I've read Catching fire several months ago and I just started reading Mockingjay. Could someone please remind me from the second book how Haymitch, and the rest of the Victors who survived the Quell became traitors against the rebels?

traitors against the rebels? do you mean against the capitol?

The chief gamemaker - Petrarch - Haymitch, and a whole bunch of the tributes in the Quarter Quell were rebels. They broke Katniss and Finnick out of the arena and swooped in to rescue them.

If I remember correctly they became traitors because they weren't playing by Coin's rules/ideas for how to take over the Capitol and how to use Katniss as the symbolic Mocking Jay. I could be wrong though been a while since I read it.

During the Quarter Quell, Katniss and Peeta were broken out of the games arena and taken to District 13. So they escaped the Capitol and they didn't like that.
