Quinoa mac 'n' cheese intrigues me. I love quinoa.

The recipe I have says to mix it with pasta shells but I never do. I do add onions, tomatoes and sometimes spinach or a fake bacon. It needs the extra texture. I also bake it so that it gets nice and yummy on top.
