I hadn't really paid attention till I saw a commercial for another show that featured Patrick Gallagher who played Chow on seasons 1 and 2 of TB. I know that in the books, he dies in book 4. But what happened to him as of last season. It's like the just wrote him off without an explanation. Any thoughts?

He died, after season 2. It is when Sookie first went to Fangtasia and we meet Pam, and Ginger. Sookie was there to find out who was stealing from Eric.
I think they bring him up when they need him. It is curious that we didn't see him at all last season and we haven't seen him so far in this one. Maybe he'll turn up again only to die before this season ends.It also occurs to me that Ginger's still alive, but they'll probably keep her around because she screams at everything...it seems to be kind of a running gag on True Blood:
Stake a vampire in front of her...
Sneak up on her in broad daylight...
Let her accidentally shoot a man...
Hand her some dirty towels...
Point a gun at her...
Let her run away while you point a gun at someone else...
Make her weigh down your coffin to keep you from meeting the Sun because of some evil witch's spell...
...and she SCREAMS! Actually, it is kind of funny, like Bill's "Sookeh!"
Well some of that is justifable for screaming like staking the vampire in front of her, pointing a gun at her, and as skinny as she is, I don't think she be able to weigh down the coffin and that was a pretty scary event for an average human to handle.

Probably just not room for him in what's going on.

She trips me out. I laughed so hard when she was riding the coffin like it was a bull and she was trying to win the grand championship at a rodeo. ROFL

Then I have no idea what happened to Chow. My guess is he died.
