I know during this pandemic shut-down I have missed going to the theatre and I look forward to returning one day. This month we will listen to this piece and will discuss the story behind The Phantom of the Opera.  Have you seen The Phantom of the Opera? Let us know your experience down below.

Chic Assignment no. 2 Enjoy the art of Gustav CaillebotteWe are going to study French artist, Gustav Caillebotte this month. You can see his most famous paintings for free online. We will study him more in the mid-month check-in.
And check out the following two books: Gustav Caillebotte: The Painter's Eye

Homeschool Schedule Ideas + FREE Homeschool Planner Printables

According to this article from The Associated Press, interest in homeschooling has "exploded" amid the pandemic.
"As parents nationwide prepare to help their children with more distance learning, a small but quickly growing number are deciding to take matters entirely into their own hands and begin homeschooling."

We are well into our fourth year of homeschooling and I am excited to see so many families embrace this lifestyle and try it out for themselves. Many new homeschool parents often ask for scheduling help. While homeschool schedules are free and less rigid than traditional schedules, they can also be tough to plan for this very reason.

I have created two free printables for you to use in your own homeschool. So whether you are temporarily distance learning or have decided to homeschool full time, I hope these schedules prove useful to you.

Here are the free printables I have created for you. The green printable is for one day and the floral printable is for the week. Feel free to download one or both printables to help you schedule your day.

Here is the Homeschool Schedule for One Day. You can download this one here.

Here the Homeschool Schedule that is formatted for the week. You can download it here.
On a final note: I would like to address a common misconception. The online distance learning that is taking place across the world right now due to the pandemic is not the same as homeschooling. Many parents have expressed frustration with this model of learning. I am not knowledgeable in it and only know first-hand accounts of what my friends have told me about it. True homeschooling is different. You set your own schedule, use your own chosen curriculum and get that one-on-one instruction with your children. Lessons are often concentrated and less time is spent doing desk work (or in the case of distance learning, computer work). True homeschooling is fun and liberating and makes your children excited about learning. If you are a homeschooling parent, I hope you'll leave a comment encouraging others in the journey.
Here are the YouTube channels I recommend in the video:Mr. DeMaio Homeschool Pop Patty Fernandez Artist
I hope you enjoy today's video. I'll see you on Monday for the ten-item wardrobe video!

CONNOISSEUR REVIEWS SEPTEMBER

Welcome to the September edition of Connoisseur Reviews. I am sharing beautiful books, delightful teas, luxurious natural soaps, exquisitely scented laundry detergent, and more in this month's review.

The following three books from the editors of Victoria Magazine are the most beautiful coffee table books and would make excellent gifts. These will be reappearing in my upcoming holiday gift guide.

The Art of Tea from the editors of Victoria Magazine. From the publishers: The ages-old tapestry of taking tea is woven with a prismatic palette of threads, from the golden strands of tradition and the silver cords of friendship to the rainbow ribbons of taste bud–tempting refreshments and the brightly hued filaments of an elegantly set table.

Our Hearts are in France from the editors of Victoria Magazine. From the publishers:  Our Hearts Are in France takes readers on a memorable journey through this majestic country, where centuries-old chateaux rise from the riverbanks and snow-dusted mountains give way to rolling hills and fertile valleys sprinkled with tiny villages, each one more enchanting than the last.
Our Hearts are in England from the editors of Victoria Magazine From the publishers: Our Hearts are in England is an idyllic sojourn through this “green and pleasant land” of scenic byways and quaint villages, glorious gardens, and quintessential cottages. Filled with lush photography and enchanting prose, this exquisitely bound 232-page hardcover book is one to savor as we voyage together in search of England’s very essence.
The Psychology of Money by Morgan Housel "Doing well with money isn’t necessarily about what you know. It’s about how you behave. And behavior is hard to teach, even to really smart people."

Simple Loose Leaf Tea in Simple Vanilla Herbal is my favorite from this line, but honestly they are all lovely. This has revived my love for Rooibos tea, which I used to drink on a regular basis. The Simple Vanilla Herbal is so delightful and feels like a rich, full-bodied black tea even though it is an herbal red tea. They are all delightful. You can find them on the Simple Loose Leaf Tea website, or on Amazon

The Sleep and Glow pillow is an innovative, anti-microbial anti-aging pillow that allows side-sleepers to enjoy sleep without "squishing" the face. There's no other way to put it, really. It's a very comfortable pillow and I enjoy using it and do see the benefit of the grooves in the side of the pillow. Use code JenniferScott10 for $10 off. (My robe is by Plush Necessities

The Bend Soap Co. is a wonderful, small family business located in Bend, Oregon. They create all natural goat milk soap products. My favorite scent of theirs is the "almond delight" line. They have expanded this line in all of their offerings, including their luxury milk bath and sugar scrub. I highly recommend! Code DC10 for 10% off

Hiketron Laundry Detergent makes the most beautifully and complex scented laundry detergents. My favorite scent of their is Mambo Man (trust me on this one). They have just released three new scents that are great too: Paradise, Energize and Tropical Passion code JENNY25 gives 25% off for first-time customers.

The Chic Assignment Check-In | September 2020 | Dorothy Parker and Haydn

Welcome to The Chic Assignment Check-In. Let's learn more about Haydn, Parker and more this month.

⚜️ Chic Assignment no. 1 Enjoy Wynton Marsalis performing Haydn's Trumpet Concerto in Eb with the Boston Pops Orchestra, conducted by John Williams.

Are you enjoying this performance? Perhaps because we are in the age of Covid and gatherings like this are no longer happening, this performance really made me want to get dressed up and go to the symphony. Hopefully one day soon. Wynton Marsalis was so incredible here. His rendition sparkled and brought perfect justice to this excellent piece.

Franz Joseph Haydn (1732-1809)

Today we are going to learn more about the composer, from his biography on Philharmonia Baroque.

⚜️ Chic Assignment no. 2 Enjoy the poetry of Dorothy Parker
I discovered Dorothy Parker as a teenager and have been fascinated with her ever since. I own a very well-read volume of her poetry. She was a troubled figure and her poetry could be dark at times, but her writing was also incredibly brave and witty. I can't wait to dive into her poetry with you this month.

In today's check-in we are going to read her biography as well as some of her best poems.

Check out Dorothy Parker's Collected Poems

You can also learn more about her and read some of her most famous works for free at the Poetry Foundation.

Rondeau Redoublé (and Scarcely Worth the Trouble, at That)
BY DOROTHY PARKER
The same to me are sombre days and gay.
Though joyous dawns the rosy morn, and bright,
Because my dearest love is gone away
Within my heart is melancholy night.

My heart beats low in loneliness, despite
That riotous Summer holds the earth in sway.
In cerements my spirit is bedight;
The same to me are sombre days and gay.

Though breezes in the rippling grasses play,
And waves dash high and far in glorious might,
I thrill no longer to the sparkling day,
Though joyous dawns the rosy morn, and bright.

Ungraceful seems to me the swallow's flight;
As well might Heaven's blue be sullen gray;
My soul discerns no beauty in their sight
Because my dearest love is gone away.

Let roses fling afar their crimson spray,
And virgin daisies splash the fields with white,
Let bloom the poppy hotly as it may,
Within my heart is melancholy night.

And this, oh love, my pitiable plight
Whenever from my circling arms you stray;
This little world of mine has lost its light ...
I hope to God, my dear, that you can say
The same to me.

⚜️ Chic Assignment no. 3 Stock your pantry for the upcoming winter
I recently shared a glimpse into our prepper pantry (many of you liked victory pantry). I encourage you all to stock up responsibly as we head into the next season. Who knows what is in store? Being chic is being prepared. You can check out my Amazon prepper pantry store here.

⚜️ Chic Assignment no. 4 Transition your beauty routine for the change in season
I have been making subtle changes to my fall beauty routine. I've been enjoying the darker plum shades from London Town (JenniferS for 25% off at Londontown). I've also been changing my makeup colors to fit the more muted and earthy tones of fall. How have you changed your beauty or health routine?

Dinners of the Week + Meal Plan and Prepper Pantry Tips

Welcome to a new week of dinners plus some tips on how to create a prepper pantry.

It's a great idea to stock up on bulk items when you can... things like rice, beans, canned goods, and other staples that could help your family if the world is to face any food shortages. In today's video I talk you through our pantry stocking resources. I buy our bulk foods from Costco, Amazon, and restaurant supply stores.

Many people don't realize you can get many bulk foods delivered to your home on Amazon. I'm leaving a link to my Amazon store here which has an entire section devoted to the prepper pantry. Also mentioned in the prepper pantry section is my discovery of Fire Cider.

Also, the Apple Cider Vinegar Gummies are on sale right now for 10% off with code dailyconnoisseur

Now, let's have a look at the recipes.

Pastrami Sandwiches
Ben and I have been craving The Hat, which is a Southern California restaurant known for their pastrami sandwiches and chili cheese fries (I know... I know...)
We decided to recreate the dish at home. I toasted some hoagie rolls in the oven, then slathered them with yellow mustard. On the stove, I heated up the pastrami (purchased from the grocery store). I placed the pastrami on the rolls and added a layer of sliced pickles.

Chili Cheese Fries I sliced 3 large potatoes in my French fry slicer and soaked them in water for 15 minutes (this step is essential). Then I drain the water, pat the fries dry, and add 2 Tbs oil, 1 Tbs paprika, 1 Tbs garlic powder, and salt and pepper (whatever amount you feel comfortable with). Then I place them a pre-heated air fryer on the French fry setting. (All air fryers are different, so follow the instructions on yours... this is the Air Fryer I have.)

I topped the French fries with cooked chili (previously made), shredded cheddar cheese, and diced onion. We serve pepperoncinis on the side and honestly... this was better than The Hat! :)

Oven-Cooked BBQ Ribs
We normally grill our ribs on the BBQ outside, but today I tried a new technique I learned from Mandy in the Making's channel (Tell Mandy I said, "hello"). After placing a dry rub on the ribs, I tented them on a cookie sheet with aluminum foil and placed them in the oven at 300 degrees F (If I were to change it, I would cook them at 275F as Mandy suggested). We let these cook for 3 hours. Then I pulled them out and brushed BBQ sauce on top and finished them off uncovered, under the broiler for 15 minutes (Depending on. your broiler, broil for 5 to 15 minutes... check every 5 minutes to make sure you don't burn the ribs).

Creamed Spinach I don't normally measure my ingredients when I cook so this time, I made too much cream sauce. Always remember that spinach cooks down to nearly nothing, so plan accordingly. I will leave the proper measurements here for your reference. Sauté 20 oz of spinach in a lightly oiled pan until fully cooked. Combine 4oz cream cheese, 1/4 cup heavy cream, 1/4 cup shredded mozzarella cheese, and 1/8 cup shredded parmesan in the same pan the spinach was cooked in. Cook on low heat until the sauce is melted nicely. Once the sauce is warm and mixed together completely, add the cooked spinach and season with salt and pepper.

Taco Salad
The kids could probably eat tacos 4x a week. I do tend to burn out on them. So while I made beef tacos for the rest of the family, I made a taco salad for myself. I used a freezer meal for this one. I like to prepare large batches of ground beef taco filling and freeze it in separate portions. I cooked this freezer meal in a slow cooker on low for four hours and it was ready to use.

I placed tortilla chips on the bottom of the plate, topped with lettuce, the taco filling, corn, sliced olives, sliced tomatoes, shredded cheddar cheese, sliced red onions, and crushed tortilla chips on top. I squeezed the salad with lime juice and topped with Ranch dressing. Delish!

Instant Pot Split Pea Soup
When I was a child, the drive to my Grandmother's house seems to take forever. Our trip was always marked as half finished when we passed a restaurant called, Anderson's Pea Soup. Every time we drove past that restaurant, I craved a bowl of pea soup! I re-created it here in the Instant Pot.

PrintInstant Pot Split Pea SoupAuthor: Jennifer L. ScottIngredients:2 Tbs butter1 Tbs minced garlic1 medium chopped onion1 bay leaf (optional)1/2 cup diced ham (or one hambone) 3 stalks of celery, chopped3 medium carrots, chopped4  cups chicken stock2 cups dry split peas, rinsedblack pepper to tasteInstructions:Set your Instant Pot to sauté and sauté the butter and garlic for one minute. Add the chopped onion and cook for 4 - 5 minutes. Add the sliced ham and cook for another couple of minutes. Turn off the sauté function. Add the chicken broth, celery, carrots, split peas and bay leaf. Season with pepper. Place the Instant pot on sealing and cook on high pressure for 20 minutes. Do a quick release and stir the soup until your split peas are in the desired consistency (the more you stir, the creamier the soup gets). Remove the bay leaf and ham bone (if used) and enjoy. Created using The Recipes Generator.ccm-wrapper, .ccm-wrapper *{box-sizing: border-box;}.ccm-wrapper h3{margin: 0;}.ccm-show{display: block !important;}.ccm-wrapper{color:#000;max-width: 620px;position: relative;padding: 20px;margin: 20px auto;background: #f2f2f2;border: 6px double #6672E5;}.ccm-name{font-size: 20px!important;font-weight: 700!important;letter-spacing: 0px !important;}.ccm-info{position: relative;font-size: 13px;text-transform: capitalize;margin-bottom: 20px;}.ccm-author,.ccm-yield{display: inline-block}.ccm-yield{margin-right: 30px}.ccm-wrapper img{margin:0!important;padding:0!important;}#ccm-printbutton{margin: 0;color: #fff;padding: 5px;font-size: 14px;border-radius: 3px;cursor: pointer;width: 80px;height: 35px;background: #555;text-decoration: none;display: inline-flex;align-items: center;justify-content: center;}.ccm-print-options{display: none;white-space: nowrap;position: absolute;top: 32px;right: 0;z-index: 2;background: #fff;border: 1px solid #ccc}.ccm-print-options button{display: block;background: 0 0;border: 0;cursor: pointer;padding: 10px;width: 100%;text-align: left;}.ccm-print-options button:hover{background: #555;color: #fff}.ccm-head{color: #000;font-size: 20px !important;font-weight: 700 !important;margin: 30px 0 0 !important;text-transform: uppercase !important}.ccm-section-title{font-weight: 700;font-size: 16px;}.ccm-section{padding-left: 20px;line-height: 1.7;margin: 10px 0 30px}.ccm-section ol,.ccm-section ul{margin: 0 !important;padding: 0 0 0 30px !important;}.ccm-section li{margin: 0 0 6px !important;padding: 0 !important;}.ccm-section-steps li{line-height: 1.6;margin-bottom: 10px !important}.ccm-posturl{padding-top: 10px;border-top: 1px solid #ccc}.ccm-posturl a{font-size: 13px;}.ccm-notes{font-size: 15px;margin: 10px 0;padding-left: 30px;font-family: inherit;line-height: 1.7;white-space: pre-line}.ccm-link{color: #4193f0;}.ccm-copyright{font-size: 13px;font-style: italic;line-height: 1.6;margin-top: 15px;padding-top: 15px;border-top: 1px solid #ccc;}.ccm-credit{font-size: 12px;padding: 10px;text-align: center;background: #fff;margin: 15px -20px -20px;border-bottom-left-radius: 10px;border-bottom-right-radius: 10px;border-top: 1px solid rgba(0, 0, 0, 0.15);}.ccm-credit a{color: #00f;text-decoration: none}.ccm-keywords,.ccm-categories,.ccm-cuisine,.ccm-video,.ccm-section > br,.ccm-time br{display: none}[data-ccmcardnum='1'] .ccm-wrapper{border:0;padding:0 20px!important;border-radius:10px;box-shadow:0 0 10px rgba(0,0,0,.25)}[data-ccmcardnum='1'] .ccm-image{text-align:center;height:300px;margin:0 -20px!important;overflow:hidden;border-bottom:3px solid #6672E5;}[data-ccmcardnum='1'] .ccm-image img{width:100%;height:100%;min-height:100%;-o-object-fit:cover;object-fit:cover;-o-object-position:50% 50%;object-position:50% 50%;border-top-left-radius:10px;border-top-right-radius:10px;}[data-ccmcardnum='1'] .ccm-btns-wrapper{position:relative;margin-bottom:40px;margin-top:-22px;text-align:center;}[data-ccmcardnum='1'] #ccm-printbutton{float:none;border-radius:25px;width:120px;height:40px;font-weight:700;text-transform:uppercase;background:#6672E5}[data-ccmcardnum='1'] .ccm-print-options{right:calc(50% - 53px)}[data-ccmcardnum='1'] .ccm-name{text-align:center!important;margin-bottom:20px!important;text-transform:capitalize}[data-ccmcardnum='1'] .ccm-info{display:-webkit-box;display:-ms-flexbox;display:flex;-webkit-box-pack:justify;-ms-flex-pack:justify;justify-content:center}[data-ccmcardnum='1'] .ccm-time{border-right:0;border-left:0;margin:0 -20px;border-top:1px dashed #000;border-bottom:1px dashed #000}[data-ccmcardnum='1'] .ccm-summary{margin-bottom:25px}[data-ccmcardnum='1'] .ccm-summary:after{content:'';display:block;width:50px;height:2px;background:#000;margin:auto;margin-top:10px}

Shrimp Scampi Linguini
This is a very quick and easy pasta dish that the whole family loves. There are many variations to this, I am leaving a recipe card for today's variation down below.

PrintShrimp Scampi LinguiniAuthor: Jennifer L. ScottIngredients:1/3 cup extra virgin olive oil1/3 cup butter1 Tbs minced garlicJuice from one lemonhandful of chopped Italian parsley1 lb cooked shrimp1 package of dry linguiniFreshly grated parmesan cheeseInstructions:Cook the linguini according to the package directions.Melt the oil and butter over medium heat in a sauce pan. Add the diced garlic and sauté for one minute. Squeeze in the fresh lemon juice. Add half of the chopped parsley. Stir. Add the cooked shrimp (or you can cook the shrimp in the pan now, they will just need to cook longer until cooked through). Add the cooked linguini noodles and incorporate into the sauce. Top with extra chopped parsley and cracked black pepper and parmesan cheese. Homemaking Week in the Life | THE ART OF TEA

Welcome to a new homemaking week in the life. Today we do some gardening, celebrate another birthday, and explore the art of tea.

The Art of Tea... what does it mean to you? Certainly the art lies in the choice of tea and the treats to accompany the beverage of repose. Although for me, the art of tea is more about taking the time to enjoy the meditative qualities of that glorious afternoon ritual.

I'm reading this beautiful hardcover book The Art of Tea by Victoria Magazine in today's video. I have been feasting on this beautiful book, full of gorgeous images and delectable recipes. I adore it. What a treat.

Speaking of treats... I'm making Shelby from The Queen's Cabinet's Caramel Pecan Turtles... a very easy treat to make. You can visit The Queen's Cabinet here.

The beautiful Wedgwood teapot and tea set was a housewarming gift from my mother and father in-law. I was so delighted to receive it!

The Reward
I have some rather mundane tasks,
To complete before my repose:
Dinner to cook, and tidying to do,
And then there’s laundering the clothes,

I can get through elemental chores,
Knowing well what lies before me.
For when all my tasks are checked off my list,
It’s time for a cup of tea.

- Jennifer L. Scott

I was getting tired of making the same birthday cake over and over again. (In a family of 6, we can get tired of birthday cakes easily. Ha!) So I tried out a Texas Sheet Cake this time for our son's 2nd birthday. I can't tell you how delicious this cake is. I replaced the walnuts with pecans and found the cake to be absolutely delectable. The original recipe is from All Recipes. I am also leaving a printable recipe card down below with my adjustments for your convenience.

PrintTexas Sheet Cake with PecansPrep time: 15 MinCook time: 20 MinTotal time: 35 MinIngredients:Cake2 cups all-purpose flour2 cups white sugar1 tsp baking soda1/2 tsp salt1/2 cup sour cream2 eggs1 cup butter1 cup water5 Tbs unsweetened cocoa powderFrosting6 Tbs milk5 Tbs unsweetened cocoa powder4 cups confectioner's sugar1/2 cup butter1 tsp vanilla extract1 cup chopped pecansInstructions:Preheat oven to 350 degrees F.  Grease and flour a 10 x 15 cookie sheet or jelly roll pan.Combine the flour, sugar, baking soda and salt. Beat in the sour cream and eggs. Set aside. Melt the butter on low in a saucepan, add the water and 5 tablespoons cocoa. Bring mixture to a boil then remove from heat. Allow to cool slightly, then stir the chocolate mixture into the flour mixture until incorporated.Pour batter into the greased and floured pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. For the frosting: In a large saucepan, combine the milk, 5 tablespoons cocoa and 1/2 cup butter. Bring to a boil, then remove from heat. Stir in the confectioners' sugar and vanilla, then fold in the pecans, mixing until blended. Spread frosting over warm cake. The House Dress Renaissance, Venice Film Festival Best Dressed | 3 Articles on Dress

NPR documents the house dress renaissance, the Girl Scouts upgrade their uniforms for the first time in twenty years, and Venice Film festival's best dressed red carpet looks. Welcome to a new edition of 3 Articles on Dress.

Let's have a look at the articles:

Żaneta Mieszczak/Malgosia Archer

⚜️ Many people sent me this article from NPR, which states that the
Many women are rediscovering the house dress this year and are choosing house dresses over other choices of loungewear. I would love to know... do you own a house dress? I have converted one of my dresses from my fall wardrobe last year into a "gardening dress". I'll share more about that with you in a future ten-item wardrobe video.

Mentioned in the article: Dwell and Slumber and Gosh Yaga

⚜️ The Girl Scouts upgrade their uniforms for the first time in twenty years. First of all, isn't it weird that the 90s were over twenty years ago? I still can't wrap my mind around that. I like the new Girl Scout uniforms and think they are very fashion forward. I bet the Scouts are happy about them too. What do you think?

Cate Blanchett

⚜️ And finally, Vogue shares the best dressed looks at the Venice Film Festival. With the lack of events due to Covid, many eyes have been on the recent fashion at the Venice film festival. I enjoyed many of the looks I saw, with my favorites being Cate Blanchett and Lotte Verbeek. Who were your best dressed looks?

*Please note: at the time of filming this video, the Venice Film Festival was still taking place so the article contains even more looks that were not discussed in this chat.

I hope you enjoy today's video.

Best Dinners Ever | Early September Meals | Meal Planning is a Homemaker Must

This was the best week of meals ever. It was just one of those magical weeks where each meal was delicious and hit the spot.

Join me as I make Houston's French Dip au jus, a delicious vegetable tart, Moroccan fish with fruit salsa, and Marry Me Chicken. I believe meal planning is a homemaking MUST. I can confidently say that meal planning makes my life easier, keeps us within our budget, and produces better meals for our family. This is the meal planning notebook I use.

I hope you enjoy today's video.

My version of Houston's French Dip Au Jus

Ben and I love dining at Houston's restaurant. Whenever we go I always get the French Dip Au Jus. We haven't been since the lockdown and I have been craving this dish.

Slow Cooker French Dip Au Jus
2-3 lb chuck roast
Medium onion
1 10z can beef consommé
1 cup beef broth
1 Tbs soy sauce
2 Tbs Worcestershire sauce
French sandwich rolls (enough to feed your family)
smoked provolone cheese
oil
salt and pepper

I take a chuck roast (usually they are around 2 to 3 lbs), season it with salt and pepper, and sear it in my cast iron skillet with oil... just a few minutes on each side. Then place it in the slow cooker with one sliced onion, one tablespoon of soy sauce and two tablespoons Worcestershire sauce. Pour in one can of beef consommé and one cup of beef broth. Cook in the slow cooker on low for 8 hours.

When the roast is cooked, heat the French sandwich rolls in the oven until they are toasted. I like to spread butter on the inside of the rolls. Place the shredded roast and onions on the rolls. Place smoked provolone cheese on top of the meat and return the sandwich to the oven for another minute until the cheese is melted. Serve with a nice bowl of the au jus (the sauce from the slow cooker). I like to use these au jus bowls. We also serve with French fries (see the recipe for that below).

Air-Fryer French Fries

2 - 3 medium to large potatoes
2 Tbs oil
1 Tbs paprika
1 Tbs garlic powder
salt and pepper

Use a French Fry chopper to chop your potatoes. Allow them to soak in water for 15 minutes. Then drain the water and pat the potatoes dry. Mix the oil, paprika, garlic powder, salt and pepper with your potatoes.

Please follow the instructions on your Air Fryer for cooking French Fries. Every one is different. For my Cosori model, here is what I did. I pre-heat the Air Fryer to 280 degrees F for 5 minutes. Then I place the fries in the basket and press the French Fry icon. The machine lets you know when to shake the fries half way through cooking. These fries are DELICIOUS. I like them with ketchup, but ranch dip would be good too.

Vegetarian Vegetable Tart
1 9- inch pie crust
3 to 4 cups of sautéed vegetables
1 Tbs minced garlic
(I use mushrooms and broccoli, but you can use any combination of vegetables you like)
One sliced tomato
4 eggs
1 1/2 cups whole milk
2 teaspoons dried sage
3/4 cup crumbled goat cheese
salt and pepper to taste

Preheat the oven to 400 degrees F. Sauté your vegetables and garlic in olive oil until cooked through. (I steamed my broccoli.) Place a prepared pie crust in the bottom of a deep dish pie pan and add the cooked vegetables. Whisk together the eggs, milk, dried sage, salt and pepper. Pour over the vegetables. Crumble the goat cheese on top. Brush the pie crust with egg wash. Place in the oven and cook for 40 to 50 minutes or until cooked through. I like to use a pie crust shield to protect the crust from burning and will keep this on the crust the second half of cooking (or the first half). Serve with a side salad.

Moroccan Tilapia with Fruit Salsa
This meal is inspired by Robin Miller's recipe in Quick Fix Meals. I have altered the recipe somewhat and will leave my version here as well.

Coconut oil for frying
4- 6 6oz tilapia fillets
1 Tbs ground cumin
1 Tbs ground coriander
Fruit for the salsa of your choice (I use mango, white peach and fig)
1/2 cup raisins
1/2 lemon squeezed
a small handful of chopped cilantro

Heat the coconut oil in your skillet (I use my cast iron skillet) over medium heat. Season both sides of the fish with salt and pepper and rub in the spices. Fry about 3 to 5 minutes per side or until cooked through. Chop your fruit and place in a bowl with the raisins. Squeeze the lemon juice over the salsa (I like my new lemon squeezer), and add the chopped cilantro. Serve the fish with the fruit salsa on top. I like this with brown rice, steamed broccoli, and chopped tomato.

Marry Me Chicken
This is a very popular dish that I have seen several times on YouTube and Pinterest. I am linking the recipe I used here from Modern Honey. I will also write it out here for your reference with the adaptations I made.

1 Tablespoon Olive Oil
1 1/2 lb chicken breast tenders (or 3 to 4 large chicken breasts)
Salt
Pepper
2 cloves Garlic (minced)
1 tsp Thyme
1/2 tsp Red Pepper Flakes
3/4 cup Chicken Broth
1/2 cup Heavy Cream
1/2 cup Sundried Tomatoes (chopped)
1/4 - 1/2 cup Freshly Grated Parmesan Cheese
Italian Herbs

Preheat oven to 375 degrees. In a large oven-safe skillet (I use my cast iron skillet) heat oil over medium-high heat. Season chicken with salt and pepper and sear until golden, about 4-5 minutes per side. Transfer chicken to a plate.
Return skillet to medium heat. Add garlic and cook for 1 minute. Stir in thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often. Stir in sundried tomatoes and parmesan cheese.
Return chicken to skillet and spoon sauce all over the chicken breasts. Bake until chicken is cooked through, about 15 minutes. Garnish with Italian herbs and grated parmesan cheese, if desired.
