I'm rather uncertain about the policy regarding contributors.
The manual states:
Authors should be listed in the order they appear on the book cover. If there is no cover or covers of various editions differ, use alphabetical order.
For compilations that include both editors and authors, please list the editors first and then other contributors.
I've understood this to mean that where contributors are not listed on the cover of an anthology or essay collection, they could still be added as contributors in the author field (but in alphabetical order). This is what I did for Digging Holes in Popular Culture: Archaeology and Science Fiction back in 2011 but a few months ago the contributors were removed by another user.
Is it incorrect, then, to list all contributors to a book?
No, listing contributors the way you did is fine, they should not to have been removed. feel free to flag the edits to GR Support using the flag function in the librarian change log
I flagged one of the edits where a contributor was removed and mentioned that the other contributors were also removed rather than flag each individual edit concerned. Was this OK?
Just for the record, I've restored the contributors' names to this book today. I'm hoping they won't end up being deleted again as it takes a bit of time to add and alphabetically organise contributor names of collections of essays like this.
You could add a librarian note saying not to delete the contributors, as they were added according to GR standards (or words to that effect). Sometimes people do stuff out of complete ignorance, a librarian note might help.
