Why should the unknown binding be merged with the paperback, instead of the default, which in this case is the Kindle?

Well, I don't have a good answer to your question. There is no way to determine whether the unknown binding edition is a duplicate of the paperback or of the kindle.
Why do you say the kindle edition is the default, as it was published after the paperback edition?

Here is what the manual has to say about the default edition.

If we have no reason to do otherwise, an "unknown binding" edition should be merged with the default.
