missi and meredith do vegan texas-style


As you've probably noticed in her previous guest blogs my friend Missi Pyle's little sister Meredith has been accompanying her ON THIS vegan journey. In the fifth edition of their kind chronicles Meredith steps in for Missi and shares how she satisfied a meaty Tex Mex craving as well as some rules she's learned along the way:

Hello best friends. This is Meredith in for Missi.  Missi got a job woo hoo filming "The Mentalist" this week…which has made her incredibly helpful and handy in the kitchen.

Uhhh….not.  And since Missi constantly reminds me that her brain is old and how I am young and how I make her feel one-hundred and seven I thought I'd allow her to use what little brain power the old fart has left to memorize her lines rather than help me in the kitchen.  Sorry Miss but the getting old comments are getting….well…OLD.

Glad I got that off my chest. So this week…I took over the blog the kitchen and the menu for this week's Vegan adventures in Lost Angeles.

Side Note: Since I'm already here and all…I thought it might be nice for you to hear my side of the story. I drove from Texas to Los Angeles with father Frank who still doesn't know where he is to come and live with my sister. Upon arriving Missi announced that she was going to try Veganism during our stint in Alicia's house which BTDubs is amazeballs! Being that I had just spent two days in the car with Frank learning all about Southwest vegetation and overdrive buttons my defenses were down and I agreed to join her in her Vegan quest. I did this without remembering that my last meal was a truck stop Subway and I had yet to get my California ritual: Animal Style Double Double. That I hadn't tasted in years. Well…crap.

Side Side Note:  Okay I'm from Texas.  I talk like it.  And I eat like it.  I come from cattle ranchers on one side of the family and dairy farmers on the other. So to say it hasn't been easy is an understatement.

Now I know I haven't been a non-meat eater for long…but I have learned a few very important lessons this month.

Number 1. NOT ALL MEAT SUBSTITUES ARE EQUAL.

Number 2. Tofurkey is: NO way I'm eating it-furkey and

Number 3. If you see "Chicken-less" just turn and walk away.

So what is a meat lover like me to do??  If at first you don't succeed…fry fry a hen. Just kidding.  Kinda.  Or you can take a tip from Miss Silverstone and go straight to the "meat" a.k.a. "proteins" section of The Kind Diet for a solution. And boy did I find it. Tex-Mex style. Not only did I find a meat that tasted good but it actually tasted like MEAT!  Woo.  Party.  It's the Chorizo found in Alicia's Chorizo Tacos found on pg. 157 from The Kind Diet by Alicia Silverstone.

Meat AND Mexican?? Done. Yum.

First I started by prepping all the Taco fixin's. That's Texan for fixings.

Side Side Side Note last one honest:  Before starting this recipe I searched endlessly for Tofutti Sour Cream and according to Carlos at Trader Jose's it is discontinued!! How dare they!  I've basically been LIVING on the Tofutti Cutie Faux-Ice cream sandwiches.  So I had to improvise and replace Guacamole for sour cream to provide the creamy texture and appropriately give it some 'ole Tex-Mex flare!

I started with making the guacamole. As you can imagine guacamole in Texas is a religion everyone has their own recipe which they swear by.  And I'm no different.  I use avocado red onion lime and cilantro. Mash up the avocado dice the onion add the cilantro and lime a heapin' of salt and there you have it. Tex-mex guacamole. And here's a fun serving tip take the avocado shells you just scraped clean and put your mixed guacamole inside. Fiesta on a plate. Olé.


This blog also features the very funny very helpful and young-brained Megan Park. She also has a job and had to work the next day but she learned her lines easily AND could also help in the kitchen. Youth is Amazing.

After you make the guacamole assemble more chopped onions shredded lettuce chopped tomato cilantro and Vegan cheddar cheese and any other fixin's you may desire.

 And now for the meat.  Soy chorizo is the way to go.  It comes in a tubey like concoction which is really gross and has to be squeezed into the frying pan in a bit of oil.  

Cook the chorizo for about 5 minutes and bring it to the table.  I will say the great thing about faux-meat is that it doesn't require serious cooking.  Just browning or warming. Hooray.

The final result provided a beautiful display of colors and choices.  While Megan and I made Tacos Missi opted for a Tostada.

So if you're a Texan and you find yourself hankerin' for some meat remember that a great Tex-Mex meal can quickly and easily be made Vegan by careful faux-meat selection without losing the taste and memories that remind you of home.

what to feed my dogs?

Kind Lifer Kristen Magno sent me a message a while ago asking me if my dogs are vegan too and if they are what I feed them. Well I feed my three dogs Sweety Lacy and Butterfly we also call Butterfly "The Pig" a 100 plant-based diet. They are all between 13 and 15 years old and weigh around 70 lbs they are big guys!. I feed them Dr. Harvey's brand dog food their Canine Health line and always give them all of our leftovers so there is no waste of food or money. Dr. Harvey's is a mix of oats grains dried veggies and seaweed. It's a little bit of a process to make the food for them but it's sooooo worth it. And if you set a timer and walk away it's not difficult at all.


You cook it on your stovetop. You combine the Dr. Harvey's with a protein source we use lentils mung beans split peas kidney beans pinto beans tofu tempeh etc. and oil. It's super important to rotate the type of beans so your dogs get different sources of vitamins and minerals. When we use beans we soak them overnight in water with a piece of kombu use a 1-inch by 1-inch square of kombu per cup of beans and use the soaking water to water plants in the morning. Do not cook the beans in the same water that they soaked in. This will make for gassy dogs. Cook the beans along with the kombu. If you forget to soak the beans with the kombu add it when you start cooking. This helps the beans cook more quickly and helps dogs and you! with gas issues.

We cook the beans until they are soft and mash them with a potato masher. If we don't mash them they come out of the dogs whole in their poo. After mashing we add the Dr. Harvey's mix along with any leftovers we have when that is done we plate up the food wait for it to cool and add oil. We make a big batch once a day and that's enough for 2 meals for all 3 dogs. If you want you can make a big batch and keep it in the fridge for a couple days at a time. We just do it daily since we have 3 big dogs and have to make a big pot of food for them.


We also add the supplements L-Carnatine and Taurine. These are 2 amino acids that are essential to some dogs. They might be added to some commercial dog foods but in this case with Dr. Harvey's they are not. When dogs are deficient in these nutrients it can cause diomyopathy a serious illness where the heart becomes large and flabby and can no longer function properly. This usually happens to middle-aged dogs that have an L-Carnatine or Taurine deficiency due to their breed size genetics or diet. You can buy these supplements at your local health food store places like Whole Foods or online. Look for supplements with veg-friendly capsules and not the ones that have gelatin in them! And make sure you always check with your dog's vet before starting them on any sort of supplement regimen.


Since our dogs have been eating this way they have stopped getting fleas hot spots and their coats look so nice. They are all super healthy with perfect blood work. People always think they are younger than they really are. Feed your animals grains beans and veggies like you would eat and you will absolutely see a difference in their health. Sometimes when we are in between Dr. Harvey's orders I'll just give them rice beans and whatever leftover veggies we have around and they love it!


And I have to say their poo is amazing. I'm so proud of them! I see other dogs' poo and it just doesn't compare. It's super healthy easy to pick-up and they don't struggle to get it out.


You can order Dr. Harvey's dog food from their website or you can ask your local store to carry it. Sometimes if we are in a hurry we give the dogs Evolution brand Vegan Kibble. You can get it from www.vegancats.com or again ask your local stores to carry it or order it for you. I try to always give them Dr. Harvey's though because it just feels more pure to me and I'd rather them not have dry food as I feel like it dries them out. But this dry food is great when the Dr. Harvey's can't happen. Natural Balance makes a dry vegetarian dog food too.


Remember that conventional pet food is pretty much junk food for your animals. It's full of animal byproducts intestines bones brains etc. preservatives chemicals and fillers. Personally I can't justify killing one animal to save or feed another. If you feed meat to your dogs that's what we are doing...deciding that one life is more worthy than the other. They don't need it and they do better without it as long as you feed them a healthy balanced food source like Dr. Harvey's.

A vegan diet works really well because our dogs don't live in the wild. They take a walk every day maybe follow their humans around a little and not a lot more so a plant-based diet is just fine for most dogs' energy requirements.

I wanted to say thanks for writing a very user friendly introduction to a plant-based diet. I've been veg off and on since college I'm 39 now and have to say that I do best on a mostly plant-based diet. I am so grateful for picking up your book because there are so many dog-eared pages. Namely the Lentil Stew and Peanut Butter Cups!!! My coworkers laugh at me for bringing in Lentil Stew nearly every day it's that good.


Last Summer 2011 I experienced flare-ups with migraine headaches suffered in childhood and waned in 20s and mostly 30s. From scares of MS to who-knows-what I decided to really evaluate my diet once again. I've never really been much of a meat eater save for a good NC BBQ I live in Boston and that's hard to come by but I've always loved cheese. After some data trending I discovered that cheese is a migraine trigger for me. So I've cut that out and I am doing so much better! 


Like I mentioned cheese was a huge stumbling block for me in considering a 100 plant-based diet. But now that I know that it is a problem for me I am more ready to transition fully: IT'S NOT THAT BAD. : 


A life without cheese is still very much worth living. Besides peanut butter is so much better!! 


Anyway just thought I would let you know that you're efforts are not unheard and I really love all the recipes I've tried in your book. They're truly amazing and delicious. My book is nearly destroyed!

This year I'm updating my kind Valentine's Day gift suggestions with some new ideas for creating a romantic evening eco-style!

Make A Card

One of the best gifts you can give is a handmade card  with a sweet message or get your deepest feelings out on there written by you not Hallmark – who doesn't love that? Use photos or magazine clippings to make a unique card or collage. Or what I do is cut off the front of cards I  get and reuse them – it's the easiest quickest most eco thing to do.
 
You can cut out cards backings from old chipboard cereal boxes and other food packaging and glue pictures on them or draw on them if you're artsy. If you're using glue you can WeldBond has a great vegan one that you can get here.

cheesy oozy guacamole bean dip

I first had this at a party about 10 years ago. That recipe was my inspiration for this healthier version.


We like to make this for football games. My husband Christopher is a huge Cleveland Browns fan. They never really win but he always roots for them. He dresses our pit bull in a Browns shirt during the games! Super cute.


Reminder: this recipe doesn't belong in the superhero family but it's loads better than what you usually find in party dips. When I shared this on The View the ladies loved it. Bottom line - this dip is clean dirty fun....


Serves 8

Ingredients



1 16-ounce can refried beans
3 large avocados
3 tablespoons fresh lime juice
2 8-ounce containers nondairy sour cream
1 packet taco seasoning I use Bearitos but if you are avoiding all white sugar make your own mix with chili powder ground cumin onion powder hot paprika or cayenne and salt
1/2 cup diced mild green chiles drained
1/2 cup sliced black olives or more if you like 
5 tomatoes chopped
2 cups shredded vegan Cheddar cheese

Steps



Preheat the oven to 350 degrees.
Spread a layer of refried beans in the bottom of an 8 inch by 8 inch quart glass baking dish.
Pit and peel the avocados and place in a bowl.
Mash the avocados together with the lime juice and spread on top of the refried beans.
Stir together the sour cream and taco seasoning and spread over the avocado.
Sprinkle the chiles over the sour cream and top with a layer of black olives.
Add the tomatoes and sprinkle with the cheese.
Heat the dip for 15-30 minutes or until heated through and the cheese is a bit melted.
Serve warm or at room temperature.

my husbands super bowl meal

My husband is a big football fan so Super Bowl Sunday calls for some special man-food. Last year he wanted burgers beans and potato salad.

For the burger we used Boca brand patties. In general I prefer handmade veg burgers to the prepackaged frozen kind but these are convenient when you need them quickly or want to bring them to a BBQ. kind classics: natural makeup

When I need makeup for work for a fun night out or for a business meeting I want the stuff that will make me look my best! There are soooo many makeup options out there in the world… it's almost enough to drive a woman crazy.

The good news is that by having specific requirements for what kind of makeup or any of your beauty products you will use really narrows down the playing field and can make finding the perfect makeup less overwhelming.

I feel that I have really done my research living this way for so many years and having so many make-up artist friends help me sort through the endless companies out there to find the ones that perform the best. I've been lucky enough to have Robert Steinken a fabulous hair and make-up artist and Kara Yoshimoto another great make-up artist help me out on my search.

Just beware cause some natural companies have some seriously not cute and sometimes downright scary looking metallic colored products. Some companies that I mention in my lists as my favorites might make other products that aren't that great.  Just because I love a certain brand's concealer doesn't mean that their eye shadows won't be really scary and metallic…  So just be careful! The best thing to do is go test out products at green stores or Whole Foods to find the best ones for you.

Now remember with great diet most of the time I don't wear any makeup and still feel pretty and fresh… And you should feel that way too!  But I know it's fun to get all done up sometimes so here we go with my list.  These are my favorites in makeup… What are yours?  I'd love to hear about what you guys use and love.

Foundation

I usually just use Zuzu Luxe Concealer instead of foundation and just do spot treatments instead of covering my whole face.  When I'm working I usually need the heavier stuff for the camera.  But I haven't found a foundation that I swear by so I need your recommendations!  I like Kiss My Face Tinted Moisturizer a lot but when I read the ingredients it seems kind of unnatural to me so I wonder why not just use the icky regular stuff? I think it's better than the regular stuff but not sure how much. These foundations seem like good options and please let me know what you use!

Mascara

I love all of these but remember we are looking for better choices.  I don't think that any of these are perfect... But I do know that they are way better than Maybelline and all of those other regular brands out there on the market.  But just a warning… some of these mascaras contain beeswax and some have parabens.  It sucks but it's true.  So you have a couple of options: You can opt to wear no mascara at all or you can use one of these ones below and be thrilled that these companies are at least doing a better job than all of the other icky companies out there!  That said all of these work great!! And I love that they are to my knowledge the most natural ones out there.

Ingredients: Silk Ceramide 2 and mineral pigments.
Yes this is made with silk it's true.  But I'm grateful that it appears to be a less nasty option than most mascaras on the market.

A note about cetearyl alcohol:  watch out because sometimes it can be made from animal ingredients.  In this mascara its made from vegetable sources but if you can try and check with the company to make sure it comes from a plant.

Ingredients: Purified water carnauba wax palmitic acid from palm oil clay methylparaben propylparaben iron oxides.
They use parabens which is a bummer.

This one contains beeswax and other not-so-natural stuff.

These are the ingredients that are most commonly found in non-vegan makeup products so look out for these and try and avoid them if you can:



Carmine or cochineal - coloring made from ground insect
Lanolin – sheep fat
Beeswax/pollen/bee products
Lard  -  pig fat
Tallow -  beef fat
Parabens
Lactose/ lactalbumin
Milk/Whey products
Propolis - a mixture that bees use to seal their beehives
Elastin from cows
Hyaluronic acid  - animal connective tissue

Lip Balm

I used to love Desert Essence Lip Rescue in Shea Butter but I found out that it has beeswax in it! So my new favorite is Lisa Ann Skin Care Lip Therapy: Vegan.  If your order some just make sure to ask for the vegan one because she has some lip balms that contain beeswax.

I also like Kiss My Face Strawberry Lip Balm but that one has beeswax in it too which is a bummer…but Lisa Ann's is amazing so that wins for me.  No more Kiss My Face or Desert Essence Lip Balm for me.
