Well, we all know how much they loved pancakes. :) I'm in total agreement with them on that one. Here's a GREAT pancake recipe.

Simply Perfect Pancakes

2 large eggs
1 1/4 cups milk
3 tablespoons melted butter or vegetable oil
1 1/2 cups unbleached all-purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
1/4 cup malted milk powder (can use 2 tablespoons sugar but the malted milk powder is what makes these special)

1. Beat the egg and milk until light and foamy, about 3 minutes at high speed of a stand or hand mixer. (Don't skimp on the time here. Really take the 3 minutes.) Stir in the butter or vegetable oil.

2. Whisk the dry ingredients together to evenly distribute the salt, baking powder and sweetener.

3. Gently and quickly mix into the egg and milk mixture. Let the batter rest for at least 15 minutes, while the griddle is heating; it"ll thicken slightly.

4. Heat a heavy frying pan over medium heat, or set an electric griddle to 350°F. Lightly grease frying pan or griddle. The pan or griddle is ready if a drop of water will skitter across the surface, evaporating immediately.

5. Drop 1/3 cupfuls of batter onto the lightly greased griddle. Bake on one side until bubbles begin to form and break, then turn the pancakes and cook the other side till brown. Turn over only once. Serve immediately.

Ok, update to my White chocolate cherry chunkies, guys: They are absolutely lovely : ).
A note on the recipe, though: It says somewhere in there that you should use a tablespoon full of dough to form a cookie out of. That's WAY too much.
Like that, they look like those giant Starbucks-Cookies. A teaspoon full makes nice, small cookies.

Quick Mac and Cheese

Serving 3:
3 eggs
1/2 cup of milk
Some hot sauce
Some mustard
salt, pepper
3 cups of chopped cheddar cheese
4 cups of macaroni

Cook the macaroni. While cooking, whisk together the eggs and the milk and taste with hot sauce, mustard, salt and pepper. Drain the macaroni, put them back in the pot and add the eggmixture and the cheese. Stir until the cheese is melted.
Attention: Can scorch very quickly.

That's a quick and easy meal. My brother and I cooked it together yesterday after school. We had tomato salad as a side dish (for the vitamins ; )).

He's the one cook who would probably go to this much effort for junk food. lol I loved Good Eats and Alton Brown. I miss the show now that I no longer have cable. (Miss Iron Chef too). I have however found 3 of Alton Brown's cookbooks at my local library (they ordered them after I asked for em. lol). And I bought for just a couple bucks a book (with recipes) that's the official book of Iron Chef.
