Visiting a Great Big Hole in the Ground (Grand Canyon)

I have wanted to visit the Grand Canyon since I was about 15 years old, maybe 16. The pictures and documentaries of the Grand Canyon have always looked beautiful, that’s probably one of the reasons why I wanted to see it. My husband on the other hand has been to the Grand Canyon. He was perhaps 15 when he went. For years we talked about going there and visiting it together. And after 27 years of talking about it, we finally went in March. It was a part of my husband’s birthday week. By the way, In case you’re wondering why I chose such a strange title for today’s blog, it’s because my husband came up with it somewhat sarcastically and it got the highest score for successful blog titles.

Anyway, back to the Grand Canyon. So this great big hole in the ground, the Grand Canyon is seriously way more than a big hole in the ground and well worth visiting. It’s beautiful and it’s absolutely majestic. It was without a doubt worth the wait and I would be willing to go back. What I didn’t realize is the Grand Canyon is actually on Native American Reservations. In all honesty, I had no idea. I guess I should have, but I didn’t. I have to say I’m having trouble coming up with the right words to describe the Grand Canyon aka for my husband a great big hole in the ground.

The size of this canyon is amazing! The different colors of each layer are amazing in and of themselves. There is a beauty to this canyon that can leave a person speechless, I know that’s what it did for me at least. I was in complete awe of this big hole in the ground, this canyon, this wonder that God made.

We did get to walk on the glass walking path (Skywalk). Unfortunately, you are not allowed to take pictures while you are walking and standing on that glass that is literally right over the Grand Canyon. That too was an amazing experience. Standing over the Grand Canyon like that. Looking as far down as you could. I was seriously in awe the entire time. The Grand Canyon is way more than a big hole in the ground as far as I’m concerned. It’s beautiful. It’s amazing. It’s God’s creation. I’m thankful that after 27 years of marriage I finally got to visit this big hole, the Grand Canyon, with my husband and enjoy the majestic beauty that only God can make. This is definitely a place I would highly recommend anyone visit.

Delicious Experience at Bobby Flay’s Amalfi in Vegas

Have you ever watched Chef Bobby Flay on the food network channel? I have. He is an Irish/American-born chef. He has appeared as a guest on Iron Chef and has been on other food network shows. In all honesty, there is something about him that annoys me a little, so when my husband and I saw his billboard in Las Vegas for Amalfi by Bobby Flay, all I could think was Bobby Flay and Irish/American chef cooking Italian? Of course, my husband did his usual internet search on the restaurant and found out Bobby Flay has Buffalo Mozzarella on the menu. That was enough to pique our interest so we made reservations and gave his place a try……

When we were taken to our table we explained to the maitre d’ that we have been to the Amalfi Coast a couple of times so we thought we would give this restaurant a try. The first thing they brought out to us was a fresh-baked rounded loaf of bread with ricotta on the side to spread on the bread. We did just that and it was SO good. I mean that alone was so good it brought back memories of Italy. It made us want to cry and laugh all at the same time. Basically, it was a pizza frita that you can buy as street food in Naples, but OH was it delicious. Sorry I didn’t think to take a picture of it.

After that came the Buffalo Mozzarella. It was cut in half for us to share. That was so delicious that we wanted more. It was a small portion. When I say it was delicious, I mean it was delicious and then some. That too made my husband and I want to cry and laugh at the same time. Oh, the memories it brought back for us from Naples, Amalfi, and getting to visit a Buffalo Mozzarella Farm. The only downside to this dish, and it is a very tiny downside is I wish they had given us a bigger portion. But other than that our time at Amalfi by Bobby Flay was going great.

Our main dishes were both pasta-related. I can’t remember what my husband ordered, but I had the Gnocchi, and, yes that too was delicious. The plate was super hot and I was informed of that. So I did my best to take my time and eat slowly. I even cut my Gnocchi as small as I could to keep it from burning my tongue and trying to eat slowly. This dish was the best Gnocchi I ever had, so well done to Bobby Flay for that!

As for dessert. We had every intention of walking off our supper and getting some gelato somewhere else. We changed our minds and decided to have dessert at Bobby’s Amalfi. Again I can’t remember what my husband had. I had Bobby’s pistachio gelato with cream and some dark chocolate sauce, That was SO, SO good! I mean good doesn’t even do this dessert justice it was delicious! All in all, I have to give Amalfi by Bobby Flay five stars. There is no way around that. The restaurant itself has the Amalfi feel to it. The food is delicious. The atmosphere is great. The memories the food brought back were outstanding. Would I recommend this restaurant which by the way is located in Caesars Palace in Las Vegas, Yes. 100% yes!

If You miss Italy and the Amalfi coast and its food, You need to try this place. Never been to Italy or Amalfi, give Amalfi by Bobby Flay a try anyway, and then take a trip to Italy. Either way, you won’t be sorry. The food is delicious and like I said the atmosphere is great. And depending on where you sit you can watch as the chef’s cook. That in and of itself is cool!

The Tin Whistler’s Irish Castle(some say it’s haunted)

About 6 months ago I was watching a documentary about Irish Castles and Tower Homes. I was intrigued by each castle and tower house, as I always am. There was one particular castle/tower house that piqued my interest. That one was owned by Sean Ryan, a professional tin whistle musician, and is known as Leap Castle. When I found out you can tour his castle that really got my interest. A Tower Castle that is still partly in ruins and being lived in. That I had to see!

3 months ago in November my family and I went to Ireland for Thanksgiving. While we were there my husband surprised me with a tour of the Tin Whistler’s tower house. I believe it cost us 6 euros a person. It was worth it! Getting to walk into a Tower House that has been slowly being worked on so it can be lived in was completely amazing to me. Sean Ryan, The Tin Whistler has done A LOT of work to his castle tower house and there is still plenty more to be done. He was very kind and generous to us. He let us explore his tower house on our own and we were able to take as long as we liked AND he let me take pictures and a video. Looking at this castle you can tell where the tower house part is and where the rest of the castle was extended.

This castle, this tower house has so many antiques! I’ve never seen so many antiques in a tower house like this! Normally the ones I go in are all in ruins and need a lot of tender loving care. This one is lived in on the first floor. There are many more levels in this tower house. One level has a lot of different antiques the others are completely unrestored. I imagine at some point Saun Ryan the Tin Whistler will want to fix it up when he can, but for now, it would be considered a ruin. I loved seeing all the different antiques he has. I was seriously mesmerized. I was taking it all in, touching the walls, looking at the wall carvings, seeing all the nick nacks, I couldn’t believe it. The top-level of this towering castle is in ruins. I probably could have stayed in that part of the tower castle for a long time.

Some people including Sean Ryan would say his castle, Leap Castle, is haunted. Some people say they have seen figures walking around at night. Some say they have heard voices and such. I believe even Sean says he and his wife have seen ghosts and heard voices. I am not the type of person to believe in that stuff, nor did I see, feel or hear anything unusual. I’m not saying these people haven’t. I’m only saying I didn’t.

What I can tell you is I thoroughly enjoyed my time at the Tin Whistler’s tower castle. I loved walking up and down those spiral stairs. By the way, we were given a big flashlight to use to see in the dark going up and down those stairs. I loved seeing all the different antiques he has. I love that top level where there is nothing but a ruin. And the view of the land is beautiful! I would definitely recommend taking a tour of his house. He gives you some history of his tower castle and then he plays you a tune on his tin whistle. What more can you ask for! You can watch my video of Sean Ryan playing his tin whistle below.

It’s Time To Have Fun at the Lake George Winter Carnival!

Hey! It’s February and every weekend in February in Lake George, New York they are having their Winter Carnival. Now, in all honesty, I didn’t know anything about this until last Saturday morning when my husband said to me “hey let’s go to the Lake George Winter Carnival” and I said “the what?” He explained what it was and I figured why not go. I have to tell you last weekend was really cold here in Upstate New York so we needed to bundle up, but it was worth it.

Ok, so this winter carnival takes place each weekend in February. Last weekend was a lot of fun and since you won’t be reading this blog until Monday you will only have 2 more weekends left after reading this to go. I did do a podcast about last weekend’s carnival, you can listen to it here Winter Carnival in Lake George NY. Anyway, last weekend there were cookoffs, helicopter rides, pony rides, outhouse races and so much more! I even faced a fear of mine and I walked on the frozen water of Lake George. It was fun!

This weekend there will be more cookoffs, an ice diving demonstration, an ATV poker run, and much more. And that is just Saturday. On Sunday they have a bunch of things to do as well. There was going to be car racing on the lake, but that has been canceled due to the ice not being safe this weekend. According to the website, there are sleigh rides. We didn’t see any last weekend while we were there otherwise we would have done it. By the way, the sleigh rides and the helicopter rides you do need to pay for. If you go to the Lake George Winter Carnival website you can get all the info you need.

If you live in New York I would recommend visiting Lake George for the weekend to go to this carnival. If you need to drive to it I think it’s worth driving. If you would rather take the Amtrak train if you live somewhere like Brooklyn, I would recommend that as well. It is beautiful in Lake George right now even though it’s cold. The surrounding mountains are what make it look so beautiful. There are also stores you can shop at like Molly Malone’s Irish Gifts. If you’re from a different state you can get a Lake George souvenir. Keep in mind after this blog gets posted you will only have 2 weekends left to go to the winter carnival. You know unless you read this in March or some other month in which case you missed it!

OH, before I forget there is an ice castle that you can go to in Lake George as well and you can walk through it. It does cost. I’m hoping to go to it this weekend I will let you know. Hey, It’s Monday and unfortunately, the castle was closed on Saturday due to the weather being to warm. I guess I have 2 more weekends to try!

Bunratty Castle: Like I’ve Never Seen it Before

Bunratty Castle is without a doubt one of my favorite castles! In all honesty, I should have written this blog back in November, but I wanted to get my video made and put on YouTube first. Well, I finally got that video done so NOW I can write about Bunratty.

I absolutely love Bunratty Castle. I have been to it I think 3 times now over the last 5 or 6 years. Bunratty is not a ruin and it isn’t a lived-in castle either. It’s a castle where you get to go back in time and eat a meal with a bunch of people you don’t know. Sounds like fun, right! Okay, I probably didn’t make that sound like fun, but it really is. When you first enter Bunratty you are asked to enter what I believe is the great hall. That’s where you have some mead which is a very strong alcoholic beverage that I can only take about 4 sips of and I’m done. During this time the workers there that are dressed in medieval costumes explain what you are drinking and what it would have been for in that time period.

When it’s time for dinner we are escorted to the dining hall, which is filled with a bunch of tables and benches for people to sit and eat while they listen to the people dressed in costume sing Celtic songs. it’s all great to watch and listen to. And the food is always good! Most of which I think you eat with your hands. I seriously love this castle, I love the food and I love the entertainment. I always find it sad when it’s over and we have to leave.

In November my family and I went back to Bunratty Castle and this time we bought tickets to see the castle. This was a very cool experience. We go to walk all around the Bunratty by ourselves. We went into all the rooms we were allowed to see. The great hall, the dining hall, the upstairs where there are bedrooms and more rooms with tables. Now, most of those upstairs rooms you can’t go into because they are blocked off, but still, the fact that we got to go up all those windy stairs and we got to see those bedrooms, yeah that was completely awesome. Getting to see Bunratty like I’ve never seen it before was a very cool experience. And one that I would be willing to pay for again. I have no idea what it cost now or when Bunratty is open to tour or eat at their banquets, but you can get the latest information on their website!

I would highly recommend the banquet and the tour to anyone. No matter where you live. If you love castles you will like this. And if you don’t like castles it’s still a cool experience to share with your loved ones.

The Beautiful Kinnitty Castle Hotel

Hello, hello, hello! In today’s blog, I want to share with you my experience at the beautiful Kinnitty Castle Hotel in County Offaly in Ireland. Now first off let me tell you that when my husband told me we were staying in a castle for a couple of nights in Ireland for Thanksgiving week I wasn’t sure what to expect. You know not all castles look the same especially after they’ve been renovated from a castle to a hotel. I have to say I was more than pleasantly surprised when we drove up to Kinnitty Castle Hotel, in fact, my jaw dropped when I saw the castle and I said “No way”!

This castle hotel was gorgeous to look at on the outside. When we opened the door to go in and up the stairs, I was blown away. The entire inside of Kinnitty Castle is gorgeous. The castle was decorated for the holidays which made it even more gorgeous. When I saw the knights armor to one side of the stairs and the tree at the top of the stairs leading to the main floor I couldn’t believe my eyes. Yes, this castle hotel would definitely be another dream come true for me. The way the owners of this castle hotel were able to remodel the castle and still keep that what I like to call medieval feel to it was wonderful. They had me in awe.

Our rooms were in, I guess, what would be considered the attic, but I’m okay with that because those rooms were by themselves gorgeous. I mean if I could have a bedroom like that all the time I’d take it! Seeing the original walls was cool. Sleeping in a bed with a canopy was great. The entire feel of that room was medieval and I absolutely LOVED it! And to top it off all the rooms have names and our room was named Maureen. To most people, that name probably doesn’t have much meaning, but to me it does. That was my moms’ name and she passed away 8 years ago this January 1st, so to see my mom’s name on our room’s door in that castle meant a lot to me.

Call me crazy, but I loved walking through the halls and walking up and down all those stairs going from our room to the main floor of Kinnitty Castle. I loved looking at all the decorations. I loved getting that medieval feel of the castle. And I enjoyed sitting by the fire in one of the castle’s main rooms, with my husband. The fire was warm, the music was soft, the company was sweet and while we sat there together we caught up with what we needed to do on our phones. Yeah, I know so romantic. Well, it may not have been romantic, but the setting was and we were enjoying having some quiet time just the two of us in that room.

I don’t want to forget about the food. We had supper and breakfast in the Kinnitty Castle Hotel and I must say the food was good. They make some tasty fish and chips. One morning for breakfast I had a bowl of oatmeal with milk and honey and the following morning I had a full Irish breakfast. Either way, the food was good. If you are going to visit Ireland and you are looking for a hotel to stay in I would highly recommend the Kinnitty Castle Hotel. This place is absolutely gorgeous. And if you love any medieval stuff as much as I do I think you will love this place. If you don’t care for medieval times I think you will still like this hotel.

The Picturesque Mountains of Connemara, Ireland

The mountains of Connemara, Ireland are as picturesque as you can get. At least, in my opinion, they are. I mean I’ve driven through other mountains. Like the Adirondacks in Upstate, New York. The mountains in Yellowstone. Mountains in Italy and the Swiss Alps. But none of these mountains have sheep grazing on them. Yes, I said sheep. I was noticing this about 2 weeks ago when my family and I were driving through the Connemara mountains.

As my husband drove and I took in the picturesque scenery. We would stop here and there to take some pictures and take in the beauty that was surrounding us. Every once in a while we would see a lake or a stream of water. And then we would stop so we could take pictures of the sheep grazing. I even took one or two videos. It’s kinda funny watching the Irish sheep stop eating so they can look up at us and wonder (that’s even if sheep can wonder) why these people stopped to watch them eat or walk for that matter. And I’ve always found it fascinating that these Irish sheep in Connemara have paint on them. It’s usually pink or blue paint, but on this last visit to Ireland, we noticed some of them were rainbow-colored.

Anyway back to these mountains. They really are beautiful to look at and take pictures of. They aren’t the highest mountains I’ve ever seen, but there is something about the Connemara mountains that made me want to stop for a few minutes and take in their beauty. Maybe it’s the green grass I can still see on them. Maybe it’s because they are that picturesque, or maybe it’s the fact that they are in Ireland and I have found myself in love with the Country my mom’s dad’s family is from. I mean it doesn’t matter if it’s raining, if it’s cold, if there’s sunshine or not there is something about Connemara that makes me want to stop and look and take pictures.

If you have been to these picturesque mountains in Ireland you know what I’m talking about. Or you might disagree with me which is fine too. If you’ve never been to Connemara I would highly suggest you go and see for yourself. See if you think they are beautiful. See if you think they are picturesque. See what you think about the Irish sheep grazing and walking. When and if you do go hopefully you will see what I see. If not that’s ok too. Either way, I hope you enjoy the Connemara region in your own way and, Ireland. Below is my Irish Sheep video.

Staying in The Holiday Cottage

For the last couple of years, one of my favorite Christmas movies has become The Holiday with Jack Black, Cameron Diaz, Jude Law, and Kate Winslet. I love the movie, its’ plot, and especially the cottage that Kate Winslet’s character lives in. When I first saw this movie and the cottage I knew I would love to stay in a cottage-like that one day. And last week while my family and I were staying near Galway, Ireland for about 3 days, that’s exactly what we did! We stayed in a beautiful cottage and while there one night my husband and I actually sat on the couch, cozied up with each other and we watched The Holiday. Yep, we got to watch The Holiday while staying in a beautiful cozy cottage.

First off getting to spend 10 days in Ireland last week was wonderful in and of itself. That’s something we have been wanting to do for 2 years now. Getting to stay in a beautiful cottage for the last couple of days during our stay made it even better. This cottage was renovated over a period of time and from the pictures I saw the people did an amazing job. This stone cottage looks beautiful on the outside and is cozy and quaint on the inside. I love everything about that cottage.

There are two small cozy rooms downstairs with the original stone fireplace standing between them. On the side where the TV and couches are, is the fireplace. In the quiet room is a small “notch” in the chimney stones where they have candles sitting. A brand new kitchen was added to the back of the cottage, which is a very cool-looking kitchen, at least to me it is.

The upstairs of this cottage has 4 bedrooms. A nice-sized bathroom and a master bathroom. All the bedrooms were nice. The beds were so comfortable to sleep in and the down comforter on the master bedroom bed made me want one (if that makes any sense). Overall this cottage in Ireland was absolutely beautiful. I could stare at its outside for hours. I love the cozy feeling I got as soon as I walked in. I loved getting to watch The Holiday with my husband knowing we were sitting in a cottage watching it. AND this place is only a short drive to Galway, so you can stay in a beautiful stone cottage and get some great shopping done in Galway.

Buying Fresh Local Food at the Saratoga Farmers Market

What’s the best way to get fresh, local food? Go to your local Farmers Market, that’s how! For us, that means going to the Saratoga Farmers Market. Over the summer my husband and I talked about going to the Farmers Market on a Saturday to see what it was like. The only problem with that was we kept forgetting about it until one Friday when we were driving through Saratoga and I saw the Farmers Market sign. That was a pretty good reminder! So that Saturday we went and loved it. We loved it so much we’ve been going to it every Saturday morning for the last 4 weeks I think.

The Saratoga Farmers Market has many, many tents with many many fresh products to buy. There are tents with fresh fruit, apple cider, and apples. There are fresh veggies like Brussel sprouts, (which my husband was very happy with his purchase of). There is a tent with honey that always looks interesting. There are tents with hot food that looks and smells so good.

Mrs. London has her own spot under a rather long tent where you can buy delicious croissants and other pastries. Not too far from them, you can buy coffee and lemonade. There is even a place that sells premade chicken pot pies that you can bring home. We haven’t tried them yet, but it always sounds intriguing. Before I forget there is live music from different performers at the market.

Besides for Mrs. London and her fresh croissants, my other two favorite tents are Toga Nola and what I like to refer to as the bread tent. Togo Nola has peanut-free granola that I can eat and it’s so so good. It’s so good that when we finished the small bag of granola we purchased a bigger bag. And then there is the bread tent where you can buy bread of course. But they also have some cookies that I find I love. (Nightwork Bread is the name.)

With the cold weather starting to hit Upstate New York the Farmers Market in Saratoga will no longer be in the tents on Saturdays but have no fear because they will be setting up their tents in the Wilton Mall in Wilton New York which is only about 5-10 minutes away from Saratoga. So you still get all your fresh local products from Saratoga only you can walk around the mall as well.

A New Journey… A New Business…

I started a new journey and a new business! In all honesty, I can’t believe I’m starting a new business, me of all people. That isn’t something I ever thought I would do. On the other hand I also never thought I would be a self-published author, a blogger, and have my own podcast, and yet I’ve done all that too. So why not start my own business? Although technically I am taking over another business. And this new business I’ve decided to call “Bears With Apps”.

We need to step way back in time to explain my new business. And when I say step back in time I mean to when my kids were little. So when they were little my husband had a normal 9-5 computer programming job. He would go to work. He would come home and on nights he liked to play around on his computer and he liked to write apps for the phone or iPad. It was a nice little side job or hobby if you will. His inspiration came from our kids. He would always ask them “what apps would you play with or what apps would like me to make”? They would come up with ideas and my husband would make the apps. It was fun for everyone and it was nice having a little extra money for special things like a date night or the family would go out to eat or something. My husband would even give our kids a buck or two for the sales their ideas got.

Okay, now we need to step forward to our current day situation. So my husband’s current job is very highly focused. He is very focused on the success of his current employer and puts all of his work time into that. Because of this, the “side” apps he had in the app store have not been touched for a number of years. Many of them are still in the app store, just out of date and slowly being taken off by Apple as they are not updated for the latest version of the iPad or iPhone. A couple of months ago due to some of my husband’s health issues, we decided it was in our best interest to revamp his apps and put everything into my name and my company. We agreed this was best for us and our family, just in case. No, he isn’t on his death bed thankfully, but at the same time, It’s always a good idea to prep. No, I can’t write an app to save my life, but I do know app developers, thanks to my husband, who I can contract with to do the actual app writing. I also know what I want, and what changes need to be made to the apps.

My husband and I did a lot of talking about this new business and what it should be called. I reminded him that since it will be under my name and my business that it needed to reflect my personality and attitude that’s when I came up with the name “Bears With Apps”. I love bears and I do like using apps. I came up with my logo by taking different pictures of my teddy bears with my iPad and we found a picture that we both liked. Then we worked with a designer to get a logo made. It’s simple, it’s cute and I think it gets the point across. I also told my husband that as long as this company is under my name I want it to be the best and most satisfying it can be for us and for the users. If there are any problems or comments from people I will do my best to make it right. I want “Bears With Apps” to be fun for everyone of all ages and at the same time, I hope and pray it will become a prosperous business. I have the original apps he made years ago and I am slowly working with some app developers to update them and publish them. I was able to publish the first one (Writing Pad-Kids) recently and it already has users. I do hope you enjoy our apps as we slowly continue to make them.
