Mediterranean Herb-Roasted Chicken recipe
One traditional Mediterranean dish that is known for its abundance of herbs and spices is "Mediterranean Herb-Roasted Chicken". Here's a recipe for you:
Ingredients:
1 whole chicken
4 cloves of garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon black pepper
Juice of 1 lemon
3 tablespoons olive oil
Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a small bowl, combine the minced garlic, chopped rosemary, thyme, oregano, parsley, paprika, cumin, coriander, salt, black pepper, lemon juice, and olive oil. Mix well to form a paste.
3. Place the whole chicken in a roasting pan or baking dish.
4. Rub the herb and spice paste all over the chicken, making sure to get it into all the nooks and crannies.
5. If desired, you can also stuff the chicken cavity with additional herbs, such as sprigs of rosemary or thyme, for extra flavor.
6. Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when measured with a meat thermometer.
7. Once cooked, remove the chicken from the oven and let it rest for about 10 minutes before carving.
8. Serve the Mediterranean herb-roasted chicken with your favorite side dishes, such as roasted vegetables, couscous, or a fresh salad.
