What Are You Going to Have for Dinner Tonight?
Last night we had chicken tacos. I grabbed a package of chicken tenders from Target, used some tortillas I had on hand, a packet of taco seasoning, one onion, and some greens. One thing I have learned is to warm the tortillas on the griddle to the point that they brown in spots. I do not enjoy the hard taco shells of my youth.
Tonight's dinner is baked salmon and baked vegetables. Mr. Evie will be our chef, but I still get points for the batch of granola I made this morning.

I made tacos last night. Tonight I'll be splitting something with Mrs Me. We'll go up the street a bit and have either a big burger or fish & chips.
Thin sliced chicken on rosemary sourdough bread. Mmm, this bread from Wegman's is so good. Brushed with olive oil. It makes the best sandwiches. Throw on some crunchy iceberg lettuce.
I'm making vegetable soup. Mr Evie has injured his finger. Depending on the imaging results it's either a torn tendon or a break. Either way I am now the chief cook and all round general services person.
I'll be scraping together the leftovers. Homemade pizza, roasted green capsicum and sweet potato. I may or may not stew apples for dessert. It all depends on how I feel after I vacuum the apartment.It's beer night so also a 330ml bottle of Asahi 3.5 low carb beer.
I'm about 80% recovered from a week-long bout of influenza. Apparently I picked it up on the last day of our cruise, and it manifested while we were touring around Sydney.I was also kind enough to pass it on to my (now suffering) wife, who I am (as always, of course) treating like a goddess for the pain I've caused.
So I had a bowl of cereal, and a bit of cottage cheese with raspberries.

An old standby. Kale with penne pasta and feta, rotisserie chicken.

Fruit smoothie, fried egg, toast & jam. A random collection of, "hmm, what would taste good right now?"
Snacks on the run. We're heading out for my daughter's birthday drinks. She's 32! Where did the years go?
Tonight, we’re having enchiladas for dinner. I also prepared a pot of vegetable soup today, which will be our dinner tomorrow night.
I'm roasting a chicken. I'll put lemon slices and garlic in and around the chicken. The accompanying vegetables will be baked potatoes and pumpkin and steamed broccoli. We can have chicken sandwiches tomorrow, and then any leftover chicken after that will be added to a vegetable soup. It's only 10:35am so at this point it's all talk.
I made a simple pork loin. Salt & pepper and in the pan to brown it, then a honey mustard and thyme coating to finish it in the oven. Couldn't be easier.
I tossed together white rice, olives from the olive bar, rotini with red and yellow peppers, and smoked mozzarella.

Oh, that sounds good.
After today's trip to the Capitol (I am filing my signatures to run for the Iowa Senate) I will stop at the Mexican market on the East side of Des Moines for fresh, still-warm tortillas and other fixings for supper.
