Don't forget the edible flowers.

Lynda White chicken chili and rice. Don't feel much like cooking and instant rice.

Laurin (llooloo) | 1867 comments Diet mac & cheese.

Is it any good?

message 1009: by Laurin (new)

Laurin (llooloo) | 1867 comments It was the smart ones kind. It was ok. Maybe a bit of grated parm on top would have helped.

Janice (jamasc) After reading The Blood of Flowers I became so desirous of tasting some Iranian food. I bough chicken breasts and am going to make Pomegranate and Walnut Glazed Chicken. I also have naan bread and hummus. We'll have a spicy rice to go with it and some sliced cucumbers.

Boy,that sounds good. Have you made it before?

message 1014: by Lynda (new)

Lynda It's cold here. I am making a pot of beef vegetable soup. The apartment smells wonderful. The is something so comfortable about soup simmering on the stove.

Yum, Janice! Does your chicken call for pomegranate molasses?

Lynda, I've never made it before so we shall see momentarily if it's a success or failure.

Cynthia, the recipe calls for pomegranate juice.

message 1021: by Janice (new)

Janice (jamasc) The verdict is in. It is definitely a "make again" recipe. We forgot the naan bread and hummus, but I'm full enough without it. I get the left over serving for lunch tomorrow.

Jonathan Lopez | 4726 comments Happy birthday to your son, Phil. Nine is a good age, and mac & cheese is a fine meal.

message 1034: by Phil (new)

Phil | 11850 comments The mac & cheese came out great! That's the first time I made it from scratch, and it has to be better than all the chemicals from the commercial versions.

The hardest part of the whole thing was figuring out where our store keeps Velveeta. The bulk of the cheese is freshly grated sharp cheddar, but the recipe called for 2oz of Velveeta to help the sauce thicken. I have no idea what Velveeta is made of.

::sings::

There's no single cheese like Velveeta!
Cuz Velveeta is more than one single cheese.
It's Colby, Swiss, and Cheddar,
Blended all togedder,
For a creamy taste that melts with ease.
Velveeta Processed Cheese Spread tastes so fine,
Lots of natural cheeses do the trick every time -
Velveeta really knows how to please.
You know it's great
When they clean their plate -
There's no single cheese like Velveeta!

For the record, I found it in the cracker aisle, next to the spray-can cheese. I had already given up finding it, then saw my friend Kevin doing merchandising on the Keebler stuff. While talking to him, I noticed the Velveeta. Quite serendipitous.

message 1044: by Mary (new)

Mary (merrussell) The recipe is:
Thai Red Curry Mac n' Cheese
kosher salt
1 lb. elbow macaroni
5 T. butter
5 T. flour
1 (4 oz) jar Thai red curry paste
2 C. whole milk
2 C. cream (alternatively, use 5 cups whole milk instead of milk and cream)
8 oz. each Monteray Jack and Chedder cheeses
Crumb Topping
3/4 c. panko bread crumbs
2 T. butter, melted
Kosher salt abd freshly ground black pepper

For the mac 'n cheese: Bring 4 quarts of water to a boil and cook the pasta 5-7 minutes, Drain
In another large pot, melt the butter over medium high heat. Whisk in flour and continue until it deepens in color about 1 minute.
Whisk in the Thai red curry paste and after combined add the milk and cream. Bring to boil, whisking constantly, then simmer until mixture thickens, stirring occasionally, about 5 minutes
Off heat, stir in the cheeses and stir until melted. Add pasta and toss to combine.
For the crumb topping, toss the panko with melted butter and season with salt and pepper.
Pour the mac 'n cheese into a broiler safe casserole dish, sprinkle crumbs on top and broil until browned.

I made it without the topping. I was delicious.
