They are delicious. Wahoo's is THE BEST and I hear they have them in CO and TX now too!

Omg, yum! I'll take the Mahi Mahi. kthanks. Or maybe the Seared Scallops...and that Baked Papaya looks pretty damn amazing too.

About 30 miles SE of the metro area.

Heard of Castle Rock...(half way between Den. & Co Springs) I'm 16 miles east of CR.

Yes! When I lived there I worked in Highlands Ranch. I think that's halfway between Castle Rock and Denver? I lived on Cheeseman Park in Denver. I loved it there.

Thanks Lee. I just subbed Chipotle Mustard for my usual Dijon. Also I added a little Penzey's Chipotle powder for extra kick.
