Married with Kids!!!

photo-3Lots of blessings here. Brad and I have five kids aged 7-14! We had a fabulous family wedding in Virginia Beach back in June. These pictures were taken during the rehearsal dinner. More pictures to come from Echard Wheeler Photography.

Great sandwich shop in Midlothian for organic, locally grown, fresh quick meals. Nice space to write and enjoy a cup of coffee.

Chicken Pot Pie from Lancaster County Target

Ingredients


3-4 lbs chicken cooked and chopped


1 1/2 cups of peas, steamed (or 1 can drained)


1 1/2 cups of carrots, steamed (or 1 can drained)


1 or 2 sliced potatoes


1 onion sliced and slightly browned


salt and pepper to taste


1 cup of broth


1 can of mushrooms, drained (or fresh slightly sauted)


1 can of cream of mushroom soup


2 T. corn starch


1/2 cup butter


1 cup flour


1 cup buttermilk


 


I use two frozen pie crust.  After they thaw, I heat one for about 10 minutes. Then layer all the ingredients, chicken, peas, carrots, potatoes, and onion. Salt and pepper each layer. Heat broth, mushrooms, soup and cornstarch in a a pan and pour over layers. Mix butter, flour, and buttermilk. Heat and pour over pie. Then slice the other thawed pie crust into strips and weave over the top. Bake at 425 for 30 minutes or longer. It makes a lot ;-)

Peanut Butter and Banana Sandwich

Ingredients:



Wholegrain/Multigrain Bread
Banana
Sultana Raisins
Crunchy Peanut Butter
Local Unpasteurized Honey

Start with fresh multigrain bread, and slather one slice with crunchy peanut butter. Peel a well-ripened banana and cut it in half. Now, slice each half so you have 4 equal banana quarters to lay side-by-each on your peanut-buttered bread slice. Sprinkle some raisins on top of the bananas and then drizzle honey over the raisins. Put the lid on it and enjoy!
