Hi. I realized I had an error in my cover after I had published it. I understand that a cover cannot be removed, but I see that one can be added as set as default. I would like to do that. How do I?

If the ISBN remains the same you can add an alternate cover edition. Select the new edition as the default/primary edition on its editing page.
