Dr. Cynthia fixed a tarragon chicken recipe last night. It was really good. I will have leftovers. He served it with a side of collard greens and kale fresh from our farm garden. So good.
Yum woon sen (bean thread salad with lime vinaigrette) and Red pad ped (chicken in spicy chili sauce).
We will be toasting today's ruling by the Iowa Supreme Court that keeps abortion LEGAL in Iowa. Cheers!

In Iowa, it is tomato season. Tonight, I will make a pizza with roasted tomato sauce I fixed a year ago and froze in small containers. Happy Monday, all!
We've been cooking at home lately, but don't have anything planned for tonight. My guess is we'll pick up something to go.
One of the things on my to-do list today is to fix Naz Wachman's Beef Brisket. I hope I have enough onions, it's snowy/slick out there.
One can never have enough onions. I was making the shopping list yesterday. Mr. Evie said, "We don't need onions. We have two." Yeah, right.
I got a nice Norwegian salmon fillet waiting for me. (Aldi) What should I fix? Maybe a coconut curry? I hardly ever buy salmon for just me and Dr. Cynthia, so I am a bit rusty. Typically I get a big bag of spinach, drizzle it with lemon juice and olive oil and roast the salmon in the oven (atop the spinach) for 10 minutes. The spinach shrinks up to hardly anything and the salmon i perfect.

Dr. Cynthia made Chinese (Chicken with Orange Peel and chili pepper) Rice, and Broccoli with mushrooms. So good to have leftovers. Tonight I plan to make something with link Italian sausage.

Rissoles with baked potato, sweet potato and zucchini. I made the rissoles earlier, and I'll be cooking them later. Mr. Evie will be in charge of preparing and monitoring the cooking of the baked vegetables.

Dr. Cynthia is helping me with food prep these days as my schedule has become more intense. I do miss that golden hour of having a glass of wine and preparing something for us for dinner. After November, I hope to do it more often.
