Meal Planning is a Homemaker MUST + Our Dinners of the Week



Meal planning is a homemaker must. Through the years, I've gone for long periods of time when I was on top of meal planning, and long periods of burn-out where I didn't meal plan at all. And I can definitely say that meal planning helps my life go more smoothly, it's better for our food budget, and I end up producing more appealing meals that the whole family actually enjoy.



In today's video I'm sharing the meals we made this past week. I write them down on this magnetic meal planning paper pad and place it on the fridge. I always get the days wrong (as you will see), but it's helpful to have a meal plan written down, as well as a grocery list. To give you an idea on what we spend on groceries, our bill for this week, which included all of the ingredients I needed to make the meals, plus breakfast items, snacks for the kids, and other fresh produce, ended up being $170. This is a great price for a family of six considering that many of the items I bought (milk, eggs, etc.) would last for more than one week as well.

The potato gratin recipe comes from William & Sonoma's Bride and Groom cookbook, the chicken roll-up recipe was one I originally found on Kristin Stepp's channel and she got it from Plain Chicken (links below). The Linguini with Clams (pantry staple) is from All Recipes. I will also leave my versions of the recipes down below as I did alter some of them a bit.

PrintPotato GratinIngredients:1 1/2 tsp butter (room temp.)2 lb russet potatoes2 cloves of garlic1 cup heavy cream1 1/2 cup half and half1 tsp saltblack pepper to tasteInstructions:Preheat the oven to 400 degrees F. Grease a 2 quart baking or gratin dish with the butter. Peel the potatoes and cut into slices around 1/8 inch thick. (You can also use a mandolin.) Crush the garlic and add into the pot along with the potatoes, cream, half and half, salt and pepper. Bring the mixture to a boil and then lower the temperature and cook for around 10 minutes. PrintChicken PiccataIngredients:4 thin boneless, skinless chicken breasts1/2 teaspoon sea salt1/2 teaspoon freshly ground black pepperFlour for dredging4 Tbs unsalted butter2 Tbs. extra virgin olive oil1/2 cup chicken brothjuice from 2 lemons1/4 cup capers2 Tbs parsley, choppedInstructions:Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat it lightly. In a large pan, melt 2 Tbs. butter and 2 Tbs. olive oil. Add the chicken and cook until brown (roughly 3 minutes on each side). Transfer the chicken to a plate. Add the broth, lemon juice, and capers to the same pan. Bring this to a boil, scraping up the brown bits from the bottom of the pan. Return the chicken to the pan and cook until it is fully cooked through (about 5 minutes). Transfer the chicken to a platter. Stir the remaining 2 Tbs. butter into the sauce. The tacos are pretty self-explanatory. I like to make taco meat in large batches and freeze it (ground beef or ground turkey cooked with taco seasoning according to the package directions). Then I freeze it. I have cooked mine in the Instant Pot.

Carl Olof Larsson was a Swedish painter (1853-1919) representative of the Arts and Crafts movement. His many paintings include oils, watercolors, and frescoes. He is principally known for his watercolors of idyllic family life. Meditations on Homemaking: The Comforts of Home



Welcome back to another homemaking week in the life. Actually, this video spans a few weeks as I took a break from filming. I do love this series, but an unfortunate side effect of it, is that I can never do anything at home without wondering if I should film it. I found that mentality to be a bit unhealthy so I took a little break. But here I am again with meditations on homemaking... and I have many.

Saint-Saëns was a brilliant composer who had tragedy mar his personal life. The Swan from Carnival of the Animals is one of the most beautiful pieces I have ever listened to. 
For Chic Assignment number 2, we read the excellent poems of Langston Hughes. 
I love this image of him on the typewriter.

I was very moved by his poetry, as you can see in today's video. My takeaway? Poetry is deeply relevant... Yes, even in this day and age. If we all listen to each other... truly listen... we can have more compassion.
Chic Assignment number 3 was to dress the table beautifully. I love setting the table with tablecloths and placemats. Sometimes I mix the two. How did you dress the table this month?
And Chic Assignment number 4 was to mix up our beauty or health routine. Well, you know I've been experimenting with my makeup... particularly my eyeliner for hooded eyes. In today's video I try a "bat liner" technique, which is a "cat eye" technique for people with hooded eyes. It looked better in person... let's just leave it at that! haha!

The pièce de résistance comes form the Perfect Afternoon Tea recipe book. Behold Sponge Cake with Strawberries and Whipped Cream

PrintSponge Cake with Strawberries and Whipped CreamPrep time: Cook time: Total time: Ingredients:Cake:1/2 cup sugar3/4 cup flour4 eggsFilling and topping:1 pint heavy whipping cream2 Tbs sugar (or to taste)2 cups chopped strawberriesConfectioner's sugar for dustingInstructions:Preheat the oven to 375 degrees F. Beat the eggs and sugar until light and frothy. Sift the flour over this mixture and fold in with a metal spoon until incorporated. Pour into a greased and floured 8 inch round cake pan and bake for 30 minutes, or until the sponge feels springy to the touch. Let the cake cool slightly and then loosen the sides with a knife and release onto a cutting board. Slice the cake through the center to create equal halves. Meanwhile, make the whipping cream by mixing the heavy cream with sugar in a mixing bowl. Mix until stiff peaks form. Spread half of the whipped cream on the first layer of cake. Top with strawberries. Add the top layer of cake and repeat by adding whipping cream and topping with strawberries. Homemaking Week in the Life | Homemakers Should Have Fun Too



Welcome to a new homemaking week in the life. Often homemakers are the most work-laden members of the household. Sometimes it seems that while everyone else is having fun, we are dealing with drudgery and our work never seems to end.



But homemakers should have fun too. We need to remember to take regular breaks from our work in order to keep our spirits up... little pockets throughout our day. That might manifest in a late breakfast in our pajamas one Saturday, or an afternoon interlude in the garden. It might show up as a quiet moment to paint our nails or a cheeky jump in the pool. All of these moments you will see in today's video, along with much, much more.

My homemaker series is created to give you encouragement in your daily tasks. You are not alone... and homemaking is remarkable.

Sisyphus
Housework can be repetitive,
Constantly setting things to right.
It’s at once satisfying and tedious,
This is the homemaker’s plight.

Just as Sisyphus rolled the boulder,
It feels we have done this before.
The tide inevitably rolls back,
Then washes up on the shore.

But unlike Sisyphus, the jobs we do,
Are meaningful at worst.
At best they are the stuff of life,
So let us dive in headfirst.
