Lol, notice I haven't answered this myself. It's so hard to decide! Some of my favorite cookbooks are just so small...

An College Vegetarian Cooking by Megan Carle

This one is amazing. 5 stars. And the soda bread recipe is great!

My brother-in-law makes me homemade marshmallows sometimes (plain/vanilla, chocolate, or coconut flavored), so good. Apparently it isn't hard but you need a kitchen aid mixer type of appliance to fluff/stir the mixture. :-(
