I always loved you. You were my first love and I didn't regret anything. But I guess unrequited love has its way of telling me that you will never be mine.


Such a cliche thing: To stay in love with someone who can't love you back. I don't know why but something about you triggered something within me. That first day of class, I was always interested in you, but sadly you were interested in someone else. It's okay. It was just a simple crush. Everyone gets them, especially at my age. But time grew and I found myself hopelessly loving you. I knew I had no chance but still I hoped. I hoped that one day you'll notice me and probably love me just as much as I do. Months passed, another year came, and yet you're still the one my heart wants. I ache for your presence every single day. Seeing you happy makes me happy. It was all I ever wanted to do. Make you happy. Why cant you love me back? Why? Then it hit me. I'm not beautiful. Not an inch of beauty in my face. We were each other's firsts but will never be each other's lasts. We thought we were unbreakable but that was one sided. It was us against the world and yet I gave up. We were the perfect couple but timing was our perfect enemy. It was a matter of choosing family or you and so I chose what was right.


You kept on pursuing me for months at that but I kept on my ground. I didn't want to keep you from being a second choice when you can become somebody's first. That's why I ignored you when you wanted to get back together. Months passed by quickly and suddenly I never heard from you again. This made me think of my past decision, that I was right because if we were truly in love we can never be separated by heart but look at us now.

Chorizo and Pimiento Mac and Cheese Recipe


Our take on mac and cheese uses two kinds of cheese, and chorizo and pimiento to spice things up.


Serves 8
Prep Time 30 minutes
Baking Time 45 minutes


8 tablespoons (1 stick) butter, divided
1/2 cup all-purpose flour
1 liter fresh milk, warmed
4 cups grated Gruyère or mozzarella cheese (about 400 grams)
2 cups grated extra-sharp cheddar cheese (about 200 grams)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
1 tablespoon olive oil
2 pieces Spanish chorizo (about 400 grams), cubed
1 (200-gram) can pimiento, drained and cubed
1 (500-gram) pack elbow macaroni, cooked according to package directions
1 1/2 cups Japanese breadcrumbs


1 Preheat oven to 375°F.


2 Melt 6 tablespoons butter in a large pot. Stir in flour and cook over low heat for 2 to 3 minutes, stirring with a whisk.


3 Turn up heat to medium. Add warm milk while stirring continuously with a whisk. Cook for 1 to 2 minutes or until thick and smooth.


4 Turn down heat to low and add cheeses, pepper, and nutmeg. Stir until cheese is melted and mixture is smooth. Set aside and keep warm.


5 Heat olive oil in a medium frying pan. Fry chorizo for about 1 minute or until cooked. Drain on paper towels.


6 Add chorizo, pimiento, and cooked noodles to the sauce; stir well. Pour into a 9x13-inch baking dish or 8 individual oven-safe dishes.


7 Melt remaining 2 tablespoons butter and combine with breadcrumbs. Sprinkle on top of the macaroni and cheese. Bake for 20 to 30 minutes, or until the sauce is bubbly and breadcrumbs are golden brown. Serve hot.

An Open Letter to the Girl Who Thinks Her Dreams are Impossible

Before anything, let me ask you a question. Who has been telling you that your dreams are impossible? Is it your parents? Is it your friends? The world? More importantly, is it just yourself? I know it's hard to have all these voices in your head telling you that you can't do it. These voices try to bury you so deep that you don't even realize you're already digging your own grave with them. They tell you that you're not pretty enough. They scream in your head that you’re not smart enough. They repeat over and over again that you’re not fast enough. They whisper quietly but powerfully that you will never be adequate enough to achieve what you dream of. I am telling you now that these are just voices. Voices have no power over you unless you choose to listen to them. No matter who they come from, it is your choice to listen to them and to let it affect you.
