Lol CD - I certainly needed carbs yesterday. It was back to fish and chips this evening - we live by the sea and the shops are open so we had them proper English style.

As a newlywed, I made cheese enchiladas weekly, usually with Govt. Commodity cheese (Velveeta-like) until John asked me to please stop.
Now I like to make enchiladas with lots of vegetables and minimal cheese. With avocado salsa. Yum.
Ham and havarti sandwich on pumpernickel with sriracha mayo and sweet pickles. Salt water taffy for dessert.
We were to have fish with vegetables, but I forgot to take the fish out of the freezer. It's cheese on toast tonight. Oh, and a Pinot Gris.
Just made some chicken and noodles and am cooking a spag bol for the other half. Sometimes we just eat 'different'.

So, I am making Alison Roman's recipe for Wine-Braised Chicken with Artichoke Hearts. Dr. P. can eat some when he gets home.

Homemade chicken soup Passover style - cooking now, patience required. Just need something good, simple and restorative in these bleak times.
Stovetop chicken and rice. Rubbed the chicken with garlic powder, oregano, cumin, coriander (and of course salt and pepper).
Take away Thai for us tonight. Chilli basil stir fry with chicken and brown rice. We really really wanted Lebanese food but our local restaurant is currently closed for the holidays.
Well lookie here. I walked in just in time to claim this clean NEW PAGE only to announce that I had tomato soup with egg noodles for dinner. Most of my energy lately has gone to caring for & supporting my wife & son, both with covid-19. Fortunately they are both on the mend. Anyway, soup it is (or was).
Ropa Vieja - Beef brisket slowed cooked in a mild chili citrus sauce and served with jasmine coconut rice, scallions and kimchi
Buying in Thai so will support our local restaurant who cannot 'restaurant' atm. Thai basil and chicken stir fry for me - chicken Penang for him. 2 x jasmine rice 1 prawn crackers obs. Finishing a white Rioja that we didn't finish last night.
