Daarbij maakt zij bijvoorbeeld gebruik van zeezout bij de rode kool; behalve peper en zout is gember(wortel) een smaakversterker voor Hongs dumplings; en voor de viskoekjes gebruikt de auteur vaak verse kabeljauw.
