They are best prepared in California or Oregon, where one can find: avocados, good fish, shredded cabbage, some greens and whatever kind of sauce you like: green chili, cole slaw type dressing or a nice garlicky vinaigrette.
If you are at a tony restaurant, they will saute or grill the fish. If you are at an Olive Garden/Taco Bell, they will batter and fry pieces of fish. Others are certainly better equipped to explain the glory that is fish tacos, as I, after all, live in Land-locked Iowa.
But carry on.
 I just ordered some buttermilk fried chicken and smoked gouda mac and cheese from a local restaurant. I don't feel like cooking.
