Wow. Just out of curiosity, how do you caramelize a banana? I know how caramelizing things like onions and whatnot works in general, I would just be afraid to destroy a banana really easily.

Slice in half lengthwise (or if you prefer, just cut into thick chunks) and cook in butter and brown sugar over medium heat not longer than 1.5 minutes. You can throw in a small amount of orange juice or rum after about 15-30 seconds. Remove with a spatula.

I just whisked in about a tablespoon of pb into the warm caramel/butter mixture. But I think I'd leave off the pb if I did it again.

"Supremely Spicy" hummus.

Now I'm eating leftovers from last night. Chicken, onion, yellow and red bell pepper skewers seasoned with cumin, cayenne, crushed red pepper and chili poweder over rice. Turned out really well.

KO, I'm trying that recipe you gave me with the chicken & potatoes in the oven thingy this weekend. I'll let you know if it's a hit. :)
