My friend who is very involved in organic, free-range, back to the earth food is a complete convert to raw milk (which cannot be purchased in stores as the USDA requires pasteurization.) This book is a great tool for learning about the history and importance of milk and how milk has been stripped of its great qualities by industrialization etc.
