I love pho! I've never made it though. I usually just go down to Avenue U and pay $6 for a huge steaming bowl. I think I do have a recipe somewhere, though...Susan - pho is a Vietnamese noodle soup. http://en.wikipedia.org/wiki/Pho
A can of Progresso veg and pasta soup, to which I am going to throw in leftovers of dirty rice and steamed broccoli.
We had leftover spaghetti bolognaise last night. I also roasted a marinated chicken to have for lunch today. Lunch for the family, not only me.
Angel hair pasta with tomatoes and fresh parmesan. Oops, I put a little too much salt in the water.
Salad with spinach and romaine, 3-bean salad, coleslaw, beets, red onion, feta, chickpeas, and slivered almonds. All together.
Jambalaya rice with sausage (oops, totally forgot to add the chicken), steamed broccoli and cauliflower.

I had a Kashi frozen dinner last night, the Mayan Harvest one. It was tasty, no meat, though... I was craving some kind of meat, any kind of meat, when I was done. 
For breakfast this morning, granola and chobani pineapple yogurt. It's delicious. It'd be even better if this damn yogurt wasn't fat free. "Fat free" usually means aspartame and I can't stand aspartame.

Also, I made a big pot of white chicken chili this past weekend. It's pretty damn delicious, if I do say so. I say so. So, leftovers tonight for me...
Heidi, I like looking at your food! The Kashi meal looks really good. They can be hit or miss for me but that one looks like one I need to try.I buy Greek Gods Nonfat yogurt and it has zero fat with no aspartame. I get the plain because I use it as a substitute for salad dressing, sour cream, etc. I am uncertain if any of the fruit flavors have aspartame.
