Old age I'm afraid, egged on by my doctor giving me beta blockers last year to bring my blood pressure under control not only did it not work it also gave me RA! Needless to say I changed doctors and I now take only herbal medicines, my BP is under control and my knees are much better than they were!

I rather thought you would! I just logged into chapter four to finish it off, I have the girls for lunch today, Saucisse au chou- a Breton dish Alain showed me how his mother made it and I revisited it! He likes my way better!

Basically it's sausage, cabbage, onions, tomatoes, potatoes and carrots casserole.

Slice a couple of onions and fry them till soft brown the 6 fat sausages-roughly chop 2 large over-ripe tomatoes-peel and thinly slice 4 large carrots peel and thinly slice 1kg of potatoes. revove cabbage leaves from cabbage whole, de-stalk - about 15 leaves more if you want because they boil down to nothing bring pan of water to boil and pre-cook cabbage for 15 minutes- take an ovenproof large casserole - (allow 2 sausages per person at least! you could use turkey sausages-if Bernard Matthews still makes em bootiful!) place onions on the bottom next the tomatoes on top of that the sausages, then the drained cabbage leaves press down firmly moulding the cabbage to the sausage then add sliced carrots, top with potatoes arranging them neatly- sprinkle pepper on each layer- no salt there is enough in the sausage- half a pint of water crumble in 1 veggie oxo-pour over finally dot the top with butter cover with lid or foil and bake in the oven for 1 hour 200deg C -uncover and cook until golden brown on top serve with crusty bread. Sleep for two hours afterwards!

Oooh lovely, it's a great winter warmer that one, very similar to lancashire hotpot - forgot you don't do lamb either!

message 4947: by Sharon (new)

Sharon Atkinson (darkened_angel) No but it's ok, I can substitute it for chicken ;o)

message 4948: by Sarah (new)

Sarah Weldon (sarahrweldon-author) | 6045 comments Darkangel wrote: "No but it's ok, I can substitute it for chicken ;o)"

Is it the texture of sausage (english) you don't like? If so find a butcher who makes his own and ask him to course grind the meat (once only) using 80% meat and 20% pork fat. They will be a bit more expensive but filling so you will need less!

English sausages have water and bread added and are finely ground the second time - I know because I have made them for the English here in France - and pork pies, steak pies and so on.

message 4949: by Sharon (new)

Sharon Atkinson (darkened_angel) i don't mind vege sausages, but that is my limit. Just fussy I suppose!

message 4950: by Sarah (new)

Sarah Weldon (sarahrweldon-author) | 6045 comments Darkangel wrote: "i don't mind vege sausages, but that is my limit. Just fussy I suppose!"

Then make it with veggie sausages at one end - just as long as you mark your end somehow!
