From an online recipe for Gratineed Brussels Sprouts.

Drain the Brussels sprouts and place them on the towel. Gently dry and return to the bowel.

Well, they ARE good for the bowels. Remember the 50s and the "clean bowel club"?

Actually, they were saying blanch them, chill in ice water, dry on towel, and return them to the bowl.

Hee. Gotta watch out for those slithers.

I didn't used to like Brussels sprouts very much. I cooked them like my mother did, boiled or steamed. Boring and cabbagey. But they're delicious roasted or affogato as the Italians say. Toss with a little olive oil, garlic if you want, maybe some red pepper flakes, whatever you think might be good. Then roast in a hot oven. I usually do them affogato.
Same mixture, but in a shallow pan. Start with the pan hot, slap the cover on, turn the heat to low and cook them until barely done. Delish.

The salad I had used barely parboiled sprouts, feta, dried cranberries. Really good.

Tracey (stewartry) Just found this in a safety handout from my employer:

If there is contact with your clothing, remove and wash the underlying skin thoroughly with antibacterial soap and running water.

It seems a bit harsh to remove the affected skin ...
