I will be reading House of Leaves by Mark Z. Danielewski which has received rave reviews. Apparently, it is extremely creepy, so make sure you are up for that.
A lot of people have sung the praises of Paulo Coelho, The Alchemist especially. I have never read any of his stuff myself, but I hope to down the road.
Those are the few that spring instantly to mind. Hopefully, someone else will be able to offer more suggestions if none of those interest you.

I also liked Love Walked In by Marisa de los Santos, The Year of Fog by Michelle Richmond, and The Opposite of Love by Julie Buxbaum.

Read a book and cook a meal inspired by it...for example Diane Mott Davidson's or other's culinary mysteries...if you read one and then made a recipe from it...or if a book as the name of a food item in the title and you cook that food...or read a book that takes place in an area with a culinary specialty i.e. read a book set in Japan and you make Sushi etc. All of those would count.
4. Paulo Coelho is fine for the hispanic/latin/spanish category

Perhaps I have what we call "deformación profesional" (professional bias?) in Spanish: I have many different clients that ask me to translate "Hispanic" in many different ways. Some claim by "Hispanic" they mean "from Spain", since for Latin Americans they use "Latinos"; some include Brazilians in the group [sic, I'm serious!], some mean both "from Spain and Latin America"...
The worse thing is, the word in Spanish ("hispano" or "hispánico") is equally confusing... it can refer to its historical origin (Hispania), to the Spanish language only, or to people of Hispanic (sic :p) origin who live in the US only... so I can picture your husband cringing whenever the word comes out :-/
