i haven't read ACOTAR so im not sure if it's what you want, but the jasmine throne is a really good sapphic fantasy
Priory of the Orange Tree and A Day of Fallen Night by Samantha Shannon are both good, slow burns, with only an inference of spice and some solid world building. Avoid her first novel "The Bone Season" though. It's painfully straight YA that ticks all the terrible dystopian trope boxes.
The Five Crowns of Okrith series by AK Mulford! It has lots of different representations. The third book focuses around a sapphic romance.
Id also recommend the rest of SJMs books but they don’t really have much sapphic romance, but they are good!
Aurora's AngelFor the fantasy rec!
One Last Stop
Is kind of scifi. Loved this one. This one actually put me in a reading slump.
Hearing Red
So far this one is good. I'm only about 10% in but its a zombie apocalypse book.
