Duke Leto and the Lady Jessica from Dune by Frank Herbert are the first who come to mind. Lady Jessica loved Duke Leto so deeply she defied the powerful Bene Gesserit Mother's command and gave Leto a son.

Fitz and the Fool from the Assassin's Apprentice trilogy by Robin Hobb.
No greater love that that of friendship and unrequited desire. Fitz's love for the Fool surpasses even his love for Molly Red Dress, yet he never recognizes his need for the Fool until the Fool must leave.

In my novels, I have a soft spot for J.L., the immortal who appears in The Soul of the Witch Trilogy, Aubrielle's Call and Hawthorn and Mistletoe. Although bound to answer his soul mate's call, his love for her transcends his curse, turning it into a blessing.(less)
