3-4 cans tuna in water
1/2 jar of sweet relish,
mayo

Just mix the relish in withe tuna and then add the mayo.

Made this for dinner tonight:

Black Bean Salad

2 15-oz cans black beans, drained/rinsed
1 orange (or yellow or red) bell pepper, diced
1 1/2 cups cooked yellow or white corn
2 bunches green onions, diced
1/2 cup cilantro, chopped
1 cup cherry tomatoes, quartered
[it calls for 1 4-oz can diced green chilies but I found this didn't add anything at all, texture or flavorwise.]

Dressing:

2 tsp rice wine vinegar
1/2 tsp salt
2 tsp sugar
2 tsp ground cumin
3 cloves garlic, minced
1 tsp ground coriander
2 tsp canola oil
juice of 1 lime
1/2 tsp fresh ground black pepper
zest of 1 lime
Tabasco sauce (3 tblsp green for milder, 2 tblsp green and 1 tblsp red for hotter, to your taste)

Stir all salad ingredients together. Whisk dressing, pour over.

Substitutions I made:

instead of 2 bunches green onions, I used 1 bunch onions, 1/4 a red onion, finely chopped
instead of cherry tomatoes I used 3 roma tomatoes
I couldn't find rice wine vinegar at the store so I used rice vinegar. Apparently they are different....
I didn't have canola oil so I used sunflower oil.
I skipped the zest since I don't have a zester.
I didn't have any Tabasco so I used my Crystal Hot Sauce.
After tasting the dressing I added 1 extra tsp sugar.

It was very tasty.

I have been regularly posting in Terminal Coffee for a lot of years now. And a LOT of recipes and what I just ate. Don't tell me this group isn't fun any more. We're fun, we're all just busy doing things.

This group helped me through the giant Iowa floods when I thought I was going to completely lose my mind.
I don't spend nearly as much time on here as I did when my kids were in high school and college. It was a nice way to connect with Madeline during her college years at Agnes Scott, and these days I check in on what October is reading. Books have been a big part of their physical and emotional transition to being their non-binary self.
