Her wolf soothed the beast, reaching out to comfort while others needed to protect. She was perfect for the highly dominant Gideon even if it hadn’t seemed so at first.

#RomBakeOff Week 2: Tartes au Citron

Welcome Back to the #RomBakeOff extravaganza! Last week we made Mini Victoria Sponges and they turned out fantastic. This week? EVEN BETTER? Seriously. Like I had to hide our bakes from myself or I would eat them ALL. LOL


What did we make? Well we tried our hand at Tares au Citron aka Mini Lemon Tartlets. You can find the recipe HERE. For those of you who are wondering WTH are you doing, Carrie Ann? Let me give you some background. A few of us authors, readers, and bloggers are addicted to the BBC/PBS show The Great British Bake Show. We decided to try our hand at some of their technical challenges for 10 weeks. Since the holidays and conferences such as Coastal Magic get in the day, the weeks aren’t consecutive.


Anyway, we’re on week 2 and I think this week went even better. To make these we had to learn a few skills: pastry making, custard making, and chocolate piping.


Let me tell you, this is a little crazy LOL. Dr. Hubby and I have no experience with any of this. I know a few of the others do, but we’re new to baking. I actually cook more than I bake, so its fun learning! (And finding new gadgets!)


3To make the pastry, we used our food processor to break down the cold butter and flour. Adding the egg yolk and cold water made a decent dough for us. E from Bookpushers told me that having the dough chilled is the best way to work with pastry. So keeping in the refrigerator for at least 20 min helped tremendously.  Once we rolled out the dough we actually had to try out three different rings to figure out which one would fit our pastry cases the best. It wasn’t the one on the recipe, but that’s what math is for LOL.


One thing, after watching the show and noticing everyone but Ruby having trouble getting their tarts out of the cases, we made parchment paper handles. BEST THING EVER. The dough went right over those and make for a perfect way to get the tarts out of the pan.


We had to blind bake these using more parchment paper and baking beans before baking them again without. Luckily the blind bake with the beans worked and we didn’t end up with extra bubbles. While we let the now cooked pastry cool, we worked on the custard.


This was a first for us and we’d heard and seen horror stories of curdled eggs. Thankfully Dee and E told me to use a wire mesh strainer on the eggs once we whisked them. That cleaned up any odd parts of the eggs we wouldn’t want in our tarts. Adding the milk, lemon zest, and lemon juice was easy, though we kept a watch out for curdling. Our back luck sometimes proceeds us. OH! BTW, we bought a cheap plastic juicer and I’m in love. Seriously. $2 in the produce isle and I saved my hands. I don’t know why I didn’t buy one of these years ago LOL.


5So instead of using our large glass measuring container to pour, even though that’s what its used for. We used a baster. My hands shake thanks to MS and I didn’t want to spill the custard everywhere. No soggy bottoms!


Baking actually took longer than the 7 minutes directed. In fact it almost too 5 more minutes so the custard set. We were really afraid we’d over bake. I can just hear Paul Hollywood say something like that. But it wasn’t over baked–nor under baked! Take that Hollywood!


We actually let the tarts cool for a good hour before we melted chocolate and put it in our piping back. It took a bit to figure out how not to freaking burn my hand while twisting the bag LOL, but we got it down. Dr Hubby REALLY wanted to write Citron in cursive on the top like the recipe stated, so we went with that and a couple more types of decoration. Its not the best looking in the world, but for our first try, its damn good. FYI, we chose not to add icing sugar/powdered sugar on top. We might in the future, but we didn’t want that much sugar on our tarts.


As for the taste? FANTASTIC. Perfectly tart and the pastry wasn’t too crisp, nor too soft. I’m so happy with the way they turned out. We might try to add powdered sugar to half of them next time, but neither one of us needed it. We wanted tart, not sweet this time.

So the verdict for week 2: AMAZING. We’re making this again. I know it! We are off from #RomBakeOff for 2 weeks because of holiday traveling, but we’ll be back Jan 2nd with Scones (and perhaps some new jam and cream)!
