National Peanut Board (there's apparently a group catering to everything, even peanuts -- who knew?) acknowledges that the first "modern day" peanut butter developer was actually a Canadian, Marcellus Edson, who made peanut butter using a heating process and adding sugar for consistency. His patent was issued in 1884.

John Kellogg (yes, that Kellogg) developed a method of producing peanut butter from boiled peanuts, and advocated its use for his Western Health Reform Institute because it could provide a lot of protein without needing to be chewed.
