Friday Recipe: 5-Minute Cheesy Chicken Enchilada Grande
Found this under a slideshow of easy Super Bowl recipes. I like easy! And I like cheese, chicken, and enchiladas. It's perfection.

Regency Wednesday: Is our Sun falling silent? (Frost Fair part 2)
BBC had this great article on Is our Sun falling silent? where they discussed the inactivity of the sun. Pretty interesting, in and of itself, but what I found fascinating was the bit on how a previously recorded period of inactivity, the Maunder Minimum, created the original frost fairs.
And I'm thinking, that if we go through this again, sure it'll be cold but think...

Friday Recipe:Gluten-Free Peanut Butter Cookies
This may be the easiest recipe I've ever seen for cookies. A couple steps, one of which is to pre-heat the oven, another is to let the cookies bake. Can't beat it! I don't use white sugar, I use unbleached, but that's just a preference.
