I think for the next quiche I will substitute lowfat milk and cottage cheese for 8 oz. heavy cream.

It is so! It is delicious with cracked pepper on top of rice cakes.

I always use fat free milk in quiche. The Swiss cheese makes it good, you'll never notice the no cream. No need for the curds.

I used lowfat Swiss last time and it was great. Along with heavy cream, though. It was so rich, you could tell you could knock off some of the richness and it would still taste good.
