Planning to make tacos with beyond burger tonight. I have tortillas and lettuce and cheese on hand, and the ingredients to make salsa save a jalapeño. I'd like to get some sour cream as well.

Stovetop frittata of spinach, sausage, and eggs with sprinkles of swiss cheese. YUM. Chocolate chip cookies for dessert.
Mr Evie is baking salmon with broccoli, carrots and potatoes on the side. I can't complain but I'll be miffed if he doesn't roast the potatoes.
Tomato-miso-fish-pasta-onion soup. All ingredients are leftovers!

Homemade pizza. Lebanese bread with a topping of roasted cauliflower and chickpeas, onion, zucchini, tomato, chilli and Mozzarella.
Leftover couscous/green beans/chorizo sausage/onion, mixed with leftover Thanksgiving mashed potatoes. Udderly delicious.
Power greens salad (kale, arugula, etc.) with bleu cheese/soy/sesame vinaigrette, curry chicken salad on rosemary crackers.
Roasting some chicken thighs and cauliflower. No recipe, just need to get it done. We will have lots of leftovers to use in tacos, sandwiches.

I have spent many happy hours cooking this week. Probably need to have leftovers tonight, with some type of green salad. Happy 3-day weekend to some of you Americans. President's Day is tomorrow.
For starters, Carolina Gelen's Lemon Olive Oil Cake. Still have to figure out the rest of the meal. I have been happily stuck inside for two days due to an ice storm. The tree branches and each blade of grass looks like it's made of sparkly glass.
Roast chicken stuffed with fresh lemon slices, garlic and sprinkled with oregano, thyme, salt and black pepper. Salad of fresh baby spinach leaves baby beets, goat cheese and crushed walnut.
I'll probably steam a couple of potatoes.
Whole wheat pasta with broccoli, grated asiago and parmesan cheese, chicken sausage, hot red pepper flakes. Serving with Italian Rosé (Globerati).
I am ridiculously excited to use my oven tonight. The glass on the interior door cracked and I had to have it replaced. Thank you, Greg! Because of bits of broken glass inside the oven, I was unable to use it for a couple of weeks. The burners worked fine, but I missed baking things. On the menu tonight: braised mustard greens and some sort of quiche.
