Do you remember the name of the cook book? I have several here and would be more than happy to look through them for you.
My corn chowder has onion, chicken broth, potatoes, whipping cream and of course corn. It also includes a chedder cornmeal dumpling.

Sorry I did not get this done sooner, have had migraine for the last few days.Corn Chowder with Cheddar Cornmeal Dumplings
2 large onions (I prefer less)
2 tsp canola oil
4 cups chicken broth
3 cups frozen corn
2 cups cubed, peeled potatoes
1 cup heavy whipping cream
1/4 tsp salt
In a large saucepan, saute onions in oil until tender. Add the broth, corn, potatoes, cream and salt. Bring to a boil. Reduce heat; simmer uncovered until potatoes are tender. (I stir the soup well before adding the dumplings so the soup does not stick to the bottom of the pan when the dumplings are cooking).
Cheddar Cornmeal Dumplings
1/2 cup all purpose flour
1/4 cup yellow cornmeal
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/4 cup shredded cheddar cheese
In a small bowl, combine the flour, cornmeal, baking powder and salt. Stir in milk and cheese just until moistened. Drop by tablespoon into simmering chowder. Cover and simmer for 20 minutes or until a toothpick inserted near the center of the dumpling comes out clean (do not lift cover while simmering).

This is the first day in almost a week that I don't have a headache. I get migraines when it is stormy when the barometer goes up and down, so this time of year they can get bad. Hope you like the recipe, it is one of our favorites.
Karen - made your Corn Chowder & Cheddar Cornmeal Dumplings and it's a definite hit at our house! Thanks for sharing this fabulous meal in a pot!



I've looked everywhere trying to replace it and cannot find anything.
All I can remember of the recipe is the following:
Onion
Corn (cream style and whole)
Half & Half
Either Pet Milk or Evaporated Milk (can't remember which)
I know there is more to it than this. I'm hoping someone here may be able to help me piece together a good recipe.
