Beat the Heat Dessert
      from HL Carpenter
We wish we could say Gramma shared the recipe for this scrumptious dessert with us while we were writing The SkyHorse. After all, what better way for her granddaughter, Tovi, to stay cool on a sweltering summer day while tending a horse hatched from an egg? But we must admit the sweet treat was around long before The SkyHorse trotted into our lives.
If you like to have dessert on hand for those daily ice cream cravings guests, this cake keeps well in the freezer. It’s expandable, too. Just use a bigger pan, more ice cream and extra whipped topping. When it comes to ice cream, more is better, right?
No Bake Ice Cream Sandwich Cake
   What you’ll need:
What you’ll need:
One package (12 bars) of ice cream sandwiches
One container (8 ounces or larger) of whipped topping (or make your own with a pint of whipping cream and 3 tablespoons of sugar)
Garnish of your choice: Sprinkles; chopped nuts; caramel, chocolate or other syrup
Glass or plastic pan with a lid
Directions:
Arrange six ice cream bars in a crisscross pattern in the bottom of the pan. (You may have to cut the bars to make them fit. Of course, then you’ll need to eat those little left-over pieces—who said chefs have an easy life?)
Spread a layer of whipped cream over the bars.*
Crisscross the remaining six ice cream bars on top of the whipped cream.
Slather another layer of whipped cream over the top and sides.
Decorate with sprinkles or chopped nuts, or drizzle with caramel or chocolate syrup.
Cover and freeze 2-3 hours or overnight.
Remove from freezer 10-15 minutes before serving to soften.
*For a richer cake, add a layer of syrup and/or chopped nuts over the whipped cream.

When fourteen year old Tovi Taggert moves to Honeysuckle Hollow to take care of her grandmother, she has a hard time fitting in. For one thing, she’s been tagged with the hated nickname Too-Tall Tovi. For another, everyone at Honeysuckle Hollow High believes Tovi played the Choking Game with someone else’s boyfriend – and made out with him besides.
As if she doesn’t have enough problems, after the latest stand-off in the school hallway, Tovi finds a gorgeous speckled egg nestled in a feather lined nest.
She takes the egg home – and mysterious visitors begin appearing almost immediately. Even more worrisome, whatever is inside the egg starts chipping its way out.
When the egg hatches, revealing a winged horse, Tovi’s troubles multiply.
As she struggles to return the horse to the magical land where he belongs, Tovi must make a courageous decision – and accept what that decision will cost her.

Teen Friendships Can Last a Lifetime

Not all the people you meet during your teen years will become your BFFs, but if you’re very fortunate, one or two might always be with you to share the ups and downs that happen to us as we go through life.
I have two “lifetime” friends. One I met in junior high and the other in high school. One is similar to me in temperament, while the other couldn’t be more different. We’ve shared school experiences; engagements, marriages and divorces; the birth of children; and the deaths of grandparents, parents and siblings.
Those are the big things, the huge emotional highs and lows that only time and the love and caring of true friends can help see you through. But we’ve also always been there for one another through the smaller things in life, everything from movie nights and mid-terms to concerts and cooking disasters.
When I was working on my YA paranormal novella, Ghost Writer, I gave my main character, Malden, a friend named Ashley. They go to the same school and I suspect they’re truly BFF’s. When I was writing the scenes where Malden and Ashley, though physically separated by hundreds of miles, are online in their school’s student chat room, I thought about how my friends and I sound when we’re filling each other in on “the latest.” Not only do we talk about what’s happening to us and what we’re feeling, but sometimes we also pick up on what our lifetime friends aren’t saying, what they’re holding inside because they’re afraid of being embarrassed or laughed at.
Because we love them, we have to gently remind them just who they’re talking to. With a lifetime friend, they’re safe. And it’s okay to share anything.

   Tech-savvy teen Malden Montgomery leaves New York City anticipating nothing but boredom when her artist-mother brings her along on a two-week vacation to a family inn in rural Virginia.

Then Emily begins to communicate with Malden and she and Jackson realize they have to find a way to help Emily's ghost come back home or risk a spirit's wrath if they choose to leave her lost in the darkness forever.

Celebrate July 4th with American Flag Cake
      Not only is my author friend Sara Daniel a terrific writer, she's also one dynamite baker. Sara is sharing her special Fourth of July dessert. I guarantee you'll love it! Now here's Sara...
   
Nothing beats Independence Day for showing our pride in our country. Flags wave proudly, and red, white and blue are suddenly displayed on every piece of merchandise in the local discount store.
While I don’t have flag plates, napkins or—God forbid—a star-spangled bikini, I love bringing out my once-a-year crafty side to make an American Flag Cake for a cool patriotic treat.
So to satisfy your sweet-tooth I offer you my easy and delicious recipe.
American Flag Cake
pound cake
8oz Cool Whip
Blueberries
Strawberries, sliced
Pound cake can be store bought or made from scratch. Here’s a quick recipe:
1 cup butter
1 cup sugar
1 tsp. vanilla
4 eggs
2 cups flour
1 tsp. baking powder
¼ tsp. nutmeg
Preheat oven to 325°F.
Beat sugar into butter 2 tablespoons at a time until light and fluffy. Add vanilla, then eggs one at a time. Mix in remaining ingredients.
Bake in a greased and floured 9 X 5 pan for 1 hour. Cool completely.
To Assemble American Flag Cake
Cut pound cake into slices and lay across the bottom of a 9 X 13 pan.
Cover cake with a smooth layer of Cool Whip.
Turn pan horizontal. In upper left corner, fill an approximately 3-4 inch by 3-4 inch square with blueberries.
Make seven horizontal lines of strawberry slices. The first four lines should begin from the blueberry section to the far right edge. The bottom three lines should span the entire length of the pan. The top and bottom lines should be touching the top and bottom of the pan respectively to create 13 alternating red and white stripes.
The last step is very important - Thank a member of our Armed Forces and/or a Veteran, and share a piece of patriotic cake.

When History and Fiction Collide
      a wonderful novel is born. I'm delighted to introduce you to my author friend Anne Montgomery. Anne is visiting today with her new release A Light in the Desert, an intriguing Soft Thriller novel I think you'll enjoy.
   A Light in the Desert traces the story of a pregnant teenager who bears an odd facial deformity, a Vietnam veteran and former Special Forces sniper who, as he descends into the throes of mental illness, latches onto the girl, and a group of Pentecostal zealots – the Children of Light – who have been waiting over thirty years in the Arizona desert for Armageddon.
A Light in the Desert traces the story of a pregnant teenager who bears an odd facial deformity, a Vietnam veteran and former Special Forces sniper who, as he descends into the throes of mental illness, latches onto the girl, and a group of Pentecostal zealots – the Children of Light – who have been waiting over thirty years in the Arizona desert for Armageddon.
The Amtrak Sunset Limited, a passenger train en route to Los Angeles, is derailed in their midst’s, a deadly act of sabotage. Their lives are thrown into turmoil when local and state police, FBI investigators, and a horde of reporters make camp by the twisted wreckage of the Sunset Limited. As the search for the saboteurs continues, the authorities find more questions than answers. The girl mysteriously vanishes, the assassin struggles to maintain his sanity, and a child is about to be born in the wilderness.

Most of the two hundred and forty-eight passengers on the Sunset Limited were asleep when David Flowers – weaving slightly as the sleeper car rattled along at fifty miles-per-hour – moved along the passageway en route to the bathroom. At the end of the car he saw Mitchell Bates, a twenty-year Amtrak veteran.
“Don’t forget to get me up when we get to Palm Springs,” the passenger said. “Don’t wanna sleep through my stop.”
“Don’t worry about a thing,” Bates responded, smiling. “That’s what they pay me for.”
Two cars back, Kelly sat wide awake, fingers cupped around her eyes, the outside edges of her hands pressed tightly to the window. She could see the moonlit desert careening by, the scattered mountains black against a star-filled night sky. She felt the gentle rolling of the car: a strangely pleasant feeling. A sense of calm surrounded her, maybe because, for the first time since her father died, there were other people who cared about her. Kelly glanced over at Miranda, still engrossed in a two-month-old, dog-eared issue of Glamour Magazine. Had her mother ever had a friend?
Up in the cab, the engineer watched as the massive headlight bathed the track ahead in bright white light. He’d been on this run hundreds of times. A curve that would lead the train onto a trestle that spanned one of the deeper washes between Phoenix and L.A. was just ahead. The headlight blazed – a star shooting in the darkness – wrapping the track in light as harsh as any clear desert day.
But the damage was under the rails where no light could penetrate.

Ramm was driving on the dirt road that would take him back to the cabin. That edgy, too-much-caffeine feeling gripped him again. He should be on the train, the one protecting Kelly. Had he made a mistake contacting the watchers, which meant he had put himself in play again? The community in which he’d worked for so many years was relatively small and there was always the possibility that word had spread about the debacle in Jerusalem. By contacting the watchers, he might have put himself in jeopardy, which could also bring harm to those around him.
Ramm’s head began to pound, the migraine accompanied by a hazy aura. His psychological state was fluctuating. How long could he stay ahead of the problem without medication? What if he blacked out again? What if he was hospitalized and people started checking on him?
Feeling impotent, powerless, Ramm jammed on the breaks. The truck skidded to a stop on the soft shoulder where blacktop and dirt merged at the turnoff. He rubbed his face hard then gripped the steering wheel. When he looked up and peered through the windshield, Ramm blinked several times, confused.
There, in the night sky before him, floating in a spectral light, was Kelly’s face. Ramm squinted, shutting his eyes tight, then looked again. The ghostly image was still there, hovering before him, her troubled visage beckoning him to follow. She merged
with paintings and sculptures – the mother of Jesus in all her quiet grief, the face of Mary on the shimmering white marble of Michelangelo’s St. Peter’s Pieta, on Raphael’s Madonna del Granduca, her desolate melancholy depicted by Masaccio, Veneziano, and countless other artists through time.
Ramm painfully unclenched his hands from around the steering wheel. The suddenness of the bright light caught him off guard. His first reaction was to grab for the loaded Glock he kept under the front seat, but when the glare splashed past him, followed by the steady beat of the passing railcars, he relaxed.
Then, an unexpected wave of heat engulfed Ramm, and he pushed open the cab door and stepped out, breathing deeply, trying to clear his head. The noise hit him like a blow, shattering the desert calm, causing Ramm to reflexively drop to the ground. He lay there listening to the calamitous groaning, a ghastly noise that washed over him like a rogue wave.

Ramm was driving on the dirt road that would take him back to the cabin. That edgy, too-much-caffeine feeling gripped him again. He should be on the train, the one protecting Kelly. Had he made a mistake contacting the watchers, which meant he had put himself in play again? The community in which he’d worked for so many years was relatively small and there was always the possibility that word had spread about the debacle in Jerusalem. By contacting the watchers, he might have put himself in jeopardy, which could also bring harm to those around him.
Ramm’s head began to pound, the migraine accompanied by a hazy aura. His psychological state was fluctuating. How long could he stay ahead of the problem without medication? What if he blacked out again? What if he was hospitalized and people started checking on him?
Feeling impotent, powerless, Ramm jammed on the breaks. The truck skidded to a stop on the soft shoulder where blacktop and dirt merged at the turnoff. He rubbed his face hard then gripped the steering wheel. When he looked up and peered through the windshield, Ramm blinked several times, confused.
There, in the night sky before him, floating in a spectral light, was Kelly’s face. Ramm squinted, shutting his eyes tight, then looked again. The ghostly image was still there, hovering before him, her troubled visage beckoning him to follow. She merged
with paintings and sculptures – the mother of Jesus in all her quiet grief, the face of Mary on the shimmering white marble of Michelangelo’s St. Peter’s Pieta, on Raphael’s Madonna del Granduca, her desolate melancholy depicted by Masaccio, Veneziano, and countless other artists through time.
Ramm painfully unclenched his hands from around the steering wheel. The suddenness of the bright light caught him off guard. His first reaction was to grab for the loaded Glock he kept under the front seat, but when the glare splashed past him, followed by the steady beat of the passing railcars, he relaxed.
Then, an unexpected wave of heat engulfed Ramm, and he pushed open the cab door and stepped out, breathing deeply, trying to clear his head. The noise hit him like a blow, shattering the desert calm, causing Ramm to reflexively drop to the ground. He lay there listening to the calamitous groaning, a ghastly noise that washed over him like a rogue wave.

Excite Your Senses
      Longtime friend and multi-genre author Emma Lane is here to share her latest culinary creation that can be served hot or cold and her new Regency release. The kitchen is all yours, Emma.
This recipe is only a guideline for making a delicious lunch or main dish during harvest time when fresh vegetables are available. The list of vegetables is easily amendable to whatever your harvest brings. (Not beets!) Be sure to add nurturing bread like corn bread or crackers for a more substantial meal. (Okay, I used corn chex mix, but that was an emergency) A green salad is always a welcome addition.
FRESH VEGETABLE SOUP
   1 diced onion (not mild and NOT garlic.)
1 diced onion (not mild and NOT garlic.)
½ diced green pepper (sweet)
2 chopped celery stalks (all sand removed)
1 fat carrot peeled and chopped
Corn kernels (1-2 ears fresh)
1 can diced tomato or 1 lg. chopped fresh
1½ cups fresh green beans chopped (strings removed)
1 can Campbell’s Chicken and Rice soup or 1 cup soup stock, beef or chicken
½ pound hamburger (I use ground chuck) or left over 1 cup chopped meat or chicken*
1 med. potato chopped into small cubes (or 2 small)
1 beef or chicken bullion cube (or 2 if stronger broth is desired.)
Sprig fresh thyme or pinch or two dried
Sprig of oregano or pinch of dried
Small sprig of basil or pinch of dried
Sprig of parsley (flat not curly)
Optional Veggies: okra, green peas, yellow squash, small can chick peas
Optional herbs/spices: pinch of chili pepper, tiny clove of garlic, sprig of cilantro.
Tip: if you use fresh herbs tie together with kitchen string to make removal easier.
*Omit the meat if you plan to serve the soup chilled.
Sauté meat and set aside.
Wash and chop vegetables.
Fill large pot halfway with water (more or less as needed, but NOT at the last minute as it weakens the broth). Add onions and celery. Bring to boil and simmer for 10 minutes.
Add carrots, corn, tomatoes, potato, soup stock or Campbell’s, bouillon cube, sprigs of herbs (remove before serving). Bring to a boil and then simmer for 15 to 20 minutes.
Add meat. Simmer for 10 more minutes.
Veggies will be somewhat crisp. As it sits the flavor will increase.
If serving hot, refrigerate if it’s going to be longer than a few hours before serving, and then reheat.
To serve cold, refrigerate and chill for several hours. Just before serving add thinly sliced cucumber.
Sit back and enjoy a brief introduction to my new release.

Fatigue and the effects of the brandy on top of the ale now gave his gait a distinct wobble. He chuckled, amused at his condition.
As he reached for the portrait of great Uncle Barney, he lurched into the back of the red leather sofa in front of the cosy fire. “Deuce take it,” he exclaimed when a rounded arm rolled into view. He spotted the gentle curve of a hip and walked around to the front, where he spied a tumbled haze of dark curls hiding a face. It is indeed a female—a sleeping female.
Who was she? The gown was too rich for his household staff. Curious, he knelt beside the sofa.
“Only one way to find out,” he whispered and moved one dark curl. He sat back, satisfied when a handsome face swam into view. She sighed and rolled over, revealing a generous figure and a pair of rosy lips. She might be Sleeping Beauty—but not one of my relatives. He leaned over and kissed those tempting lips.
As he lingered there, she sighed and came partially awake. He could not resist. He deepened the kiss and sounds of satisfaction like yum and umm came from those delicious lips. Her hand stroked his face, then reached around his head to pull him closer. Delighted with this turn of events, the Duke of Westerton complied enthusiastically and extended an arm around a slender waist. How much of the ale and brandy had he imbibed? Dizziness overcame his senses as he slid down on the floor and knew no more.

“She is utterly—amazing.” His face lit with genuine love as he spoke of her. George stomped into the kitchen an hour later, shaking the rain off his coat and attempting to dislodge from his head the unpleasant business of asking for another account extension with the local grain merchant. Still, doing so was better than explaining to Sir Robert and Penelope that their horses had starved whilst in his care.
Penelope. Would she be their salvation? Always a practical man, George pictured her slim figure and lovely green eyes while calling Laurence to come and help pull off his muddy boots. It was a somewhat ironic task for a footman, but better than cleaning up a trail of dirt if he wore them further into the house.
The rain had begun in earnest while he was in the stables, and Henry and Uncle Solomon would likely be soaked through when they returned. George hoped they might at least have found a pheasant or a grouse for tonight’s dinner table as reward for their trouble.
Divested of the boots at last, George dispatched Laurence for a pair of shoes more suitable to the house and told the servant he would find him working in the library. He needed to make a note in the account books of the additional amount now owed for the grain. There was another, less tedious, but certainly more difficult, task to complete, as well—the writing of the St. Valentine’s Day verse, the first step in his wooing of Penelope.
George paused at the entrance to the great hall, found neither Sir Robert nor his daughter anywhere in sight, and made haste, his stocking feet noiseless on the cold stone floor. Once in the library, he shut the door behind him and exhaled in relief, grateful that their guests hadn’t caught him running about the place like an errant child, with no shoes on.
“Good morning, Mr. Harburton.”
His heart sank to his non-existent boots. George turned and saw Penelope seated in one of the wing chairs by the hearth, with an open book on her lap and a look of amusement in her eyes.
“Miss…Miss Braxton,” he stammered. “Yes, good morning. I trust you slept well?” Gathering his wits, George embraced his embarrassment and strode forward, seeking the warmth of the fire.
“Yes, quite well, sir. Thank you.” She nodded and smiled, as if finding one of her hosts pacing about, wearing twice-patched stockings, was an everyday occurrence. “I pray I haven’t overstepped by making myself comfortable here with my favourite of Mr. Shakespeare’s plays?”
She held up the volume in question, so he could see the title, The Merry Wives of Windsor.
“Not at all,” he assured her. “But, may I say, what an unusual choice. For I can imagine you enjoying a romantic tragedy such as Romeo and Juliet or even a history, on the order of Julius Caesar, but not a risqué comedy.”
“Do you think I possess no sense of humour, then, Mr. Harburton?” She cast a fleeting look down at his unshod feet.

A Taste of Italy
      This dish may seem like a lot of work, but it really isn’t. Besides, you will love the beautiful blend of flavors. This recipe serves 2, maybe 3, people. Double it and freeze for a later meal. Serve with a Caesar salad and a crisp white wine. 
Chicken Tetrazzini
Chicken Casserole with Noodles and Mushrooms
   
Chicken
2 chicken breasts, boneless, skinless
1 medium onion, peeled and halved
1 whole clove
1 stalks celery, including leaves
1 bay leaf
1 medium-sized carrot
5 cups chicken stock
Combine chicken and all remaining ingredients in a 3-quart saucepan. Bring to a boil over high heat. Reduce temperature to low and simmer, partially covered for 15 to 25 minutes, or until the chicken is tender but not falling apart.
Transfer the chicken to a cutting board. When cool enough to handle cut the chicken into 1-inch pieces. Set aside.
Strain the cooking liquid through a fine sieve set over a bowl. Press down hard on the vegetables with the back of a spoon, then discard them. Skim and discard the greases that rises to the top. Reserve the stock to use later in this recipe.
Noodles and Mushrooms
½ pound broad egg noodles
6 tbsp. butter
½ pound baby Portobello mushrooms, sliced
Bring 3 quarts of water to a boil in a 4-quart saucepan. Drop in noodles and boil for about 9 minutes or until just barely tender. Be careful not to overcook them.
Drain the noodles in a colander and rinse under cold water. Set aside.
Melt butter in a small skillet set on moderate heat. Stir in mushrooms and cook for about 5 minutes, or until barely tender. Set aside off the heat.
Sauce
6 tbsp. butter
6 tbsp. flour
½ cup heavy cream
½ cup dry sherry
2 egg yolks
½ tsp. Frank’s Hot Sauce
Melt butter in a 2-quart saucepan set on moderate heat. Whisk in the flour and mix thoroughly. Gradually add 2 cups of reserved stock, cream, and sherry. Cook over high heat until this blend comes to a boil. Reduce heat to moderate.
Whisk the yolks in a small bowl. Slowly add about ½ cup of the hot liquid while whisking constantly. Now stir this egg mixture into the saucepan. Cook for 1 or 2 minutes, then stir in hot sauce. Remove pan from heat.
To Assemble and Bake
2 tbsp. butter, softened
1 cup grated Parmesan cheese
Preheat oven to 350°F.
Coat the bottom and sides of a 8-by-10-by-2-inch baking dish, or a dish as close as you can get, with the butter. Pour in 1 cup of sauce and scatter half the noodles over the bottom. Spread on half the mushrooms, then cover with half the chicken. Repeat the layers and top with remaining sauce. Sprinkle cheese over the dish.
Bake for 30 minutes.
This recipe freezes beautifully. Thaw and add a little cream to the leftover. Bake for 15-25 minutes at 325°F.

Leigh is a graduate of the University of Maryland, University College and a member of the Maryland Writers' Association and Romance Writers of America. She is also an approved artist with the Maryland State Arts Council. Her debut novel, Disenchanted, was inspired by the Wethersfield witches of Connecticut and was released by Mirror World Publishing. Leigh is currently working on her next novel, The Witch's Ring which is set in Annapolis.
