2 tablespoon minced garlic
½ teaspoon black pepper
1 teaspoon dried thyme

¼ cup all purpose flour
3 cups low sodium vegetable broth
1 cup almond milk
4 cups broccoli, chopped into florets
4 cups cauliflower, chopped into florets
1 cup shredded cheddar cheese
¼ cup nutritional yeast

Sausage:
½ pound lean ground hamburger meat
½ teaspoon fennel seed, crushed
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon red pepper flakes
½ teaspoon oregano
½ teaspoon ground sage
½ teaspoon dried basil
½ teaspoon dried thyme
Soup:
1 tablespoon canola oil
3 tablespoon minced garlic
1 cup white onion, diced
1 cup diced potato, peeled
4 cups low sodium vegetable broth
½ teaspoon ground black pepper
5 cups green cabbage, chopped into 1-2 inch pieces

Make sausage (24 hours before soup)
1. Crush fennel in a bag or bowl.
2. Add spices to bowl and mix together well.
3. Add ground beef to spice mixture and combine well, either with a handheld mixer or your hands.
4. Refrigerate for 24 hours to let the spices blend and flavor the meat.

5. Add canola oil to a large pot on medium heat. When oil is hot, add sausage and cook for 4-5 minutes until cooked throughout.
6. Add the garlic and onion, and saute until onions are translucent on medium heat, 5-8 minutes
7. Add the potatoes, vegetable broth and ground pepper. Bring to a low boil and cook for 15-20 minutes uncovered.
8. When the potatoes are starting to soften, add the cabbage and stir to wilt the cabbage. Let it soften for 5-8 minutes.
9. Serve and enjoy. Each serving is about 1 ¼ cups

Make the sausage 24 hours ahead of time, it needs time to really blend together with the spices.  And store the soup after eating if there are any leftovers.

Preparing this Pumpkin Cauliflower Soup is simple and hassle-free. Just follow these easy steps to create a flavorful, kidney-friendly meal perfect for any occasion.

Step 1 of Roasted Pumpkin and CauliflowerPreheat the oven to 400'F. Line a baking sheet with parchment paper.
2. Cut the cauliflower into florets. Then peel and cube the pumpkin, cut the onion into quarters and peel the garlic cloves.
3. Add your prepared vegetables to the prepared baking sheet. Drizzle the vegetables with olive oil.Step 2 Roasted Pumpkin and Cauliflower

4. Place in the oven to roast for 30-35 minutes, or until all vegetables are tender and have a nice caramelized color. It adds so much to the flavor to have the caramelized color, so leave them in until they are done. Flip the vegetables halfway through to ensure even cooking.

5. Transfer the roasted vegetables to a high speed blender. You can do this in batches. Add some vegetable broth to ensure the mixture blends until smooth. Allow the steam to escape as needed. You can also put them in the pan / pot and use an immersion blender. Blend as much as you like but I recommend it very smooth.

6. As you complete each batch of vegetables, add them to a pot that will hold all the liquid. Add the rest of the vegetable broth if necessary. Add the smoked paprika, Italian seasoning, cumin, brown sugar and black pepper to the pot and let cook for 10-15 minutes at a low simmer.

7. Remove from heat and stir in the almond milk and mixed well.

This Roasted Cauliflower and Pumpkin Soup is a creamy, flavorful dish perfect for people with CKD. Made with roasted vegetables and a blend of spices, it’s low in sodium and potassium while offering rich, satisfying flavors.

8 cups pumpkin, peeled and cubed
5 cups cauliflower, broken into florets
5 garlic cloves - or 5 tbsp
2 cups yellow onion, cut into chunks or sliced
3 cups vegetable broth, low sodium
2 tablespoon olive oil
2 teaspoon smoked
1 tablespoon italian seasoning
1 tablespoon cumin, ground
1 teaspoon black pepper
¼ cup brown sugar
¼ cup almond milk

1. Preheat the oven to 400'F. Line a baking sheet with parchment paper.
2. Cut the cauliflower into florets. Then peel and cube the pumpkin, cut the onion into quarters and peel the garlic cloves. (You can use any pumpkin you like, but I recommend a pie pumpkin as they are easier to cut, peel and clean - you will need a 3-4 pound pumpkin to get the amount needed after processing the vegetable)
3. Add your prepared vegetables to the prepared baking sheet. Drizzle the vegetables with olive oil.
4. Place in the oven to roast for 30-35 minutes, or until all vegetables are tender and have a nice carmelized color. It adds so much to the flavor to have the carmelized color, so leave them in until they are done. Flip the vegetables halfway through to ensure even cooking.
5. Transfer the roasted vegetables to a high speed blender. You can do this in batches. Add some vegetable broth to ensure the mixture blends until smooth. Allow the steam to escape as needed. You can also put them in the pan / pot and use an immersion blender. Blend as much as you like but I recommend it very smooth.
6. As you complete each batch of vegetables, add them to a pot that will hold all the liquid. Add the rest of the vegetable broth if necessary. Add the smoked paprika, italian seasoning, cumin, brown sugar and black pepper to the pot and let cook for 10-15 minutes at a low simmer.
7. Remove from heat and stir in the almond milk and mixed well.
8. Makes 4 servings of 2 cups each.

⅓ cup jalapeno, diced (you can remove the seeds it it's too spicy)
4 tbsp minced garlic
1 cup bell pepper, chopped
2 cups frozen corn
4 cups low sodium vegetable broth (my recipe)
1 tablespoon texas twist
1 teaspoon paprika
2 teaspoon oregano
½ teaspoon coriander
4 ounces low fat cream cheese
2 tablespoon lime juice
¼ cup cilantro, minced
