Esme already mentioned she couldn't cook. Not that that's really an excuse. Even my 12 year old son is capable of cooking himself a meal if he has too.

Cooking is a lot of fun Esme. Once you get the hang of it the food is also a lot nicer.

i think the reason i never get anything right is that my tastebuds are reeeeeally screwed up. i can drink sour milk and not notice anything wrong with it until im sick the next day.
i will try that tortilla thing out. im sure i can work a microwave...

We should start a thread for 2 minute recipes. I am super, super lazy. But I also like a hot meal every night. I like to make things that require zero effort. I make a lot of dishes that involve putting things in a pot, lowering the heat, and leaving the room.

Fancy ingredients. There is no room in 2 minute microwave recipes for these things. (Celeriac is celery root, kaffir limes are used in Thai curries, prosciutto is thinly sliced cured ham.)

Cynthia Paschen | 7333 comments Esme, how do you feel about grits? You can't really cook them in a microwave, but they are delicious with cheese (oops forgot your lenten resolution) and shrimp or scallops. Not hard.

Or you can make polenta (similar, but with more stirring) and gussy it up any number of ways.

Jammies Cynthia, you reminded me of a friend's reaction to an episode of Top Chef where someone made fancy polenta--"Honey, that's just fusion grits, anyone can do that!"

My Italian friend says she laughs when she sees polenta on high-end menus. It's what her mom always served at the end of the month when they could not afford meat.

my mother makes polenta with meat and mushrooms, but i can never get it to turn out right. i do love it though, especially with cheese.

and tbh, the only thing i know about grits are that if you pour them on a pile on the floor and kneel on them, they'll cut up your knees real bad (courtesy of the secret life of bees).
hope that doesn't make me sound too dumb...

Cynthia Paschen | 7333 comments Ummm. I want some of your mom's polenta. The secret is LOTS of stirring. You want to keep it smooth and introduce some air into the polenta/water/broth mixture so it is fluffy and not leaden.

Grits tend to be cut courser than polenta, so yes the edges would hurt your knees!

Are you feeling better today, Esme? Over your fever crud?

yeah, uncooked grits. since they were in a cardboard box and all, im assuming.

i will try the stirring out today, Cynthia. i'll let you know how it goes.

and no, im having a very, very bad day. i skipped period 1 and 2 because i never pay attention in econ and i already watched the movie for history, then i went to school feeling like crap and made it in time for biochem. everyone was pretty much out sick because something has been going around, so we got a study hall. and then i passed out walking to english, which really, really pissed me off because that class was the only reason i bothered going to school in the first place. i studied all weekend for that essay test, and now im going to forget everything. and i have an ugly bruise on my forehead.
not a good day...

aha, so i made polenta today. with patience and love and focus. i didn't watch tv while making it. i didn't talk on the phone. i just stirred my little heart out.
and it worked, yay! i added spicy sausage and peppers to it.
it didn't look as great as my mom's, but hey it was edible and tasted better than the crap i was planning on having for dinner (oreos and milk).
of course, my mother just shook her head and walked away when i offered to share it with her, but whatever.

Helena | 1056 comments The polenta thing is funny... we ate it plain with rabbit or chicken stew, just to stretch the budget- we'd eat the leftover for breakfast with honey on it and even get hunks of it in our lunch with cheese. I still love it though, but I likes to spruce it up a bit now.
