i think Apollo would be fine. Arts, Healing, bit of sunshine... sounds more interesting than most of the other Olympians specialties. Hermes with trade, thiefery and husbandry or Hephaistos with smithing and the whole technological aspect would also be possibilities and as for the coolest, big Daddy Zeus of course would rock - but be very improbable because of the treaty between the big three and there already two exceptions/breaks...

Of course from the old tales Dionysos would be a natural candidate, but honestly i can't stand his earthly persona at Camp Half-Blood so no alcoholic career for me ;)
