Good idea starting the Vegetarians group...there are now more vegetarian cookbooks than ever but they are quite diverse themselves and I'm sure it's especially hard to narrow these down when you're just starting out.

I recommended The Passionate Vegetarian by Crescent Dragonwagon but Charmaine Solomon's Vegetarian Cooking is also quite good and is targeted toward the chef who wants to try more sophisticated dishes. The dishes of this latter book generally require more expensive ingredients than the former.
