Vegetarian chili. Black beans, onions, bell peppers, cumin, tomatoes, corn(yes! corn), diced/minced jalapenos, dried chiles, and poblano peppers. A little potato to help thicken the sauce (since there is no animal fat). Pretty good.
I roasted an eggplant in the oven for an hour, turning it every 15 minutes. I wanted to make a dip, but ended up running out of time. Today I removed the eggplant skin, mushed the eggplant with salt and pepper and a drizzle of olive oil and tossed it with some freshly cooked pasta shells. It was so good and simple. Saved the leftovers for vegan daughter.







I remember this one day, back in ... oh, it must have been 1974 or 75. My friends Alan (truly more a nemesis than friend), Mark (the redheaded demon responsible for my broken thumb), and Peter (one of 12 siblings in his family), met with me outside the school to begin a hike. We lived at the foot of southern California's Mt Wilson and would frequently miss part of a school day to partake of the hiking trails and creeks that ran through the lower elevations. On this particular day, we chose the trail that, in one half-mile section, followed a creek through a narrow ravine. Had we but known the dangers that awaited on that sunny, spring afternoon....
