What kind, LG?
As a newlywed, I made cheese enchiladas weekly, usually with Govt. Commodity cheese (Velveeta-like) until John asked me to please stop.

Now I like to make enchiladas with lots of vegetables and minimal cheese. With avocado salsa. Yum.

I am celebrating my 38th wedding anniversary. Dr. Paschen is working late today and tomorrow because Iowans are MORONS about COVID. So, I am making Alison Roman's recipe for Wine-Braised Chicken with Artichoke Hearts. Dr. P. can eat some when he gets home.

Stovetop chicken and rice. Rubbed the chicken with garlic powder, oregano, cumin, coriander (and of course salt and pepper).

Most of my energy lately has gone to caring for & supporting my wife & son, both with covid-19. Fortunately they are both on the mend. Anyway, soup it is (or was).

Ropa Vieja - Beef brisket slowed cooked in a mild chili citrus sauce and served with jasmine coconut rice, scallions and kimchi
