5.       Slowly incorporate flour, continuing to beat until a fluffy dough forms.
6.       Shape dough into 1 and ½ inch balls.
7.       Slightly flatten and arrange on a lined baking sheet, with cookies 2 inches apart from one another.
8.       Bake for 8-9 minutes.

Perfect Frosted Sugar Cookies

Ingredients
·         2 1/2 cups cake flour
·         2 tsp. cornstarch
·         1 1/2 tsp. baking powder
·         1/4 tsp. salt
·         1/2 cup salted butter, at room temperature
·         1/4 cup all vegetable shortening (unflavored), at room temperature
·         1 cup granulated sugar  
·         1 large egg                                                                                      
·         1 large egg white
·         2 tsp. vanilla extract
·         1/2 tsp. almond extract
·         1 recipe Vanilla Frosting, recipe follows
·          
Vanilla Frosting
·          
·         1/3 cup salted butter, at room temperature
·         2 1/2 cups powdered sugar
·         1/2 tsp. vanilla extract
·         2 1/2 - 3 Tbsp. half-and-half
·         food coloring, optional
 
Directions
   Sift flour, cornstarch, baking powder, and salt into a large bowl, then whisk it just a few times, set  to the  side.  In the bowl of an electric stand mixer, on medium speed, whip together butter, shortening and  sugar until very pale and fluffy, about 4 minutes, scrapping down the sides of the bowl as needed.      Add in egg and mix until combined, then add egg white, vanilla and almond extract and mix until combine.  With mixer running, slowly add in dry ingredients and mix just until combine.  Transfer dough to an airtight container and refrigerate 2 hours.  Preheat oven to 375 during the last 10 minutes of refrigeration.
Scoop dough out a scant 1/4 cup at a time and roll into a ball.  Place dough ball on a lightly floured surface, sprinkle top lightly with flour, then using something flat and smooth (such as the storage container lid), press and evenly flatten dough to 1/2" thick (so you should have about a 2 2/3" - 2 3/4 " circular cookie).  Transfer flattened dough to a Silpat or buttered cookie sheet and repeat process with remaining dough (you'll have to use 2 cookie sheets).  Bake in preheated oven 9 - 11 minutes.  Allow to cool 5 minutes on baking sheet before transferring to a wire rack to cool.  Cool completely then frost with Vanilla Frosting (note that frosting begins to set quickly so if you are adding sprinkles, sprinkle each cookie immediately after frosting it, don't frost the whole batch of cookies then try to sprinkle them because the sprinkles won’t stick).
Vanilla Frosting
Combine all ingredients in a large mixing bowl, using an electric hand mixer, whip until frosting is smooth and fluffy.  Mix in food coloring if desired (note: I finally figured out how to get a good pink with your average grocery store food coloring, I put like 8-10 drops red and the faintest amount of blue - be careful if you do this though, it's nowhere near a full drop.  You’d want to touch it to your clean finger and then swipe it in.  Random tip but thought I'd share, I never like the hot pink hue I used to get.  The tiny bit of blue just tones and cools it down a bit).  It's also fun to color coordinate, frost, and sprinkle these cookie according to the nearest holiday.

Homemade Tasty Dog Cookies

Ingredients: 
1/2 cups water
1/2 cup oil
2 eggs
4 tablespoons peanut butter
2 tsp. vanilla
2 cups flour
1/2 cup cornmeal
1/2 oats

Blend water, oil, eggs, and vanilla together.  In a separate bowl, whisk flour, cornmeal, and oats together and then pour into wet mixture.  Now add the peanut butter and mix all ingredients until you form a ball of dough.  Roll out and shape.  Put onto a non-stick lightly greased cookie tray.  Cook 20 minutes at 400 F. Turn off oven and allow the biscuits to cool in oven until crisp and hard.  Store in an airtight container.

Makes approx. 3 1/2 dozen treats with a 3-inch cookie cutter.

Happy Birthday Bentley!


  
Oh, how the time has flown!  It seems like only yesterday that my baby boy was tripping over his long silky ears.  Today, Bentley turns six years old.  I can’t imagine life without my lovable Basset Hound.  He definitely has me wrapped around his ginormous paw and is very aware of that fact.  Like most pet owners, I am sure that he is the most perfect dog ever to walk on four legs.  Is he spoiled?  Yes indeed, incredibly and undeniably spoiled rotten.  Am I ashamed of that fact?  Nope, not one little bit!  One look from those big sad puppy dog eyes and I am putty in his soft pads.  Simply put, he had my heart at the first wag of his tail.  My second blog told the story of how he came to be our hairy child.  If you want to read the story, just click on the archives. 

 
   We are celebrating his birthday with a special dog bone-shaped birthday cookie from our local pet store.  His “nephew” Pierre the Westie is getting a sunshine shaped cookie of his own.  Bentley’s gifts include beef sticks, chew bones, some chicken treats, dog biscuits, and a new tube of toothpaste.  He will be most excited over the toothpaste.  The boy loves to have his teeth brushed.  I can show him his toothbrush and he will come running.  It is also how I lure him into the bathtub.  There is no doubt that after he devours his cookie, he will want his teeth brushed to a sparkling shine.  If I could only get him to be as enthusiastic about getting his nails clipped, I’d be so happy.
   Bentley is a Basset of simple pleasures.  He loves belly scratches, lying in the sunshine, dog treats, bananas, almonds, cracklins’, wrestling with Pierre, barking at the neighbor, and his human family.  Before anyone writes to tell me that cracklins and almonds are bad for him, I know.  He seldom gets them, but he does LOVE them.  Does he have any faults?  Not many…he falls asleep in seconds then snores very loudly, he drools, sheds enough for several dogs, and grumps if you wake him before he’s ready.  However, he can sit up like a human with perfect posture, loves to give hugs, softly taps my arm to wake me up in the mornings, looks at us with so much love in his eyes it touches your soul, and he is hilarious.  All of those qualities more than make up for the snoring, drooling, grumpy, shedding part!  In my eyes, he is the best dog in the world and without him, I would never have written The Returns.  He insists that I mention his picture is now on the new cover.  I guess I owe him any success that I may achieve.  At least, that is what he tells me when he goes belly-up for a tummy scratch or wants a boost up on the couch even though he is completely capable of climbing up by himself.  For only being six years old, he has trained me very well.
Happy Birthday Bentley, I love you!  I hope we are blessed with many, many more years together! Pictures through the years:                   His look of love <3  He had the cutest little puppy face!

A Little More Romance

My last blog listed some of the best titles from a few of my favorite romance authors. On the list, I included Nora Roberts, Carol Grace, and Karen Rose Smith. Since my list of favorites includes many more, I decided to continue with it today. The first on today’s list was left off yesterday’s by mistake, I actually had her books written down in preparation. I believe because her name is a combination of two of the others, I thought I had posted her books. I’d like to blame the residual effects of my Thanksgiving turducken and pecan pie stupor!
Carol Rose has some wonderful books to choose from and I have read most of her titles. She writes captivating love stories that leave you feeling content with the outcome. I just downloaded “Race the Darknesshttp://www.amazon.com/Race-Darkness--... ebook/dp/B008EA0I96/ and “Momentary Marriagehttp://www.amazon.com/Momentary-Marri... Both are offered as KDP free downloads at the time of this writing. I can hardly wait to begin reading! I’m not sure how long either offer will last, so you will want to click right over and get your copy. If you aren’t familiar with her writing, let me share some of my irresistible reads from her many titles: “Always,” “Resisting Cupid,” and “Forgotten Father.” Now that I have two more to read, the problem will be which Carol Rose to pick first.
I have suggested Marie Force books before, but I can’t list my favorite writers without repeating her name. She has the ability to make me fall in love with her characters, cry right along with them, and celebrate their happiness. Her entire “McCarthy’s of Gansett Island” series is superb and should be on every romance reader’s list. “Line of Scrimmage,” “The Fall,” and “True North” are excellent. The one that captured my heart was the first title I read, “The Wreck,” which hooked me as a lifelong fan.
Kristen James writes beautiful love stories that seem to have couples finding love from a past tragedy. That may not sound enticing but take my word for it, all of her books are great. Perhaps, finding a lost love would be a better way to grab you. I have read several of her stories and thoroughly enjoyed each one. This is the perfect time of the year to start your collection of Kristen James’ books with “A Cowboy for Christmas.” Others that I highly recommend are “Embers of Hope,” “More Than Memories,” and “The Cowboy Kiss.” The females in her stories are strong and independent women. I’m sure you’ll quickly become a fan.
The last on today’s list is Kate Perry. I love her Laurel Heights series. There are eleven books and each is equally fun and exciting. I have to admit, I have been engrossed in this series for so long, I have only veered off into one other of her books. “Playing for Keeps” is from her Pillow Talk novels of family & love. It is just as terrific as the Laurel Heights series. I see my Kate Perry book list continuing to grow for the distant future. If you haven’t fallen in love with her writing yet, just pick up the first book in the Laurel Heights collection “Perfect for You,” and you’ll find out that Kate Perry is just like the title…perfect for you!


**Recipe of the Day**
Since I have had two days of blogs featuring romance authors and some of my favorite books, I don’t guess I’ll be too out of line with today’s recipe. It is on my sister-in-law’s Facebook page and featured on http://www.jocooks.com/bakery/cakes/

Sex In A Pan
Prep Time: 45 minutes / Cook Time: 20 minutes / Total Time: 1 hour, 5 minutes

Ingredients

Crust
• 1 cup pecans, chopped
• 3 Tbsp. white sugar
• 1/2 cup butter
• 1 cup flour
Cream cheese layer
• 1 8 oz package cream cheese
• 1 cup powdered sugar (use 1/2 cup for less sweetness)
• 1 cup whipped cream or cool whip
Vanilla pudding
• 1 package of instant vanilla pudding (5.1 oz or 144 g)
• 3 cups milk (use 2 cups if you want a firmer pudding)
Chocolate Pudding
• 1 package of instant chocolate pudding (5.1 oz or 144 g)
• 3 cups milk (use 2 cups if you want a firmer pudding)
Last layer
• 2 cups whipped cream or cool whip
• shaved chocolate

Directions1. Preheat oven to 350 F degrees.
2. Spray a 9 x 13 inch baking dish with cooking spray.
3. In a mixer mix all the crust ingredients together and press the mixture into the prepared baking dish.
4. Bake it for about 20 minutes.
5. Prepare the vanilla pudding as per the instructions on the package.
6. Prepare the chocolate pudding as per the instructions on the package.
7. In a mixer, add the cream cheese, powdered sugar and the cup of whipped cream. Mix until light and fluffy.
8. Let the crust cool. Spread the cream cheese mixture over the crust evenly. Spread the chocolate pudding over the cream cheese, then the vanilla pudding. Top with the whipped cream and sprinkle with the chocolate.
9. Refrigerate for a couple hours so that it sets.


**Pet Tip of the Day**

Today’s tip is simple…hug your pet daily.
Yesterday, a dear friend of mine had to say good-bye to her Sheltie, Maggie. My heart is broken for her loss. As many of you know firsthand, that final trip to the vet's office is one of the hardest things a pet lover ever has to endure. Maggie was lucky to have such a wonderful “mom” to love and care for her. All dogs should be so fortunate. As a puppy, she began her life in a bad situation. Leiah rescued the frightened little bundle of fur, took her to a warm secure home and gave her a life that other dogs can only wish to have. There is one more star shining from the Rainbow Bridge tonight. So, that is my tip for today, hug your dog or cat. To Leiah and Maggie, you are in my heart, my thoughts, and my prayers. Extra hugs to you~

Romance Authors

I have already admitted to being an avid romance reader. It is a genre I never thought I’d fall so deeply in love with but alas, I am living happily ever after with these timeless stories. For years, I was strictly a Stephen King, Dean Koontz horror type reader. That all changed for me one fateful day.
I innocently picked up a Mary Higgins Clark title and read quite a few of her wonderful books. Although Ms. Clark is not a romance author, I consider her my segue from horror/mystery to mystery/romance. She always leaves me guessing right up to the end of her stories. I have never read one that was not thoroughly enjoyable but, my favorite must-reads would be “Daddy’s Little Girl” and “Loves Music, Loves to Dance,” and “I Heard That Song Before.” It doesn’t matter which you select, if Mary Higgins Clark’s name is listed as the author then it will surely keep you enthralled from the very first page.
It wasn’t long before I stumbled upon Nora Roberts. After one book, I was hooked on romance novels. I have read shelves of her books as well as her J.D. Robb series. She is an amazing talent, taking me all over the world with her beautiful words. Choosing my favorite book would be very difficult. I will confess to having read several more than once or twice. If you want to go by that recommendation then, on my simply can’t resist titles are “Black Hills,” “Honest Illusions,” and “The Reef.” I have to repeat myself here, it is impossible for me to actually choose a best of when it comes to Nora Roberts. In my humble opinion, she writes like Michelangelo painted, beautiful, captivating, and breathtaking. Have I mentioned that I’m a fan? Her books written under the pseudonym R. D. Robb are just as exciting. As with most series books, start with the first, “Naked in Death.” You will want to continue with the entire collection of Eve Dallas and her billionaire husband Roarke.
Carol Grace is one of my favorite go-to authors anytime I am looking for a happily-ever-after. Isn’t that the reason we read a romance? She writes wonderful stories with great characters that quickly capture your heart. She manages to do this without graphic sex scenes and a barrage of profanity. This seems to be a rarity in today’s romance market. I have read many Carol Grace titles and enjoyed all of them. I recommend “Cinderella in Overalls,” “Wild Mustang Man,” and “Welcome to Paradise” if you are trying to decide where to start with so many great choices.
The last author I’m listing today is another of my must-read romance writers. Karen Rose Smith is one more reason I am thankful for my Kindle. I already had a complete bookshelf of Nora Roberts before the Kindle came on the market. If I had to find a place to store my Carol Grace and Karen Rose Smith books in paperback, I’d have to do some major construction! Ms. Smith also writes feel-good romance stories. Her Search for Love series is very entertaining with every book in series a winner. Some of my must –haves on my Karen Rose Smith list would have to be “When Mom Meets Dad,” “Heartfire,” and “Wish On The Moon.”
I hope this helps any of you looking for a cozy romantic story to cuddle up and read in front of a roaring fireplace with a cup of steaming coffee, snuggled under a blanket. These authors all have the ability to take you away from the stress of your day and whisk to you a place of love and joy with the occasional touch of mystery. Many happy endings to you all.

Sweet Chicken Bacon Wraps
Makes 12-15 wraps

Ingredients
4 boneless, skinless, chicken breasts
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar
2 tablespoons chili powder

Directions
1. Preheat oven to 350 degrees F.
2. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

Thanksgiving is over and now you have leftovers stuffed in the refrigerator and your dog and cat staring longingly at you each time you open the door. “Surely, there is something in that big box of food you can share, Human!” Pawnation comes to the rescue. Here is a list of approved food you four-legged friend can have in small portions.
TURKEY: Make way for the bird! The main event of the Thanksgiving meal, turkey is also the item on the menu you can feel most comfortable sharing with both your cat and dog. Cats are carnivores, so the meat on the table is the most natural thing to feed your feline. Opinions differ on whether raw or cooked meat is better for pets, so consult your veterinarian if you don’t feel sure. Either way, feed your pet lean, white meat instead of the fattier dark meat, and try not to go overboard.
CRANBERRIES: Cranberries are great for both cats and dogs. Not only are they full of vitamins A, B1, B2, and C, but they’re well-known for helping maintain healthy urinary tracts. Cats are especially prone to urinary-tract infections and can benefit from eating cranberries (or taking cranberry supplements). On Thanksgiving, if you’re making cranberry sauce from scratch with fresh fruit, feel free to share. Canned cranberry sauce and jellied cranberry sauce, on the other hand, are full of sugar and should not be given to pets.
CARROTS: Fresh, raw carrots are frequently cited as an ideal snack for dogs. Dogs love their sweet, crisp taste, and carrots boast lots of vitamins, fiber, and potassium. The crunchy root vegetables are even good for your dog’s dental health, helping to remove plaque from teeth and keep breath fresh. Drop a few carrots your dog’s way before you cook them or add a bunch of salt and fat. Cats can also enjoy the benefits of carrots, but cook them first for your feline. Raw carrots may be hard for some cats to digest.
GREEN BEANS: Green beans make a healthy "anytime" snack for your dog. These nutritional powerhouses are packed with vitamins, minerals and fiber, and they’re low in calories, so even if your dog is on a diet, you won’t have to feel guilty about slipping him some string beans on Thanksgiving. However, if you’re planning to use the beans to make a green-bean casserole or some other rich dish full of salt and fat, be sure to share with your dog before your prepare the dish.
SWEET POTATOES: Despite being “sweet,” these spuds are actually healthier than regular potatoes because they have a lower glycemic index, which basically means they’ll wreak less havoc on your dog’s blood sugar (and yours). They’re also full of fiber, vitamins, and carotenoids. If you want to share sweet potatoes with your dog, set some aside without any salt or butter on it.
MACARONI AND CHEESE: Delicious, gooey mac and cheese is a staple of many Thanksgiving tables. Whether or not it’s OK for your dog to eat depends on how you serve it up. Obviously, the final product is going to be loaded with salt and fat, and is too rich to share with your pet. However, a little bit of cooked, plain pasta is basically just bread, so you can feel OK sharing a tiny portion as a treat. If you’re making your mac and cheese from scratch, a small bit of the fresh cheese is also safe to share with your cat or a dog (unless your pet is lactose intolerant).
PUMPKIN: Pumpkin is good for dogs to eat not only because it’s low in calories and bursting with vitamins, beta-carotene and fiber, but also because it helps with a dog’s digestion. If Fido is suffering from an upset tummy, diarrhea or constipation, a little bit of pumpkin may be just what the veterinarian ordered. If you’re using canned pumpkin for your pie, though, it’s better not to share it. The processed stuff isn’t healthy for dogs like fresh pumpkin is.
CORN: Corn doesn’t necessarily have any nutritional benefit for dogs to enjoy, but it also won’t harm them, so if you really want to, you can share your corn with your dog (in moderation) on Thanksgiving. Here’s one important caveat: Don’t give a dog corn on the cob. Dogs love to chew on corn cobs like bones, but it may be unsafe. Your dog could accidentally swallow the cob, which can lead to choking or a life-threatening intestinal obstruction. **One of the members on the Basset Hound Forum just went through this with their Basset. It had to have surgery to remove the corn cob.
BREAD/ROLLS: Think of bread like treats. It’s safe as long as you share a little, not a lot. Bread is high in calories and has a high glycemic index, so too much can lead to weight gain very easily, especially if butter is in the mix. Sharing a roll is fine, just don’t toss roll after roll to your begging best friend at the Thanksgiving table.

Happy Thanksgiving!

Tomorrow is the official start of the holiday season. Although most of the stores began putting Christmas displays up the day Halloween items went to half price! We haven’t decided if my husband and I will brave the stores on Black Friday. We usually take part just because the atmosphere is so exciting and it's an adventure. When our children were growing up, it also provided a great deal of bargains. I’ll do the annual sale paper perusal to see if there is anything that I can’t live without being offered at rock bottom prices. Of course, this year many of the stores are opening on Thanksgiving Day. After a big dinner, I am positive no shopping will be happening. We are more of the triple espresso 4:00 a.m. kind of shoppers! Now, just writing about it has me pumped up, ready to face the crowds.
When it comes to things to be grateful for on this special day, I have an abundance of blessings. Among them are my wonderful husband of thirty-one years, two loving children, my dogs, my health, and all of the basics that make a comfortable life. I am thankful of these every day of the year because I realize how fortunate I am to have them. I'm giving special new thanks this year for our daughter-in-law, Jackie and our son-in-law, Keith. I'm grateful for both of them because not only are they terrific people, but they have made our son and daughter extremely happy. No parent could ask for more than that. I embarked on my writing career this past year and it has been amazing. I am so appreciative for this new journey because I have made awesome friendships, received some incredibly touching letters, and great feedback. I give thanks for my readers daily. That means that if you are reading this or one of my books, thank you.
If this holiday finds you having to deal with one of life's dark clouds that hangs low over our heads occasionally, my hope is that sunny skies are just beyond the horizon. If you woke up this morning, free and able to move about, there's a brand new day before you and a reason to be grateful. Give thanks for today because it’s an opportunity that's denied many.

Maple-Pecan Sweet Potatoes

Ingredients
2 3/4 pounds sweet potatoes
¼ Cup Half & Half
3 Tblsp. Butter, Melted
3 Tblsp. Maple Syrup
1 tsp. Kosher Salt
½ tsp. Freshly Ground Pepper
¼ tsp. Vanilla Extract
¼ tsp. Ground Cinnamon
1/8 tsp. Ground Allspice
1 Lg. Egg, slightly beaten
Cooking Spray
½ Cup Mini Marshmallows
2 Tblsp. Chopped Pecans
Preparation
1. Preheat oven to 400°.
2. Pierce potatoes several times with a fork; place on a foil-lined baking sheet. Bake at 400° for 1 hour or until tender. Cool slightly; peel and mash in a large bowl.
3. Reduce oven temperature to 350°.
4. Stir half-and-half and the next 8 ingredients (through egg) into sweet potatoes. Spoon mixture into a 2-quart baking dish coated with cooking spray. Bake at 350° for 15 minutes. Sprinkle the top with mini-marshmallows and chopped pecans; bake 12 minutes or until the mini-marshmallows are slightly melted. Serve immediately.

Vanilla & Honey Glazed Carrots

Ingredients
• 2 cups of prepared Carrots
• 1 tsp. Salt
• 4 Tblsp. unsalted Butter
• 4 Tblsp. Honey
• 4 tsp. Vanilla Extract
Instructions
Boil the carrots in water for approximately 15 minutes, or until tender. Drain and set aside. In a medium sauté pan, melt the butter. Add honey and vanilla, and stir until dissolved. Add the carrots. Cook on medium heat cook for two minutes. Stir gently, until carrots are glazed on all sides. Enjoy immediately. Yields 6-8 servings.

Easy Cranberry Sauce

Ingredients
1 Bag cranberries (about 340 gm)
1 cup water
1 cup sugar
Directions
*If you like this recipe, you can buy lots of cranberries while in season, and freeze them until ready to make the sauce.
WASH the cranberries.
PUT in a small or medium pot with the water and sugar.
BRING to a low boil, and simmer until the berries pop.
MASH a little with a fork or a potato masher.
Cook until you like it -- the longer you cook, the smoother the sauce. If you want it very smooth, mash it through a Foley Mill, or blend in a food processor or a blender after it is cool.
CHILL until dinner.

Easy Pumpkin Pie

Ingredients
1 (6 ounce) package refrigerated pie crusts
1 (15 ounce) can pumpkin
1 (14 ounce) can sweetened condensed milk (do not use evaporated milk)
2 eggs
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Directions
Preheat oven to 425 degrees F. With mixer, beat pumpkin, sweetened condensed milk, eggs, spices, and salt. Pour into crust, bake for 15 min.
Reduce oven temperature to 350 degrees F; bake 35 to 40 minutes longer or until knife inserted 1 inch from crust comes out clean.
Cool before serving either plain or with your favorite topping. Refrigerate leftovers.
