I used 3 points of view in my first book and the next in the series will have four. I think it helps readers to empathise if you don't swamp them with too many. It is possible to show other characters in considerable detail if you choose carefully.

Rasley has an excellent book: The Power of Point of View (Make Your Story Come to Life).
William Faulkner used multiple points of view in some of his novels.
